4 cups cubed seedless watermelon
3/4 cup frozen limeade concentrate, thawed
2-1/2 cups carbonated water
Lime slices

Steps:

  • Place watermelon in a blender. Cover and process until blended. Strain and discard pulp; transfer juice to a pitcher. Stir in limeade concentrate. Refrigerate for 6 hours or overnight., Just before serving, stir in carbonated water. Garnish servings with lime slices.

1/2 cup simple syrup
Juice of 1 lime
Two 8-ounce cans diet grapefruit soda, such as Fresca

Steps:

  • Place the watermelon, simple syrup and lime juice in a blender. Puree until smooth. Pour into a small pitcher with ice. Add the diet grapefruit soda and stir. Pour into glasses.

1/2 cup sugar
1 tablespoon honey
3 tablespoons grated fresh ginger
1 cup seltzer
Fresh mint leaves for garnish

Steps:

  • Put watermelon into blender in batches and process until smooth. Strain through a sieve and discard solids.
  • Combine lime juice, sugar, honey and ginger in a bowl. Whisk until sugar dissolves.
  • Combine lime mixture and watermelon with seltzer, pour into tall glasses over ice, and garnish with mint. Or combine lime and watermelon and chill for several hours before adding seltzer to allow for deeper development of ginger flavor.
