100g spinach
100g watercress
1 spring onion , sliced
100ml vegetable stock
½ an avocado
100g cooked rice
juice ½ lemon
2 tbsp mixed seeds , plus extra to serve

Steps:

  • Put the spinach, watercress, spring onion, vegetable stock, avocado, cooked rice, lemon juice and mixed seeds in a blender with seasoning. Whizz until smooth. Heat until piping hot. Scatter over some toasted seeds if you want added crunch.

2 tablespoons (1/4 stick) butter
2 cups thinly sliced leeks (white and pale green parts only; about 3 medium)
1 7- to 8-ounce white-skinned potato, peeled, diced
3 cups (or more) low-salt chicken broth
2 cups (packed) coarsely chopped watercress with some of stems plus small sprigs (for garnish)
1 cup (packed) baby spinach leaves
1 1/2 teaspoons fresh lemon juice
2 hard-boiled eggs, peeled, chopped (for garnish)

Steps:

  • Melt butter in heavy large saucepan over medium heat. Add leeks and potato; sauté until leeks are slightly softened but not brown, stirring often, about 5 minutes. Add 3 cups broth; bring to boil. Reduce heat, cover, and simmer until vegetables are very tender, 10 to 12 minutes. Add watercress and spinach; stir until wilted, about 1 minute. Cool slightly.
  • Working with 1 cup at a time, puree soup in blender until smooth. Transfer soup to large bowl. Stir in lemon juice; season with salt and pepper. Chill until cold, about 2 hours. Thin with more broth, if desired.
  • Ladle soup into bowls. Garnish center of each with hard-boiled eggs and small watercress sprigs.

COLD CREAM OF WATERCRESS SOUP

6 tablespoons olive oil
4 leeks, white parts only, thoroughly washed and chopped
3 bunches watercress, thoroughly washed, leaves separated from stems, stems chopped
6 cups chicken stock
5 medium baking potatoes, peeled and sliced
Salt
Freshly ground black pepper
1 cup creme fraiche or 1/2 cup each heavy cream and sour cream
1 teaspoon lemon juice

Steps:

  • Heat a large saucepan with olive oil over medium-low heat. Add the leeks and the watercress stems only and saute until wilted, about 10 minutes.
  • Add the chicken stock and potatoes and season well with salt and pepper. Bring the liquid to a boil, then reduce the heat and simmer until the potatoes are tender, 25 to 30 minutes.
  • Meanwhile, prepare an ice water bath by partially filling your largest mixing bowl with ice cubes and water.
  • In batches to avoid overfilling and splattering, ladle the soup into a blender or food processor, adding some of the creme fraiche and watercress leaves with each batch and reserving about 2 dozen whole leaves for a garnish. Puree each batch and transfer to a fine-meshed strainer held over a large mixing bowl that fits inside the ice water bath, using a rubber spatula to press the puree through the strainer. Taste the puree, adjust the seasonings, if necessary, with more salt and pepper, and stir in the lemon juice.
  • Place the bowl of soup inside the ice water bath and chill it until cool, stirring occasionally, about 1 hour. Remove the bowl of soup from the ice water bath, dry its underside, cover with plastic wrap, and refrigerate until thoroughly chilled.
  • Before serving, taste the soup. If it is too thick, thin it with a little cold milk, chicken stock, or water, to a thick, creamy consistency. Adjust the seasonings, if necessary. Ladle into chilled bowls and decoratively garnish each serving with a few of the reserved watercress leaves.

1/2 cup chopped onion
1 1/2 pounds fresh spinach, rinsed well and finely chopped
1/2 cup chopped fresh basil
3 cups chicken stock, thoroughly degreased 1 cup half and half
1/2 cup plain yogurt, well stirred
Salt and freshly ground white pepper
Some basil leaves for decoration

Steps:

  • Heat oil in a large skillet and sautee the onion until soft but not brown. Add the spinach and basil and cook for a minute or two, until the greens are wilted. Stir in the chicken stock.
  • Puree this mixture in a blender or a food processor. Stir in the half and half and allow to cool to room temperature.
  • Stir in the yogurt and season to taste with salt and pepper. Refrigerate until ready to serve.
  • Before serving re-season soup if necessary. Decorate by floating basil leaves on the surface.

200 g watercress, washed
200 g Baby Spinach, washed
2 medium potatoes
1 onion
nutmeg
salt and pepper
olive oil
1 bay leaf
2 sprigs fresh thyme or 1/2 teaspoon dried thyme
marjoram
cream (optional)
mixed herbs (optional)

Steps:

  • heat oil in a large pan.
  • Add onions and cook for 3 minutes stirring occasionally till they begin to soften.
  • add the potatoes, water, marjoram, thyme and bay leaf. pinch of salt for taste.
  • bring to boil, reduce heat, cover and cook gently for about 25minutes until the vegetables are tender.
  • remove the bay leaf and herb sprigs.
  • add the spinach and water cress and continue cooking for 3-4 minutes, stirring frequently, just until it is completely wilted.
  • allow the soup to cool slightly, then transfer to blender or food processor and puree until smooth.
  • return the soup to the sauce pan and thin with a little more water, if wished.
  • season to taste with salt pepper and nutmeg.
  • place over a low heat and simmer until reheated.
  • ladle soup into bowls and swirl cream into each bowl(optional).
  • for vegan omit cream.
