2 large pears, sliced
1 tablespoon lemon juice
6 cups spring mix salad greens
1 cup crumbled Gorgonzola cheese
1 cup chopped walnuts, toasted
1/2 cup raspberry vinaigrette

Steps:

  • Toss pears with lemon juice. In a large bowl, combine greens, cheese, walnuts and pears. Drizzle with vinaigrette and toss to coat. Serve immediately.

4 large pears, about 2 pounds
4 tablespoon lemon juice
6 ounces Gorgonzola or other creamy blue cheese
12 cups mixed greens, washed, dried and torn into bite-size pieces
1 to 1 1/2 cups any vinaigrette

Steps:

  • Peel and core the pears; cut them into thin slices, and toss with the lemon juice. Cover, and refrigerate until needed.
  • Crumble the Gorgonzola into small bits; cover and refrigerate until needed.
  • To serve, toss the pear, cheese and greens together with as much dressing as desired. Serve immediately.

1/2 cup olive oil vinaigrette salad dressing
2 tablespoons chopped fresh basil
1 tablespoon olive oil, divided
1 large sweet onion, thinly sliced and separated into rings
1 teaspoon sugar
1 red pear, cored and thinly sliced
1 1/2 cups Morningstar Farms® Meal Starters veggie chicken chik'n strips
6 cups mesclun or torn mixed lettuce spring greens
1/4 cup walnuts pieces, toasted*
1/4 cup crumbled gorgonzola cheese

Steps:

  • 1. In small bowl stir together salad dressing and basil. Set aside.2. In large nonstick skillet heat 2 teaspoons of olive oil. Stir in onion and sugar. Cook over medium heat for 8 to 10 minutes or until golden brown, stirring frequently. Stir in pear slices, Chik'n Strips and remaining oil. Cook and stir for 1 to 2 minutes or until heated through.3. Meanwhile, arrange mesclun on 4 serving plates. Top with pear mixture. Sprinkle with walnuts and cheese. Drizzle with salad dressing mixture. Serve immediately.*NOTE: To toast walnuts, spread evenly on baking sheet. Bake at 350°F for 5 to 10 minutes or until light golden brown, stirring once or twice.

This quick, easy recipe really showcases pears. When I have leftover cooked chicken, I often add it to the recipe to make a main dish salad.

1/3 cup white wine vinegar
1 can (15 ounces) pear halves, drained
1/2 teaspoon salt
1/3 cup olive oil
6 cups torn mixed salad greens
2 medium pears, chopped
1 medium tomato, seeded and finely chopped
3/4 cup chopped walnuts
1/4 cup crumbled Gorgonzola cheese
Coarsely ground pepper, optional

Steps:

  • For dressing, in a blender, combine the vinegar, pear halves and salt; cover and process until smooth. While processing, gradually add oil in a steady stream., In a salad bowl, combine the greens, chopped pears, tomato, walnuts and cheese. Drizzle with desired amount of dressing; toss to coat. Serve with pepper if desired. Refrigerate any leftover dressing.

3 teaspoons red wine vinegar
2 teaspoons honey dijon mustard
salt and pepper
3 cups diced, cooked chicken breasts
1/2 cup walnuts, toasted
1/2 cup crumbled gorgonzola (è}@è}@ese can be substituted with similar results)
2 pears, halved,cored,and sliced
14 -16 ounces mixed salad greens

Steps:

  • In a bowl, whisk together olive oil, vinegar, mustard, salt, and pepper to taste.
  • Add chicken, walnuts, and Gorgonzola cheese and toss lightly.
  • Place greens on individual salad plates.
  • Arrange sliced pears in fan shape along one side on top of greens.
