1/2 cup panko breadcrumbs
1/4 cup chopped fresh cilantro or 1/4 cup flat leaf parsley
kosher salt and black pepper
16 ounces chicken breasts, boneless, skinless, cut crosswise into 24 thin strips
3 tablespoons canola oil
1/2 cup mayonnaise
1 to 2 teaspoons asian chili-garlic sauce

Steps:

  • On a large plate, combine the peanuts, bread crumbs, cilantro, and ½ teaspoon each salt and pepper. Thread each strip of chicken onto a skewer and coat with the peanut mixture, pressing gently to help it adhere.
  • In batches, heat the oil in a large nonstick skillet over medium heat and cook the skewers until golden, 2 to 3 minutes on each side. Transfer to a plate as they are cooked and add more oil to the skillet as necessary.

2 lbs boneless skinless chicken thighs or 2 lbs chicken breasts
1/4 cup extra virgin olive oil
6 garlic cloves, mince
3/4 bunch fresh cilantro (save remaining for garnish)
1 teaspoon salt & pepper
sweet chili sauce, for basting (like Mae Ploy or see Thai Sweet Chili Sauce)

Steps:

  • Soak skewers in water for at least 20 minutes to prevent burning.
  • Cut chicken into 1" cubes and place into bowl. Add olive oil, garlic and cilantro in a food processor and pulverize. Pour the marinade into the bowl with the chicken, add teaspoon of salt and pepper and marinate overnight if possible.
  • Preheat the grill to medium heat and coat with oil. Remove chicken from the refrigerator and put 5-6 pieces of chicken on each skewer. Cook for 4-5 minutes on each side. Brush chili sauce on chicken just before done cooking to create a glaze.

1 1/2 lb boneless skinless chicken thighs
1 bottle (12 oz) sweet chili sauce
3 tablespoons soy sauce

1/3 cup molasses
1/3 cup red wine vinegar
5 tablespoons Worcestershire sauce
2 tablespoons olive oil
2 tablespoons light brown sugar
2 chipotle peppers in adobo, chopped (or 2 teaspoons hot sauce)
3 pounds boneless skinless chicken breast or thigh meat, cut lengthwise into 1-inch wide strips
36 to 40 (6-inch) wooden skewers

Steps:

  • Combine everything except chicken and skewers in a large nonreactive bowl and whisk to combine. Add chicken strips and toss to coat. Cover and marinate at least 45 minutes and up to 4 hours.
  • When ready to cook, heat oven to 425 degrees F and arrange a rack in the middle. Remove chicken from marinade (reserving marinade) and thread 1 piece of chicken on each skewer.
  • Heat the reserved marinade to boiling and boil for 3 minutes. Cool a bit before using.
  • Arrange skewers on a foil-lined baking sheet in a single layer. Bake for 10 minutes, flip skewers and baste with remaining marinade (you don't need to use it all). Bake about 5 more minutes, until golden brown on both sides.
