This Chili Lime Vinaigrette Recipe can be used as a marinade, sauce, or salad dressing! Incredibly easy to make and so versatile!

1/2 cup extra-virgin olive oil
1/2 cup lime juice
1 tablespoon honey
4 cloves garlic (pressed using a garlic press)
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 - 1 teaspoon salt
1/4 teaspoon cayenne

Steps:

  • Place olive oil, lime juice, honey, garlic, chili powder, cumin, paprika, salt, and cayenne into a mason jar, blender, or food processor.
  • Seal and shake or blend until well combined.
  • Taste and re-season if necessary.
  • Use immediately.
  • Store leftovers in a sealed airtight container in the fridge for up to a week. Let come to room temperature before serving.

3 ¾ cups lime juice
1 ¾ cups soy sauce
1 cup packed brown sugar
¾ cup olive oil
¼ cup minced garlic
¼ cup red pepper flakes

Steps:

  • Whisk lime juice, soy sauce, brown sugar, olive oil, garlic, and red pepper flakes together in a bowl until creamy and smooth. Cover bowl with plastic wrap and refrigerate overnight to 8 hours.

  • Whisk lime juice, soy sauce, chili oil, sugar and garlic in medium bowl to blend. Season dressing to taste with pepper. (Can be made 6 hours ahead. Cover and refrigerate.)

We recently stayed in a villa in Bali. The cook made this dressing a couple of times to go over a salad of mixed greens tomatoes and cucumber. She included mint in the salad-not the dressing. Her recipe was actually just equal quantities of lime juice, white (not palm) sugar, and olive oil, garlic and slat and pepper, so it's super easy to make enough for 1 or 12.

350g large headless cooked prawn , unpeeled
2 avocados
large handful basil leaves
120g bag baby green salad leaf
2 tbsp lime juice
2 tsp clear honey
1 red chilli , deseeded and finely chopped
3 tbsp light olive oil
lime wedges, to serve

Steps:

  • Peel the prawns, leaving the tails intact, then rinse and pat dry. Put all the dressing ingredients into a small bowl and whisk to mix.
  • Up to 1 hr before serving, peel and stone the avocados, then cut into thick slices and put in a large bowl with half the dressing. Mix lightly to coat all the slices (this prevents them turning brown). Chop the basil and add to the bowl along with the prawns. Toss everything together lightly. Scatter the leaves over a platter, then spoon the prawns, avocado and basil mix over. Drizzle with the remaining dressing and serve with lime wedges for squeezing over.

1 cup boiling water
1 package (3 ounces) lime- or lemon-flavored gelatin
1/2 cup cold water
1 can (8 ounces) crushed pineapple, undrained
1/2 cup shredded carrot
Mayonnaise or whipped cream, if desired

Steps:

  • Pour boiling water on gelatin in medium bowl; stir until gelatin is dissolved. Stir in cold water and pineapple. Refrigerate about 45 minutes or until thickened but not set.
  • Lightly brush six 1/2-cup salad molds with vegetable oil. Stir carrot into thickened gelatin; pour into molds. Refrigerate about 4 hours or until firm.
  • To unmold salads, dip molds into hot water for 10 seconds. Place salad plate upside down onto each mold; turn plate and mold over, then remove mold. Top salads with mayonnaise.
