BAKED CRANBERRY CHICKEN WITH ROSEMARY

This easy baked cranberry chicken recipe with rosemary is the perfect festive dinner! Bold flavors from fresh garlic, rosemary, citrus, and tangy-sweet cranberries come together to create a show-stopping dish. If you like, you can marinate the chicken in the seasoning and citrus for a couple hours in the fridge or just do as in the recipe and allow it to sit at room temperature for a few minutes.

2 cups fresh cranberries
1/3 cup brown sugar
2-3 tbsp white wine vinegar (more for later)
6 pieces bone-in (skin on chicken (I used 2 chicken breasts and 4 thighs))
6-8 garlic cloves (minced)
Salt and pepper
1 1/2 tbsp chopped fresh rosemary (or 1 1/2 tsp dry rosemary)
1 tsp sweet paprika
1/3 cup Extra virgin olive oil
1 lemon (juice of (do not discard used lemon halves))
1 large yellow onion (chopped)
3 celery stalks (chopped)
1/2 cup chicken broth or water
More fresh rosemary for garnish

Steps:

  • In a small bowl, combine the cranberries, brown sugar, and white wine vinegar. Set aside for now.
  • Pat the chicken pieces dry. Rub the chicken with the minced garlic on both sides (make sure to apply some of the garlic underneath the chicken skins). Season well with salt and pepper. Combine the rosemary and paprika then apply to the chicken pieces on both sides and again underneath the skin.
  • In a large bowl or deep enough dish, mix the olive oil, lemon juice and 2 tbsp white wine vinegar. Now add the chicken, celery, onions, and used lemon halves. Work everything together with clean hands. Set aside to marinate just for 15 minutes or so.
  • Preheat the oven to 425 degrees F.
  • Heat 1 tbsp olive oil in a skillet. Place the chicken skin side down to brown on medium-high for 5 minutes. Turn over and brown on the other side.
  • Place the chicken, onions, celery, lemon halves and any liquid from the marinade in a lightly oiled baking pan. Add 1/2 cup water or chicken broth, then add the sugared cranberries.
  • Bake in the 425 degrees F heated-oven for 35 to 40 minutes or until the chicken is fully cooked through. Serve hot with Lebanese rice and your favorite salad.

My mom found this recipe years ago, and now it's become a cheap and easy weeknight favorite at my house.

1 tablespoon butter
1 small onion, chopped
3 pounds chicken thighs
⅔ cup ketchup
⅓ cup brown sugar
1 tablespoon apple cider vinegar
1 teaspoon dry mustard powder
1 (8 ounce) can whole berry cranberry sauce

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Place the butter and onion in a 9x13 inch baking dish, and bake in the preheated oven, stirring occasionally, until the onion is translucent, about 15 minutes. Remove the dish from the oven, push the onion over to one end, and place the chicken thighs in the dish in a single layer. Return to the oven and bake for about 25 minutes.
  • Stir together the ketchup, brown sugar, vinegar, mustard powder, and cranberry sauce in a bowl. Remove the chicken from the oven, and scoop the cooked onions into the cranberry mixture. Spoon the mixture over the chicken thighs, and return to the oven.
  • Bake until the cranberry mixture is slightly caramelized and the chicken is done, about 20 more minutes. An instant-read thermometer inserted near the center should read 165 degrees F (74 degrees C).

2 cups dried cranberry, kidney or pinto beans, soaked overnight and drained
3 slices lean bacon, diced
6 chicken breasts and/or thighs and drum sticks
Coarse salt and freshly ground pepper
Flour for dredging
1 medium onion, chopped
2 celery ribs, chopped
1 garlic clove, minced
3/4 cup dry white wine
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh rosemary
1 fresh or canned plum tomato, seeded and diced
2 tablespoons chopped flat-leaf parsley

Steps:

  • Put beans in a three-quart sauce pan, cover to one inch above the beans with cold water and bring to boil. Turn off heat, cover pot, let the beans stand in hot water for an hour. Drain off water, cover beans with fresh water and bring to boil. Turn down heat and simmer beans, partly covered until they are tender, about 50 to 60 minutes. Drain beans, preserving liquid.
  • Cook bacon in large skillet over medium heat, stirring frequently until it is browned but not crisp, about 10 minutes. Using a slotted spoon, put bacon on paper towels to drain, leaving fat in skillet.
  • Pat chicken pieces dry, season with salt and pepper and dredge them in flour, shaking off any excess. Heat bacon fat over medium-high heat. When it is hot, add chicken pieces and cook them, in batches if necessary, turning them once until they are golden brown and crisp -- about 15 minutes. Remove chicken to Dutch oven and pour off all but two tablespoons of the fat from bacon. Return cooked bacon to pan. Add onion, celery and garlic and cook until they are wilted, about five minutes.
  • Increase heat to high, add wine, bring to boil, scraping up the brown bits from bottom of pan. Pour mixture over chicken, cover pot, cook over medium-high heat for three minutes. Add beans, thyme, rosemary, salt and pepper to taste and two cups of reserved bean cooking liquid. Stir well, bring to boil, turn down heat and simmer, covered, for about 15 minutes, until chicken is done. Beans may absorb some of the liquid; add more bean juice so there is plenty of sauce.
  • Taste and adjust seasoning. Put chicken, beans and sauce into serving dish and sprinkle with diced tomato and parsley.

6 skinless, boneless chicken breasts
1 ½ (1 ounce) packages dry onion soup mix
1 (16 ounce) can jellied cranberry sauce
1 cup French dressing

Steps:

  • Place the chicken breasts in a glass or non-reactive baking dish.
  • Stir the onion soup mix, cranberry sauce, and French dressing together in a bowl until well blended. Pour over the chicken breasts. Cover the baking dish with plastic wrap, and refrigerate at least 8 hours.

1/2 cup all-purpose flour
1/8 teaspoon salt
1 broiler/fryer chicken (about 3 pounds), cut up

10 pieces chicken breasts (skinless)
15 ounces whole berry cranberry sauce (1 can)
3/4 ounce dry onion soup mix (1 envelope)
8 ounces Catalina dressing (fat free)
fresh rosemary, a few needles from the sprig (optional)
1/4 cup dried cranberries (optional)

Steps:

  • Preheat oven to 350°F
  • Mix onion soup, whole cranberry relish and Catalina salad dressing together in a bowl.
  • Place chicken breasts in the bottom of the baking dish and pour the cranberry mixture over the chicken. Sprinkle a little fresh rosemary and dried cranberries over the chicken, if desired.
  • Cover the dish and bake for 45 minutes. Remove the cover and bake an additional 15-20 minutes. Serve.
