¾ lb frying steak
⅔ cup cornflour
1 tablespoon chinese 5 spice
1 teaspoon salt
1 teaspoon pepper
4 cups oil, for frying
2 red chilis
1 spring onion, thinly sliced
1 oz ginger, thinly sliced
1 red bell pepper, thinly sliced
1 tablespoon garlic paste
1 tablespoon soy sauce
2 tablespoons sweet chilli sauce
1 tablespoon red wine vinegar
1 tablespoon tomato ketchup
spring onion, to garnish
red chilli, to garnish

Steps:

  • Slice the steaks into thin strips and place into a small bowl.
  • Add the cornflour, 5 spice, salt, and pepper. Mix until evenly coated.
  • Carefully heat the oil in a deep saucepan until it reaches 190°C (375°F).
  • Carefully place the beef strips into the oil and fry for about 4-5 minutes, until golden brown.
  • Place on some tissue to soak up the excess oil and set a aside.
  • Meanwhile, prepare the sauce by adding a tablespoon of oil to a frying pan. Frying the chilies, spring onion, and ginger over a medium heat for a few minutes. Add garlic paste and fry for another minute.
  • Stir in the soy sauce, sweet chili sauce, red wine vinegar, and tomato ketchup until thick.
  • Stir in the beef steaks until evenly coated.
  • Garnish with spring onion and red chilies.
  • Enjoy!

Ditch the takeaway and whip up this Chinese flash-fried steak with a sweet gingery sauce and red peppers

Number Of Ingredients 15

350g thin-cut minute steak, very thinly sliced into strips
3 tbsp cornflour
2 tsp Chinese five-spice powder
100ml vegetable oil
1 red pepper, thinly sliced
1 red chilli, thinly sliced
4 spring onions, sliced, green and white parts separated
2 garlic cloves, crushed
thumb-sized piece ginger, cut into matchsticks
4 tbsp rice wine vinegar or white wine vinegar
1 tbsp soy sauce
2 tbsp sweet chilli sauce
2 tbsp tomato ketchup
cooked noodles, to serve (optional)
prawn crackers, to serve (optional)

Steps:

  • Put 350g thin-cut minute steak strips in a bowl and toss in 3 tbsp cornflour and 2 tsp Chinese five-spice powder.
  • Heat 100ml vegetable oil in a wok or large frying pan until hot, then add the beef and fry until golden and crisp.
  • Scoop out the beef and drain on kitchen paper. Pour away all but 1 tbsp oil.
  • Add 1 thinly sliced red pepper, ½ thinly sliced red chilli, sliced white ends of 4 spring onions, 2 crushed garlic cloves and thumb-sized piece ginger, cut into matchsticks, to the pan. Stir-fry for 3 mins to soften, but don't let the garlic and ginger burn.
  • Mix the 4 tbsp rice wine vinegar or white wine vinegar, 1 tbsp soy sauce, 2 tbsp sweet chilli sauce and 2 tbsp tomato ketchup in a jug with 2 tbsp water, then pour over the veg.
  • Bubble for 2 mins, then add the beef back to the pan and toss well to coat.
  • Serve the beef on noodles with prawn crackers, if you like, scattered with the remaining ½ sliced red chilli and sliced green parts of the spring onions.

This is fast becoming my favourite mid-week dish. It's just so simple. As a variation replace the beef with 6 chicken thigh fillets (into strips) and garnish with 1/4 cup chopped roasted unsalted peanuts, fresh coriander leaves and a squeeze of lime. Reference: Donny Hay, The Instant Cook. Australian measurements used.

6 large mild red chilies, seeds removed
1 tablespoon roughly chopped gingerroot
1 onion, quartered
3 teaspoons shrimp paste
1/3 cup brown sugar
2 tablespoons vegetable oil
650 g beef, strips
4 scallions, sliced
200 g green beans, trimmed

Steps:

  • Place first 6 ingredients into a food processor and process until finely chopped.
  • Over medium-high, heat a non-stick frying pan then add the chilli paste. Cook for 5-7 minutes, stirring, until the mix is thick and fragrant. Depending on the water content of the ingredients this may take even longer.
  • Now add the beef and cook for 3 more minutes, stirring the whole time. Add the scallions and beans. Cover. Cook for another 3 minutes, or until beef & vegetables are tender. Serve with steamed rice.

150g thin-cut frying steak , very thinly sliced
1 tsp mild chilli powder
2 good pinches of ground cumin
2 garlic cloves , finely chopped
2 tsp sunflower oil
1 yellow pepper , deseeded, quartered and sliced
1 red onion , thinly sliced
2 tomatoes , chopped
400g can black bean , drained
good handful fresh coriander
4 value soft tortilla wraps

Steps:

  • Put the steak in a bowl with the spices and garlic, and stir well. If you have time, leave to marinate for a couple of hrs. Heat the oil in a wok, then tip in the beef and fry for just 1-2 mins, until it changes colour but is still on the rare side. Remove the beef to a plate.
  • Add the pepper and half the onion, and stir-fry in the juices - add a splash of water to get things going and stop it burning. Stir in the tomatoes and beans, and heat through with plenty of seasoning, then stir in most of the coriander.
  • Meanwhile, heat the tortillas. The best way is directly on the gas flame, as it gives them a lovely charred flavour. Stir the beef into the beans and heat briefly. Serve with the tortillas and the reserved onion and coriander.
