Chicken, Shrimp and Chinese Vegetables image

Got this from Get In The Kitchen Bit@hes, their page wouldn't let me pinch it, so here's the next best thing because I wanted this and some other recipes here.

MARINADE:
1/2 Tbsp soy sauce
1 tsp rice wine or sherry
1/4 tsp sesame oil
2 pinch white pepper
1 pinch miso ho-nee asian blend (really good, but not necessary)
MISO HO-NEE ASIAN BLEND SUBSTITUTE:
1/2 tsp white pepper
1 pinch cumin
1 pinch ginger
1 pinch chinese five spice powder
SAUCE:
1 Tbsp soy sauce
1 Tbsp oyster sauce
1/4 tsp sesame oil
1/2 tsp sugar
1 tsp corn starch
4 Tbsp water
MAIN:
2 chicken breast (half inch cubes)
10-15 raw shrimp (if frozen, thaw)
1 Tbsp corn starch
vegetable oil
2 clove garlic (diced)
1/2 onion (cut into large pices)
2 stalk(s) bok choy
1 carrot (sliced diagonal)
X oz baby corn
1 c sugar snap or snow peas
1-2 pinch dry ginger
OPTIONAL:
1/2 lb wheat stick noodles, 1 pack ramen noodles or server over white rice

Steps:

  • 1. Prepare the marinade and sauce by combining the ingredients listed below them. Cover and set aside.
  • 2. Separately, marinate the chicken and the shrimp in two bowls for about 15 minutes.
  • 3. Meanwhile prepare the noodles by boiling water in a cover-able pot, taking it off the heat, placing the noodles in water and covering while you prepare the rest of the meal. Leave it in the water.
  • 4. Heat about a Tbsp of vegetable oil in a wok or large, deep frying pan over high heat. Sauté the chicken until about 80% of the way done (about 5 minutes or so.) Take out, cover and set aside.
  • 5. Add shrimp and saute for about 3 minutes until about 80% of the way done and take out, cover and set aside.
  • 6. Heat another Tbsp of oil in the wok or pan over high heat. Add the garlic and onion and saute for about a minute. Add the bok choy, carrots, baby corn and peas and saute for another 3-5 minutes until carrots start to become tender.
  • 7. Add the chicken and shrimp back and stir fry for another 2-3 minutes until both are cooked through. Add the "sauce", stir and let thicken.
  • 8. Take off heat, drain the noodles, place in wok and pan and stir.
  • 9. Serve.

Yet another recipe from my mom. Definitely not the "real deal", but so good! Prep time includes marinating time.

4 boneless skinless chicken breasts
2 garlic cloves, minced
1/2 cup soy sauce
1 tablespoon vegetable oil
3/4 cup water
2 teaspoons cornstarch
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups Chinese vegetables (bamboo shoots, water chestnuts, bean sprouts, snow peas are all good)

Steps:

  • Slice chicken thinly; place into gallon size ziplock bag with soy sauce and garlic.
  • Shake to coat all chicken.
  • Let marinate in fridge for at least 30 minutes.
  • Longer is OK.
  • Heat oil in wok or large frying pan over medium-high to high heat.
  • Add chicken and marinade to pan and cook thoroughly.
  • Combine water, cornstarch, salt and pepper.
  • Add to chicken.
  • Bring to boil.
  • Add vegetables.
  • Heat through.
  • Serve over rice.

2 medium yellow or red bell peppers (7 ounces each), cored, ribbed and cut in strips 1/4-inch thick
3 tablespoons black soy sauce
2 tablespoons rice-wine vinegar
1 tablespoon grated, peeled fresh ginger
2 1/2 teaspoons Chinese chili paste with garlic
2 teaspoons toasted sesame oil
2 medium zucchini (5 ounces each), trimmed, halved crosswise and cut in strips 1/4-inch thick
1 1/4 pounds boneless, skinless chicken breasts (5 half-breasts), cut on the diagonal in strips 1/2-inch thick
2 tablespoons cornstarch
2 tablespoons water
2 tablespoons scallions, green part only, sliced thin

Steps:

  • Place peppers in a 13-by-9-by-2-inch oval dish. Cover tightly with microwave plastic wrap. Cook at 100 percent power in a high-power oven for 2 minutes, 30 seconds. Prick plastic to release steam.
  • While peppers are cooking, stir together soy, vinegar, ginger, chili paste and sesame oil.
  • Remove dish from oven and uncover. Stir in zucchini. Place chicken over vegetables in an even layer. Pour soy mixture over chicken. Re-cover and cook for 3 minutes. Prick plastic to release steam.
  • While chicken mixture is cooking, stir cornstarch and water together. Uncover dish. Stir in scallions and cornstarch mixture. Re-cover and cook for 2 minutes 45 seconds. Prick plastic to release steam.
  • Remove from oven and uncover. Serve over cooked white rice.

1 1/2 c stir fry veggies
3 medium chicken breasts, cut and diced

  • 1. In a medium pot, make gravy packets as directed. simply add all of ingredents. simmer for 20 mins. pour over rice.
