While exploring Mexican restaurants, I tasted chiles rellenos and wanted to make them at home. My husband and I teamed up to create this stuffed poblano peppers recipe, which is one of our favorites. -Lorrie Grabczynski, Commerce Township, Michigan

1 pound lean ground turkey (93% lean)
1 can (15 ounces) chili without beans
1/4 teaspoon salt
1-1/2 cups shredded Mexican cheese blend, divided
1 medium tomato, finely chopped
4 green onions, chopped
4 large poblano peppers
1 tablespoon olive oil

Steps:

  • Preheat broiler. In a large skillet over medium heat, cook turkey, crumbling meat, until no longer pink, 5-7 minutes; drain. Add chili and salt; heat through. Stir in 1/2 cup cheese, tomato and green onions., Meanwhile, cut peppers lengthwise in half; remove seeds. Place on a foil-lined 15x10x1-in. baking pan, cut side down; brush with oil. Broil 4 in. from heat until skins blister, about 5 minutes., With tongs, turn peppers. Fill with turkey mixture; sprinkle with remaining cheese. Broil until cheese is melted, 1-2 minutes longer.

6 medium green peppers
1 pound lean ground beef (90% lean)
1/2 cup chopped onion
1 can (16 ounces) chili beans, undrained
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 teaspoon chili powder
1/2 teaspoon salt, optional
1/4 teaspoon pepper
1/4 teaspoon cayenne pepper
3/4 cup shredded cheddar cheese

Steps:

  • Cut tops off peppers and remove seeds. Place peppers in a large kettle and cover with water. Bring to a boil; cook until crisp-tender, about 3 minutes. Drain and rinse in cold water; set aside. , In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the beans, tomatoes, chili powder, salt if desired, pepper and cayenne. Bring to a boil. Reduce heat; cover and simmer for 5 minutes. , Spoon meat mixture into peppers; place in an ungreased 3-qt. baking dish. Cover and bake at 350° for 20-25 minutes or until heated through. 1 lb ground beef
4 large poblano chiles (*)
1 (15 ounce) can chili seasoned beans
1 (14 1/2 ounce) can Mexican-style tomatoes, undrained
1 tablespoon Mexican seasoning (adobo)
2/3 cup shredded Mexican blend cheese or 2/3 cup monterey jack cheese

Steps:

  • Preheat broiler. Bring 2 quarts water to a boil in 3-quart saucepan. Meanwhile, cook ground beef in large nonstick skillet over medium-high heat 5 to 6 minutes or until no longer pink.
  • Meanwhile, cut peppers in half lengthwise; remove stems and seeds. Add 4 pepper halves to boiling water; cook 3 minutes or until bright green and slightly softened. Remove and drain upside down on plate. Repeat with remaining 4 halves. Set aside.
  • Add beans, tomatoes and Mexican seasoning to ground beef. Cook and stir over medium heat 5 minutes or until mixture thickens slightly.
  • Arrange peppers, cut side up, in 13X9-inch baking dish. Divide chili mixture evenly among peppers; top with cheese. Broil 6 inches from heat 1 minute or until cheese is melted. Serve immediately.

~ 1 lb - skinless boneless chicken thighs
1 whole medium-sized red onion
1 6-oz can - chopped green chilis
1/4 cup drained pickled jalapeno peppers
2 cups (total) shredded Mexican Cheeses
~ 1/2 cup - El Phoenix hot sauce (though other salsas will substitute)
3 medium poblano peppers
3 large flour tortillas
1 28-oz can - El Paso Green Chili Enchilada Sauce
Garlic Powder
13" x 9" x 2" baking pan
Oven (convection if possible) preheated to 450 F.

Steps:

  • Core the stem and seeds, keeping the poblano peppers whole. Place poblano peppers on top rack of grill away from direct flame. Roast, turning frequently, while the skin blisters, but be careful it does not burn. When the skin evenly blisters and turns a light brownish color, remove and place in a tightly closed paper bag until ready to use (at least 10 min). They should be soft, but retain their shape. Next, take the boneless chicken thighs and coat with garlic powder, and grill on the cooler part of the flame, careful to turn them so that they are grilled but not charred. Cook until tender but slightly underdone. Remove from the grill and allow to cool. Place enough olive oil in a skillet to thinly coat the bottom. Cook the chopped onions, tomatoes, jalapeños, green chilis, & garlic powder (to taste) over low heat until caramelized. After the ingredients have begun to caramelize, reduce heat and add El Phoenix hot sauce. This should reduce to a mush. After the poblanos have cooled, remove the blistered skin (should be easy). What should remain is an easy to handle, but somewhat rigid pepper. Cut the chicken into bite-sized cubes, and divide it into two piles, one slightly larger. Place a small amount of cheese, then 1/3 of the chicken from the smaller pile, some onion-tomato mix, and some cheese into each of the poblano peppers. Place chicken from the larger pile into a line in the center of the tortillas, with some of the onion-tomato mix, and some cheese. Roll them, leaving both ends open. Place in pan with peppers, leaving some space between the enchiladas. Set the enchiladas on their seams, so they do not unroll while baking. Pour the entire contents of the enchilada sauce over the enchiladas and poblanos, allowing the sauce to completely cover them. Take the remaining cheese and sprinkle over the top of the entire mixture. Place in the preheated oven, and cook for 30 - 35 minutes or until done. Once finished, the meal should be hot, bubbling and roasted.

2 tablespoons olive oil
1 cup onion, chopped
1 cup red bell pepper, chopped
1 1/4 lbs ground chicken
2 tablespoons chili powder
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground cumin
1 (15 ounce) can small white beans, rinsed and drained
1/2 cup barbecue sauce
2 tablespoons tomato paste
1/2 cup cheddar cheese, shredded
1/2 cup sour cream

Steps:

  • Heat oven to 350°F.
  • Slice peppers lengthwise and clean out seeds.
  • In a large skillet heat oil over medium-high heat.
  • Add onion, cook and stir about 3 minutes.
  • Add red pepper, cook and stir about 2 minutes.
  • Add ground chicken, cook, stirring occasionally, until no longer pink.
  • Stir in chili powder, oregano, salt, pepper and cumin; cook 2 minutes longer.
  • Mash half the beans coarsely.
  • Stir all beans, barbecue sauce and tomato paste into chicken. Cook about 2 minutes and remove from heat.
  • Fill each pepper with the mixture and top with cheese.
  • Bake peppers until heated, about 10 minutes. Garnish with sour cream.

1 large egg, lightly beaten

Steps:

  • Preheat oven to 400 degrees. Place peppers directly over a gas flame (or under the broiler); cook, turning occasionally, until charred, about 8 minutes. 6 fresh poblano peppers
1 pound Cin Chili recipe follows, chilled
8 ounces shredded cheese (recommended: Mexican style cheese)
1 teaspoon chicken bouillon granules
2 tablespoons olive oil
1/2 teaspoon salt
2 pounds ground beef
1 (14-ounce) can beef broth (recommended: Swanson's)
1 teaspoon beef bouillon granules
1 (8-ounce) can tomato sauce (recommended: Hunt's)
5 tablespoons red chili powder
1 tablespoon onion powder
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
2 tablespoons garlic powder
1/2 teaspoon jalapeno powder
2 teaspoons ground cumin
1/4 teaspoon brown sugar
1/8 teaspoon cayenne pepper

1/2 teaspoon onion powder

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut the top out of the poblano peppers like you would a pumpkin, leaving the stems attached and set aside. Scrape out the seeds and fill the poblanos with chilled Cin Chili 1/4-inch from the top. Place the top of the poblano back onto the pepper so it looks whole again. Lay the peppers in an 8 by 11-inch flameproof baking dish, alternating the directions of the peppers so that they all fit. Bake in the oven for 30 minutes (Note: If you want the skins to be blackened, you can turn your oven on broil for the last 5 minutes).
  • Remove poblano peppers from the oven and cover with the shredded cheese. Return the dish to the oven and bake for another 10 minutes. Remove from the oven and transfer to a serving dish.
  • 1/4 teaspoon ground black pepper
  • In a large heavy bottom pot, heat olive oil over medium-high heat. Add the ground beef and cook until browned, about 8 minutes. Season with salt and drain off the excess grease. Add the tomato sauce and the beef broth and simmer for 1 hour. Add all of the ingredients from Batch one, stir and simmer for 35 more minutes. Add Batch two to the pot and cook for another 20 minutes, stirring often. Add Batch three and cook for 10 more minutes. Let cool and store in an airtight container in the refrigerator. 2 cloves garlic, peeled and minced
1 small onion, peeled and finely chopped
2 large ears corn, kernels cut from the cob
1 1-pound can hominy, drained and rinsed
2 eggs
2 small hot chilies, seeded and minced
1 1/2 teaspoons salt
Freshly ground pepper to taste
4 red, green or yellow bell peppers (or a mixture)
4 teaspoons grated Monterey Jack cheese
1 scallion, chopped

Steps:

  • Preheat the oven to 375 degrees. Heat the oil in a medium-size nonstick skillet over medium heat. Add the garlic and cook, stirring, for 20 seconds. Add the onion and cook until soft and lightly browned, about 5 minutes. Let cool.
  • Place half the corn and half the hominy in a food processor with the eggs. Process until smooth. Scrape into a bowl and stir in the onion mixture, remaining corn and hominy, chilies, salt and pepper.
  • Slice the tops off the peppers. Remove the cores and use a spoon to scrape out the seeds and ribs. Trim the bottoms so the peppers will stand straight, being careful not to cut all the way through. Fill the peppers with the corn mixture. Place in a shallow baking dish large enough to hold them without crowding and pour in 1 cup of water.
  • Cover with aluminum foil. Bake for 30 minutes. Uncover and continue baking until the peppers are tender when pierced with a small knife, about 30 minutes longer. Sprinkle the tops with the cheese and bake just until melted. Divide the peppers among 4 plates, sprinkle with the scallions and serve.

4 medium green bell peppers (or red or yellow)
1 tablespoon olive oil
3/4 cup onion, sliced
1/2 cup celery, sliced thin
3 garlic cloves, sliced
1 cup cooked red kidney beans, drained
1/4 cup chopped olive (optional)
1 cup whole kernel corn (fresh or frozen)
1 tablespoon yellow cornmeal
1 -2 teaspoon chili powder
1 (8 ounce) can stewed tomatoes
1/2 cup corn chips, crumbled
1/2 cup shredded cheddar cheese (optional)

Steps:

  • Preheat oven to 400*F.
  • In a large saucepan, heat 4" water to boiling over high heat. Trim off 1" from the tops of peppers and remove seeds. Coarsely chop tops, set aside. Add bell peppers to the boiling water. Cook 5 minutes, drain, set aside.
  • In a large skillet, heat the oil. Saute onion, celery, garlic, and reserved chopped pepper tops until golden.
  • Stir in kidney beans, olives, if using, and corn. Stir cornmeal and chili powder into stewed tomatoes. Add into sauteed vegetables. Heat to boiling, stirring occasionally. Simmer 10 minutes.
  • Divide the chili mix into prepared bell peppers. Sprinkle the cheese and crumbled corn chips over tops of peppers.
  • To bake, arrange well drained peppers upright in a 9" cast iron skillet or shallow baking dish. Bake 20 minutes or until filling is bubbly and topping has browned.
  • Arrange on serving platter and serve. Enjoy!

8 bell peppers, tops and cores removed
1/4 tsp. freshly ground black pepper, divided
1 lb. ground chicken
1 yellow onion, finely chopped
2 cloves garlic, minced
1 fresh jalapeño pepper, seeded, finely chopped
1 Tbsp. chili seasoning mix
1 Tbsp. LEA & PERRINS Worcestershire Sauce
1 can (14.5 oz.) diced tomatoes, drained
1-1/2 cups cooked quinoa
8 oz. VELVEETA, cut into 1/4" cubes, divided
1/4 cup red onion, sliced, for serving
1/2 bunch fresh cilantro, for garnish
1/4 cup sour cream, for serving
1 lime, cut into 8 wedges

Steps:

  • Preheat oven to 400°F and grease a 9"x13" baking dish with 1 tsp. olive oil.
  • Add bell peppers to dish and drizzle with remaining olive oil; season with ½ the black pepper. (If peppers do not sit flat, cut the bottoms to flatten, being careful to not cut all the way through the bell peppers.)
