CASHEW CHICKEN RECIPE

A quick and easy cashew chicken recipe with loads of crunchy cashews, aromatic seasonings, and huge flavor, all simmered in a glistening sauce.

Number Of Ingredients 15

1 tablespoons olive oil ((or use sesame oil, sesame oil, or vegetable oil))
1 small onion (chopped)
1-2 spicy chili peppers (chopped (I love serrano, Thai peppers, or cayenne here - use bell pepper for a milder version))
3 cloves garlic (minced)
1/2 cup cashew nuts ((or more to taste))
1 pound boneless chicken (chopped (use chicken breast or chicken thigh))
1 teaspoon Chinese 5 spice ((optional - it's not traditional, but I love the flavor))
Salt and pepper to taste
3 tablespoons soy sauce
2 tablespoons water
1 tablespoon fish sauce ((or use oyster sauce))
1 tablespoon mirin ((or Chinese cooking wine))
1 tablespoon corn starch
1 teaspoon brown sugar
1 teaspoon sesame oil

Steps:

  • Season the chopped chicken with salt and pepper, and Chinese 5 spice (if using). Set aside until ready to use.
  • Heat a wok or large pan to medium heat and add oil.
  • Add onion and peppers. Cook for 5 minutes to soften.
  • Add the garlic and cook another minute, stirring, until the garlic becomes fragrant.
  • Add the cashew nuts and chicken and stir. Cook another 7-8 minutes, or until the chicken is cooked through.
  • Whisk together all of the sauce ingredients in a small bowl and add to the wok or pan. Stir to coat everything and warm the sauce, about 1 minute or longer. The sauce will thicken up.
  • Serve with rice and garnish!

I was in a Park City, Utah Albertson's grocery store and picked up a sack of nuts: chipotle coated raw cashews. They were gone before I made it to the check-out. I paid for the empty bag and immediately wrote this recipe based on the ingredients of those nuts. This may look like Chinese Take-Out but the maple, chipotle flavor makes for a North-Western American surprise! Leave the nuts raw - they taste buttery and extra sweet. Toasting will develop a deeper flavor, but the sweet butter nuts have a unique texture when eaten raw.

1 tablespoon extra-virgin olive oil
2 tablespoons butter
1 large onion, 1/4 onion finely chopped, 3/4 thinly sliced
2 cups quick cooking brown rice
4 cups chicken stock
2 tablespoons vegetable oil
2 pounds chicken meat: tenders, boneless, skinless breasts or boneless, skinless thighs, cut into 2-inch pieces
2 tablespoons grill seasoning blend (recommended: Montreal Steak Seasoning blend by McCormick)
2 to 3 tablespoons tamari dark soy sauce, eyeball it
4 cloves garlic, chopped
1 red bell pepper, seeded and thinly sliced
10 to 12 water chestnuts, whole
1 cup frozen green peas
3 tablespoons chipotle in adobo (2 peppers and their sauce), available in cans on the international foods aisle or substitute 1 1/2 tablespoons ground chipotle powder
1 tablespoon ground cumin, a palm full
2 to 3 tablespoons honey, 2 healthy drizzles
1/4 to 1/3 cup real maple syrup, eyeball it
2 to 3 tablespoons chopped cilantro or parsley leaves, your preference
1 cup raw cashews

Steps:

  • In a medium pot over medium heat combine 1 tablespoon extra-virgin olive oil, 1 turn of the pan, and 1 tablespoon butter. When butter melts into oil, add in the chopped onion, cook 2 minutes, then add rice and cook 3 minutes more. Add stock and cover the pot. Raise heat to bring stock to a rapid boil. Once the stock boils, reduce heat to low and cook, stirring occasionally, until rice is tender, 17-18 minutes.
  • While rice cooks, make the chicken. Heat a large skillet over high heat. Add vegetable oil, 2 turns of the pan, then the chicken. Season the chicken with grill seasoning. Brown the chicken on both sides, season with soy sauce then move off to one side of the pan. Add the remaining onions, garlic and peppers. Cook 2 to 3 minutes then add water chest nuts and green peas and mix vegetables and meat together. Add the chipotles and cumin. Toss to coat. Glaze the mixture with honey and maple syrup and turn off the heat. Add in the chopped cilantro or parsley and the cashew nuts.
  • Top rice with cashew chicken and serve.

2 tablespoon(s) olive oil
1 cup(s) diced red pepper
1/2 cup(s) diced celery
1 cup(s) diced onion
1 tablespoon(s) finely diced jalapeno
3 cup(s) diced cooked chicken
1 can(s) (16 oz) alfredo sauce
1 can(s) (14 oz) canelli or northern beans, drained
2/3 cup(s) cashews
1/2 cup(s) diced green onions
2/3 cup(s) shredded swiss cheese (optional)

Steps:

  • In a medium stock pot, over med-high heat, cook peppers, onons, celery and jalapeno until soft.
  • Add diced cooked chicken, alfredo sauce and beans.
  • Reduce heat to medium and stir ingredients well for about 5 minutes.
  • Reduce to low heat and simmer for abut 10-15 minutes.
  • Serve in bowls with a sprinkling of diced green onions and a little swiss cheese.

3 ancho chilies, dried
1/4 cup cashews
1 1/2 cups chicken stock
2 tablespoons olive oil
1 onion, diced
4 garlic cloves, minced
1 1/2 tablespoons cumin powder
1 teaspoon chili powder
1 teaspoon salt
3 chicken breasts, cubed
1/4 cup cilantro, chopped
28 ounces canned tomatoes
1/2 cup cashews
1/2 ounce bittersweet chocolate
1 cup kidney bean, drained

Steps:

  • Chile Puree:.
  • Heat a small skillet over high heat until very hot. Place chiles in pan, one at a time and press down with tongs for about 1 minute on each side. Next, seed and devein the chiles.
  • Place chiles in a blender with cashews and chicken stock.
  • Puree until smooth.
  • Chili: In a stock pot, briefly saute onion, garlic, cumin, chile powder, and salt in the olive oil.
  • Add chicken and stir to coat. Stir in chile puree, cilantro, and tomatoes.
  • Cover and simmer for 45 minutes.
  • Add cashews, chocolate and beans.
  • Stir until chocolate melts.
  • Serve NOTES : F or spicy chili, add 2 or 3 chipotles to the puree and double the chile powder.

4 teaspoons cornstarch
2 teaspoons sugar
1/2 cup cold water
1/3 cup soy sauce
2 teaspoons minced fresh gingerroot
1 teaspoon crushed red pepper flakes
1-1/3 pounds boneless skinless chicken breasts, cut into 1-inch strips
2 tablespoons canola oil
2 celery ribs, chopped
2 medium carrots, chopped
1 medium onion, chopped
1 cup whole salted cashews
Hot cooked rice, optional

Steps:

  • In a small bowl, combine the first six ingredients; set aside., In a large skillet or wok, stir-fry chicken in oil until no longer pink. Remove and keep warm. In the same pan, stir-fry the celery, carrots and onion until crisp-tender. , Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. ¼ cup cornstarch
1 teaspoon ground black pepper
2 pounds boneless skinless chicken breast halves, cut into 1-inch pieces
1 tablespoon canola oil
1 cup roasted unsalted cashews
¾ cup reduced-sodium soy sauce
⅓ cup rice wine vinegar
⅓ cup ketchup
3 tablespoons sweet chili sauce
2 tablespoons dark brown sugar
5 cloves garlic, minced
1 tablespoon grated fresh ginger
½ teaspoon red pepper flakes
2 teaspoons toasted sesame oil
4 green onions, sliced diagonally

Steps:

  • Combine cornstarch and pepper in a resealable plastic bag. Add chicken pieces and shake bag to coat with cornstarch mixture.
  • Heat oil in skillet over medium-high heat. Brown chicken about 2 minutes on each side. Transfer to a multi-functional pressure cooker (such as Fagor®).
  • Combine cashews, soy sauce, rice vinegar, ketchup, sweet chili sauce, brown sugar, garlic, ginger, red pepper flakes, and sesame oil in a bowl. Pour over chicken.
  • Close and lock lid. Select Slow Cook function. Cook on Low until flavors are well combined and chicken is cooked through, about 2 hours. Garnish with green onions.

1/2 cup orange blossom honey
1/3 cup white vinegar
2 tablespoons paprika
2 teaspoons salt
1 teaspoon pepper
4 pounds chicken wings

Steps:

  • Combine honey, vinegar, paprika, salt and pepper in a small bowl., Cut through the 2 wing joints with a sharp knife, discarding wing tips. Add remaining wing pieces and honey mixture to a large bowl; stir to coat. Cover and refrigerate 4 hours or overnight., Preheat oven to 375°. Remove wings; reserve honey mixture. Place wings on greased 15x10x1-in. baking pans. Bake until juices run clear, about 30 minutes, turning halfway through., Meanwhile, place reserved honey mixture in a small saucepan.
