8 cups Corn Chex
1 cup cheddar-flavored snack crackers
1 cup corn nuts
1 cup corn chips
1 cup miniature pretzel twists
6 tablespoons butter, melted
1 tablespoon lime juice
2 teaspoons chili powder
1 teaspoon grated lime zest
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/8 teaspoon cayenne pepper

Steps:

  • In a large microwave-safe bowl, combine the first five ingredients. In a small bowl, combine the remaining ingredients; pour over cereal mixture and toss to coat., Microwave, uncovered, on high for 5 minutes, stirring three times. Spread onto waxed paper to cool. Store in an airtight container.

1 head cauliflower, florets cut or broken into bite-size pieces
1 tablespoon vegetable oil
Kosher salt and freshly ground black pepper
About 1 tablespoon Mexican chile-lime seasoning, such as Tajin

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil.
  • Toss the cauliflower with the oil and a pinch of salt and pepper. Arrange in a single layer on the prepared baking sheet. Roast, stirring once or twice, until tender and browned in spots, 15 to 30 minutes.
  • Toss the roasted cauliflower with the chile-lime seasoning and transfer to a serving bowl.

1 cup bite-size cheese crackers
1 cup mini pretzel twists

2 teaspoons chili powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/8 teaspoon cayenne pepper

Steps:

  • In large microwavable bowl, mix cereal, corn nuts, crackers, pretzels and corn chips. Set aside. In small microwavable bowl, microwave butter uncovered on High about 40 seconds or until melted. Stir in lime juice, lime zest and seasonings. Pour over cereal mixture, stirring until evenly coated.
  • Microwave uncovered on High 5 to 6 minutes, stirring thoroughly every 2 minutes. Spread on paper towels to cool. Store in airtight container.

4 cups corn cereal squares, such as Chex
3 cups salted roasted peanuts
2 cups pretzel squares
2 cups baked chipotle Cheddar crackers, such as Cheez-It Zingz
2 cups crushed lime tortilla chips
2 cups flaked coconut
1 cup baked plain corn nuts (about 4 ounces)
1 cup salted roasted pepitas
1 1/2 sticks (12 tablespoons) unsalted butter
2 tablespoons tightly packed lime zest (about 6 limes)
1 tablespoon Mexican seasoning salt with achiote, such as Sazon
2 teaspoons kosher salt
1/2 teaspoon chili powder
1 cup grated Parmesan

Steps:

  • Preheat the oven to 300 degrees F. Line 2 baking sheets with parchment.
  • In a large bowl, combine the corn cereal, peanuts, pretzels, chipotle Cheddar crackers, tortilla chips, coconut, corn nuts and pepitas.
  • In a small saucepan, melt the butter. Add the lime zest, seasoning salt, kosher salt and chili powder. Simmer until the flavors are combined, about 1 minute. Remove from the heat and stir in the Parmesan.
  • Pour half the seasoning mixture over the party mix and stir to combine. Then add the second half of the seasoning mix and stir again, making sure the seasoning mixture is evenly distributed over the party mix. Divide between the 2 prepared baking sheets and bake until the mix is lightly toasted and the Parmesan is melted, about 15 minutes. Serve immediately or store in an airtight container.

1 can (11-1/2 ounces) mixed nuts
1 package (11 ounces) pretzel sticks
1 package (6.6 ounces) Goldfish cheddar crackers
1 cup butter, cubed
1/2 cup packed brown sugar
1 tablespoon garlic powder
1 tablespoon chili powder
1/2 teaspoon baking soda

Steps:

  • Preheat oven to 350°. In a large bowl, combine corn chips, nuts, pretzels and crackers. In a small saucepan, bring butter, brown sugar, garlic powder and chili powder to a boil. Remove from heat; stir in baking soda. Pour over snack mixture and toss to coat. , Transfer to three greased 15x10x1-in. baking pans. Bake 10-12 minutes or until lightly toasted. This recipe combines many of the spices that I grew up with and that have become a distinctive part of much of my cooking including dishes such as chili Colorado, posole, and Frontera™ style carne asada. I would describe this dish as more Tex-Mex or New Mexican than Mexican. Serve on a bed of rice or slice thinly for use in tacos or to top a green salad.

¼ cup ancho chile powder
1 tablespoon salt
1 tablespoon garlic powder
1 tablespoon onion powder
½ teaspoon ground cumin
½ teaspoon chipotle chile powder
⅔ cup canola oil, or more as needed
1 large lime, juiced
8 skinless, boneless chicken breast halves

Steps:

  • Combine ancho chile powder, salt, garlic powder, onion powder, cumin, and chipotle powder in a medium glass or ceramic bowl. Whisk in canola oil and lime juice until well combined; thin with additional canola oil if mixture seems too thick.
  • Arrange chicken in a glass or ceramic baking dish and pour the marinade over the chicken, covering it completely. Marinate in the refrigerator for 3 hours.
  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Arrange the chicken on the baking sheet; do not crowd. Discard any excess marinade.
  • Bake in the preheated oven until chicken is no longer pink in the centers, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from the oven and let stand for 5 to 6 minutes.
