My family requests this chiles rellenos dish regularly-it's easy to prepare and makes a nice hors d'oeuvre or complement to a Mexican or Spanish meal. A friend I worked with shared the recipe with me several years ago. -Fran Carll, Long Beach, California

3 cups shredded Monterey Jack cheese
1-1/2 cups shredded cheddar cheese
2 cans (4 ounces each) chopped green chiles, drained
2 large eggs
2 tablespoons 2% milk
1 tablespoon all-purpose flour

Steps:

  • Preheat oven to 375°. Sprinkle half of each cheese onto bottom of a greased 8-in. square baking dish. Layer with chiles and remaining cheeses., Whisk together eggs, milk and flour; pour over top. Bake, uncovered, until set, 25-30 minutes. Cool 15 minutes before cutting.

Chili Cheese Grilled Cheese Bites image

The classic chili cheese flavors are getting the grilled cheese treatment! We make a quick, spreadable chili, then we encompass it with several layers of cheese. The secret is cooking the bread on melted Cheddar to add an outer, cheesy crunch that seals off the inside.

8 ounces 80/20 ground beef
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1/2 teaspoon mustard powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
Kosher salt
1/4 cup plus 2 tablespoons tomato paste (3 ounces)
Twelve 1/2-inch slices brioche (about 10 ounces)
1/4 cup cream cheese (2 ounces)
8 ounces shredded sharp yellow Cheddar (about 2 cups)

Steps:

  • Preheat a cast-iron skillet over medium-high heat. Place the beef in a thin, single layer and cook, undisturbed, until the bottom begins to brown, about 5 minutes.
  • Meanwhile, make the seasoning. Mix the garlic powder, cayenne, cinnamon, cumin, mustard powder, onion powder and paprika and 2 teaspoons salt in a small bowl. Check to make sure the bottom of the beef is a brown color, add the seasoning, then stir to combine and cook for 4 minutes. Stir in the tomato paste and cook until the mixture is brick red, about 1 minute. Stir in 3 ounces of water, then remove from the heat.
  • Preheat a large nonstick pan or griddle over medium heat.
  • Place 4 of the bread slices on a work surface. On each slice, spread 1 tablespoon (0.5 ounce) of cream cheese, then top with 1 heaping tablespoon of Cheddar and set aside.
  • Spread 2 heaping tablespoons of the chili on 4 more of the bread slices.
  • Place 2 heaping tablespoons of Cheddar on the top left corner of the pan, spreading it out so it resembles the shape of a brioche slice as much as possible. Repeat three more times to create 4 squares or rectangles.
  • Place each cheese-topped bread slice, cheese-side up, on top of a square of melting Cheddar. Top each with a chili-topped bread slice, chili-side up. Cook until the cheese starts to turn dark, golden yellow around the edges and is slightly crispy, about 5 minutes. Transfer the sandwiches to a plate.
  • Place 2 heaping tablespoons of Cheddar on the top left corner of the pan, spreading it out so it resembles the shape of a brioche slice as much as possible. Repeat three more times to create 4 squares or rectangles.
  • Place each of the 4 remaining bread slices on top of a square of melting Cheddar. Top with the sandwiches, chili-side down. Cook until the bottoms are crunchy and golden, about 5 minutes more. Transfer to a cutting board. Cut each sandwich into 4 squares and serve immediately.

I love appetizers, and these are among my favorites - I can even get my meat lovin' husband to eat these! They are easy and good, and the ingredients can be switched out to suit individual tastes. 1 pkg cream cheese, 3 oz., softened
1/2 c cheddar cheese, shredded
2 Tbsp chopped green chilis (from small can)
2 Tbsp chopped black olives
1 tsp minced onion
1 can(s) refrigerated crescent rolls (8 oz.)

Steps:

  • 1. Pre-heat oven to 400 degrees. Grease cookie sheet; set aside.
  • 2. In a small bowl mix all ingredients except crescent rolls, blend well.
  • 3. Separate crescent rolls into 4 rectangles. Press perforations in each of the 4 rectangles to seal. Spread 1/4 of cheese mixture over each rectangle, leaving a narrow edge. From the long side, roll up each rectangle until filling is enclosed. Cut each roll into 10 slices.
  • 4. Place each piece cut side down onto greased baking sheet. Bake at 400 degrees for 12 to 15 minutes, until golden brown. Serve immediately. *To make ahead of time, prepare, cover and refrigerate for up to 3 hours before baking. Bake as directed. *For the canned chilis, you can use the mild or the jalapeno peppers, as you prefer. I use 1 tablespoon of each.

1 cup all-purpose flour
1/2 cup finely grated cheddar cheese
1/4 teaspoon salt
1 egg, beaten
1/2 teaspoon dry mustard
1 tablespoon cold water
1/2 teaspoon hot chili powder
1 tablespoon sesame seeds
1 pinch cayenne pepper
1 tablespoon poppy seed
1/4 cup butter or 1/4 cup margarine

Steps:

  • Preheat oven to 400 degrees F (205'C).
  • Sift flour, salt and spices into a bowl.
  • Cut in butter finely until mixture resembles breadcrumbs.
  • Add grated cheese and mix well.
  • Mix egg with cold water.
  • Add 2 tablespoons of egg mixture to cheese mixture and mix to form a fairly stiff dough.
  • Knead gently on a lightly floured surface.
  • Roll out dough to a 12x6" rectangle.
  • Trim edges.
  • Cut in half lengthwise and transfer to a baking sheet.
  • Brush each half with remaining egg mixture.
  • Sprinkle 1 half with sesame seeds and the other half with poppy seeds.
  • Cut each half in 10 triangles and separate slightly to prevent sticking.
  • Bake in preheated oven 10-12 minutes or until light golden and cooked through.
  • Cool on a wire rack.
  • Store in an airtight container up to 2 weeks.

6 tablespoon(s) butter, chilled and diced
1/2 teaspoon(s) chili powder
1 teaspoon(s) worcestershire sauce
- paprika, for sprinkling
1 cup(s) all-purpose flour

Steps:

  • blend flour and butter until the consistency of bread crumbs
  • add cheese, chili powder and worcestershire, mix well to a soft dough consistency (add more cheese if desired)
  • shape as desired or roll out and cut, or press through cookie press. I shaped into ovals and then drug fork tines through the top.
  • bake for 10-15 minutes at 325 degrees until crisp, cool on wire rack and sprinkle with paprika
