2 (7 ounce) cans whole green chiles, drained
1 pound shredded Cheddar cheese
4 eggs
2 tablespoons all-purpose flour
1 ½ (5 ounce) cans evaporated milk
1 pound shredded Monterey Jack cheese
2 (10 ounce) cans green enchilada sauce

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking dish.
  • Split the chiles open, and spread half the chiles into the bottom of the prepared baking dish. Layer with the Cheddar cheese, and top with the rest of the canned chiles. Whisk together the eggs, flour, and evaporated milk in a bowl. Pour the mixture over the chiles and cheese.
  • Bake in the preheated oven until set, about 30 minutes; remove casserole, and top with the Monterey Jack cheese. Pour the green chili salsa over the top; return to oven, and bake until the cheese is melted, about 15 more minutes.

6 large eggs
1 lb monterey jack cheese
1 lb colby cheese
8 ounces whole green chilies

Steps:

  • Separate egg whites from yolks. Whip egg whites until stiff. Beat yolks until smooth. Fold yolks into whites. Season with salt and pepper.
  • Grate cheeses and combine together.
  • Grease a 9x13-inch casserole dish.
  • Spread small amount of egg mixture in dish.
  • Split open green chilies and layer on top of eggs in dish.
  • Sprinkle grated cheese on top.
  • Spread some more egg on top of that.
  • Repeat layers until all ingredients are gone (finish with egg).
  • Bake for 25 minutes @ 350° or until golden brown.

1/2 cup milk
2/3 cup Bisquick
1 (7 ounce) can chopped green chilies
1/2 chipotle chile in adobo, seeded and chopped (optional)
1 tablespoon adobo sauce (optional)
2 1/2 cups sharp cheddar cheese, shredded
1 1/2 cups monterey jack pepper cheese, shredded
1/2 teaspoon salt (I usually don't put quite 1/2 teaspoon in mine)

Steps:

  • Mix eggs, milk and Bisquick. Whisk till fluffy and light.
  • Add green chilies, chipotle, adobo sauce, cheddar, pepper jack and salt.
  • Pour mixture in greased 9x9 inch dish.
  • Bake at 350 degrees for 35 to 40 minutes.
  • Cut into squares.

Several friends and I were joking about "'70's Food" earlier today, which made me a little nostalgic. Here's one of my old (OLD) stand-by favorites from that era. Alas, no "Cream-of-Anything" soup included, nor aspic'ed mystery substances, and not a fondue pot in sight. Nothing authentically culturally correct...just simple, good ol' '70's fare. Nothing fancy. *Dead easy* to make. It's simply 'got a good beat, and I can dance to it.'

1 (7 ounce) can whole green chilies, drained (or 2 cans CHOPPED green chilies)
4 cups grated mixed cheeses (sharp Cheddar, Jack, Asiago, Pepper-Jack, Parm, WHATEVER)
2/3 cup fresh cilantro leaves (chopped-believe Brits call it "coriander leaves?")
1 large roma tomato, seeded, juiced, chopped
1 onion, diced (sweet, Saute' if you have time)
4 eggs, separated, yolks in a small bowl, whites in a large bowl
1 teaspoon cumin
1/2 teaspoon chili powder
1/4 cup milk
1/4 cup flour (or corn masa flour)
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup parmesan cheese, grated
1/4 cup sour cream
1 (8 -10 ounce) can enchilada sauce

Steps:

  • Preheat oven to 350º. Spray a 9 x 9 casserole dish with non-stick vegetable spray (Pam) - especially the SIDES and top edges. If using whole chilies, split them open. Either way, cover the bottom of the dish with chilies.
  • In a bowl, toss together the grated cheeses, tomato, olives, onions, and 3/4 of the cilantro. Place in the casserole dish, over the chilies. Drizzle about 1/3 of the can of enchilada sauce over this.
  • Separate eggs yolks from whites. Beat the egg whites until very frothy, but.
  • not too stiff and meringue-like. In a separate bowl, combine yolks, milk, flour, cumin, chili powder, salt and pepper. Fold egg whites into the yolk mixture, and pour this combination onto the casserole.
  • Drizzle with remaining enchilada sauce. Bake 20 minutes. Top with Parmesan. Bake another 15-20 minutes, until top is golden-brown-and-delicious. Cool for 10+ minutes before serving. Top with dollops of sour cream and chopped fresh cilantro.

2 (4 ounce) cans Ortega green chilies, diced
2 eggs, beaten
3 cups milk
1 cup Bisquick
1 lb sharp cheddar cheese, grated
1 (4 ounce) can green chili salsa
1 (14 ounce) can tomatoes
1 (4 ounce) can salsa, suprema
1/2 lb sharp cheddar cheese, grated

Steps:

  • Beat eggs until frothy, add milk and Bisquick, Mix chili and cheese with a fork. Spread into a buttered casserole dish. Pour Bisquick mixture over chili and cheese, Mix lightly. Bake at 350°F for 45 minutes.
  • Mix green chili salsa, tomatoes, salsa suprema and cheddar cheese for the sauce, heat in pan on stove top until the cheese is melted. Pour over casserole.

12 ounces canned whole green chilies
1 cup fat-free evaporated milk
4 egg whites
1/3 cup flour
8 ounces lowfat monterey jack cheese, shredded
8 ounces low-fat cheddar cheese, shredded
8 ounces tomato sauce

Steps:

  • Spray 1.5-qt cassrole. Remove seeds from peppers. Rinse and drain on paper towels.
  • Beat together milk, egg whites and flour until smooth. Set aside.
  • In another bowl, combine cheeses. Reserve 1/2 cup for topping.
  • To assemble: layer half each of the peppers, cheeses and egg mixture. Repeat these layers. Pour tomato sauce over top.
  • Bake 30 minutes. Sprinkle with reserved cheese and bake about 20 minutes more or until knife inserted near center comes out clean.

1/3 C milk
1/2 C flour
1/2 tsp baking pwd
1 C longhorn cheese,grated
8 oz can tomatoe sauce w/herbs

  • Stuff chilies with cheese strips. Arrange side by side in greased shallow baking dish. Beat eggs/with electric mixer until thick and foamy. Add milk, flour,baking pwd. Beat until as smooth as possible. Pour batter over chiles making sure all chilies are moist. Sprinkle with longhorn cheese. Bake uncovered 25 min. at 375. Just before casserole is ready heat tomato sauce and serve over chilies. Garnish w/olives

6 -8 large pasilla bell peppers (aka Poblano)
2 cups monterey jack cheese, shredded
2 cups sharp tillamook cheddar cheese, shredded
1 lb ground turkey
1/2 yellow onion, finely diced
1 garlic clove, minced
1/2 cup finely diced carrot
1 tablespoon chopped raisins
1/4 cup walnuts, toasted and chopped
1 -1 1/2 teaspoon chili powder
1/2 teaspoon cinnamon
1 teaspoon ground cumin
1 teaspoon dried oregano
salt
1 (15 ounce) can tomato sauce
4 eggs, 2/3 cup flour, and 1 1/2 cups half and half or 4 whole milk, whisked together

Steps:

  • Roast the peppers on a gas grill or in the broiler until charred. Put them in a paper bag for 10mins to loosen the skin. Peel and seed them making one vertical slit so that you can lay the pepper out flat.
  • Sauté onion, garlic and carrot until the onions are translucent.
  • Add the raisins and walnuts.
  • Add spices and sauté about 1 minute more.
  • Add the meat and cook until the turkey is browned and cooked through. Season with salt and pepper.
  • Grease a 9x11 casserole pan and layer the ingredients like a lasagna as follows: peppers, meat, cheese (both kinds), batter, peppers, batter, Monterey jack, tomato sauce, cheddar.
  • Bake in a preheated 350 degree oven 1hr covered. Remove foil and bake another 15mins until lightly browned and bubbly.
  • Serve with fresh sliced avocado.

1 large can ortega chilies, diced
1 1/2 lb grated colby/jack cheese
4 eggs, beaten
2 Tbsp flour
1/2 tsp salt
1 large can evaporated milk
1 small can tomato sauce, i use picante sauce if i have it.

Steps:

  • 1. Drain chilies. Line casserole with 1/2 of chilies. Spread cheese over chilies. Line rest of chilies on top of cheese.
  • 2. Beat eggs, milk, flour and salt together. Pour over top of chilies and cheese.
  • 3. Bake at 375 degrees for 35 min. or until set. Pour tomato sauce over top and bake 5 min. longer.
  • 4. Remove from oven and let set a few minutes before cutting. Enjoy!

This is very good and much easier than stuffing the cheese into the chiles, but with pretty much the same flavor of the traditional method. If you don't care for hot food, you could use plain Monterey jack cheese instead of the pepper-jack. I use roasted Hatch Peppers (mild), when available (late Aug-Sept here in NoVa). Easily adaptable to a veggie main dish by leaving out the chicken. It is 9 servings but my family of 5 polished it off. Even the 1 who NEVER takes 2nds went back for a bit more!

8 ounces monterey jack pepper cheese, shredded
1 1/2 cups chicken, cooked and shredded
3 eggs
3/4 cup heavy cream
1/2 teaspoon salt
4 ounces cheddar cheese, shredded

Steps:

  • Grease an 8x8" baking pan.
  • Slice each chile along one long side and open flat.
  • Arrange half of the chiles in the bottom of the baking pan, skin side down, in a single layer.
  • Top with the pepper-jack cheese.
  • Top with shredded chicken.
  • Arrange the remaining chiles over the cheese, skin side up.
  • Beat the eggs, cream and salt well.
  • Pour evenly over the chiles.
  • Top with the cheddar cheese.
  • Bake at 350º for 35 minutes, until golden brown.
  • Let stand 10 minutes before cutting.
