SHRIMP WITH GARLIC AND CHILI PEPPER

2 tablespoons olive oil
1/2 fresh red chile, according to size and taste, minced
2 garlic cloves, chopped
1/2 pound unshelled medium shrimp
1/2 cup white wine
Salt, if needed
1 tablespoon chopped parsley leaves

Steps:

  • Pour the olive oil into a wide, heavy-bottomed frying pan. Then add the chile and garlic and, over moderate to low heat, to infuse rather than to color, fry for 2 minutes, stirring all the time. Then turn the heat to high, add the shrimp, and stir-fry them for another 2 minutes or until they turn pink and are just, delicately, cooked; you want the flesh to stay tender. Pour in the white wine and let it bubble up. You don't want a liquid puddle around the shrimp, just enough wine to let the juices ooze into a winy sauce. Another minute or so should do it. Season with the salt, if necessary, and then turn into your bowl and sprinkle with parsley. Eat with some good hunks of baguette. I eat these carapace, head, and all: one of the reasons I designate them for solitary dinner.
  • If you want, you can add a tablespoonful or so of brandy before throwing in the wine.

1 lb frozen shrimp, peeled and deveined, tails left on
1 cup cornstarch
3 cups oil
6 cloves garlic, chopped
2 tablespoons fresh ginger, sliced
2 teaspoons red pepper flakes
2 teaspoons salt
3 teaspoons black pepper
¼ cup scallions, sliced
white rice, cooked, for serving

Steps:

  • Set a wire rack over a baking sheet.
  • Add the shrimp to a medium bowl. Cover with cold water and let sit until thawed, about 10 minutes.
  • Drain the thawed shrimp on paper towels and pat dry.
  • Place the cornstarch in a large bowl. Add the shrimp and toss until well-coated.
  • Heat the oil in a wok or large pan until it reaches 400°F (200°C).
  • Add the garlic and fry for 40 seconds-1 minute, until golden brown. Remove the garlic with a strainer or slotted spoon and drain on paper towels.
  • Fry the shrimp, about 6 at a time, for 2 minutes, or until light golden brown. Transfer to the wire rack to drain.
  • In a clean wok or large pan, add the ginger and red pepper flakes and toast for 2 minutes, until the ginger is starting to brown.
  • Add the shrimp and toss to combine. Season with the salt and pepper and toss until well-coated.
  • Transfer the shrimp to a plate and garnish with the scallions and fried garlic.
  • Serve with rice.

500 g king prawns (medium raw)
300 g squid (hoods, cleaned)
300 g scallops (roe removed)
2 teaspoons sea salt
1/2 teaspoon five-spice powder
2 red Thai chile (chopped finely)
2 tablespoons peanut oil
150 g sugar snap peas (trimmed)
2 tablespoons light soy sauce
1 lime (cut in wedges)

Steps:

  • Shell and devein prawns leaving tails intact if you wish (I prefer to remove).
  • Cut squid down centre to open out and score the inside in a diamond pattern and then cut into thick strips.
  • Combine seafood, salt, pepper, five spice and chilli in large bowl.
  • Heat half the oil in the wok, stir fry seafood in batches until cooked.
  • Heat remaining oil in wok, stir fry peas until tender.
  • Return seafood to wok and add soy sauce and stir fry till hot.
  • Serve seafood with lime wedges.

This classic Cantonese starter is simple to make, but for real success, there are a couple of rules you need to follow. Most important: always use clean oil for your deep-frying. The resulting batter will be crisp, crunchy and light, as opposed to heavy, greasy and 'dirty' in flavour. And be sure to serve it immediately: this dish is best eaten piping hot.

1 lb squid, cleaned
2 tablespoons cornstarch
2 tablespoons plain flour
2 teaspoons hot chili powder
2 tablespoons sea salt
1 tablespoon szechuan peppercorns, dry-roasted and crushed
2 cups vegetable oil
4 leaves iceberg lettuce, chilled
2 lemons, cut into wedges

Steps:

  • Rinse and dry the squid thoroughly.
  • Slice each squid tube horizontally into 1/2in rings. Set aside.
  • In a large bowl, combine both types of flour with the chili powder, sea salt and Szechuan pepper. Add the squid and toss to coat, shaking off any excess flour.
  • Fill a wok with oil to about a third full (about 2 cups) and heat until the surface seems to shimmer slightly.
  • Add half the squid and deep-fry it for between 45 seconds and 1 minute, or until it's just tender and beginning to colour. Remove with a slotted spoon and drain well on kitchen paper. Repeat the process with the remaining squid.
  • Arrange the lettuce leaves on a platter and top with the squid. Serve with the lemon wedges.

1 tablespoons vegetable oil
2 large onions, chopped
3 garlic cloves, crushed and minced
1 red bell pepper, cored, seeded, and sliced
1 green bell pepper, cored, seeded, and sliced
2 tomatillos, papery skin removed, minced (optional)
1/4 cup minced fresh cilantro
2 tablespoon minced fresh oregano, or 1 tablespoon crumbled dried
1 tablespoon chili powder
2 teaspoons ground cumin
2 teaspoons chipolte pepper flakes, or to taste (optional)
1/4 cup red wine or white wine
1 bay leaf
2 cups chopped peeled tomatoes, fresh or canned
1 to 2 cups kidney beans and/or black beans
Salt
1/3 pound minced clams, drained
1/2 pound shrimp, shells removed
1/2 pound sea scallops, rinsed, patted dry, and cut into halves or quarters, depending on size

Steps:

  • Heat the oil in a large heavy saucepan over medium high heat. When hot, add the onion, garlic, bell peppers, tomatillos, oregano, chili powder, cumin, and chipotle pepper. Lower the heat to medium low and saute, stirring often, until the onions and peppers are soft and limp, about 10 minutes. Add the wine, turn up to medium high, and stir until most of it evaporates, about 2 minutes. Add the bay leaf and tomatoes, turn the heat down to medium and simmer gently, covered, until the sauce thickens, about 20 minutes. Stir in the beans, and add the clams, shrimp, and scallops and cook just until the shrimp are bright pink and the scallops are white, and no longer glossy, about 5 minutes.
