CHICKEN WITH CREAMY JALAPENO SAUCE

- Sprinkle chicken with salt. In a large nonstick skillet over medium-high heat, brown chicken in oil on both sides. , Add the onions, broth, jalapenos and cumin. Bring to a boil. Reduce heat; cover and simmer until a thermometer reads 165°, 5-7 minutes. Remove chicken and keep warm., Stir cream cheese and sour cream into onion mixture until blended. Stir in tomatoes; heat through. Serve with chicken and rice.

CHICKEN WITH JALAPENO CREAM SAUCE
This easy 20 minute chicken breast dish is packed with flavor from a homemade jalapeno cream sauce. It's quick, light, and super delicious.

- Preheat the oven to 350. Season the chicken breasts with salt and pepper.
- Heat an oven proof pan over medium high heat. Add the vegetable oil. Once it is nice and hot, sear the chicken breasts on both sides and then place in the oven to cook for 20-25 minutes. You want the chicken to reach an internal temperature of 165 degrees but cooking time might vary slightly depending on the thickness of the breast.
- Using a small sauce pan, melt the butter over medium heat. Add the onions, jalapenos, and garlic and cook for about 3 minutes. Then whisk in the flour to create a roux.
- Turn the heat down to medium low and add the skim milk and evaporated milk. Cook for about 7 minutes until it begin to thicken. Turn off the heat and stir in the cheese. Taste and season with salt and pepper.
- Right before serving, squeeze the lemon over the chicken breasts and spoon the sauce over.

SWEET JALAPENO CHICKEN
Fast and easy, and delicious, with the flavors of jalapeno jelly, Dijon mustard and honey. Do try to use the RED jalapeno jelly, however; the green-colored one looks much less appetizing (though it still tastes fine)!

- Preheat oven to 350 degrees F.
- In a small bowl, mix together honey, mustard and jalapeno jelly.
- Place chicken breasts in a baking dish; sprinkle with salt and pepper to taste, and pour honey-mustard-jelly sauce over all, coating well.
- Bake uncovered for about 1 hour, basting occasionally, until chicken juices run clear and meat is no longer pink.
GRILLED SPLIT CHICKEN WITH SWEET JALAPENO GLAZE
Steps:
- 1. Prepare a grill for medium-high heat cooking. In a small bowl, combine the brown sugar, coriander, 1 tablespoon salt, and 1 teaspoon pepper. Rub the mixture over the chicken. In another bowl, whisk together the jelly, vinegar, and rosemary.
- 2. Brush the grill grate with oil. Grill the chicken halves, bone side down, for 10 minutes. Flip the chicken and cook until there are dark grill marks on the skin, about 10 minutes. Flip the chicken again and brush the skin with the jelly mixture. Continue cooking, brushing the skin every 10 minutes with the jelly mixture, reserving some for serving, until an instant-read thermometer inserted into the thigh but not touching the bone registers 165 degrees F, about 20 minutes more. Transfer the chicken to a cutting board and let rest for 5 minutes. Cut the chicken into serving pieces and serve with the extra glaze on the side.
