4 boneless skinless chicken breast halves (6 ounces each)
3/4 teaspoon salt
1/2 teaspoon pepper
1 tablespoon canola oil
1 cup reduced-sodium chicken broth
3 tablespoons white balsamic vinegar
1/2 teaspoon minced fresh rosemary
2 teaspoons cornstarch
1-1/2 teaspoons sugar
2 medium unpeeled pears, each cut into 8 wedges
1/3 cup dried cherries or dried cranberries

Steps:

  • Sprinkle chicken breasts with salt and pepper. In a large nonstick skillet, heat oil over medium-high heat. Add chicken; cook until a thermometer reads 165°, 8-10 minutes. Remove., Meanwhile, stir together next 5 ingredients until blended. Pour into skillet; add pears and dried cherries. Bring to a boil over medium-high heat; reduce heat and simmer, covered, until pears are tender, about 5 minutes. Return chicken to skillet; simmer, uncovered, until heated through, 3-5 minutes. If desired, sprinkle with additional minced rosemary.

One night (before payday) I found my pantry and fridge was more bare that Old Mother Hubbard's. These are the ingredients I had one hand to make this tasty and comforting dish.

2 tablespoons olive oil
4 boneless skinless chicken breasts (thawed)
4 teaspoons cinnamon (divided)
4 fresh pears (peeled, cored and cut into chunks, reserve the pear cores)
1 cup chicken broth
1 teaspoon ground allspice
1/2 tablespoon sugar
1 teaspoon salt
1/3 cup raisins
1 tablespoon asiago cheese

Steps:

  • Preheat oven to 325 degrees Fahrenheit.
  • In a large skillet, warm the oil over medium-high heat.
  • Sprinkle both sides of the chicken breasts with half of cinnamon. Add the breasts to the skillet and cook for about 5 minutes on each side or until browned; transfer to a plate and set aside.
  • Remove as much flesh as possible from each one of the cores. Place in a microwave safe bowl (2 Celsius capacity) along with chicken broth. Microwave for 2 ½ minutes on high. Set aside.
  • Put chopped pears, cinnamon, salt, allspice, sugar and broth/pear liquid into a food processor. Process until the mixture is of applesauce-like consistency. Stir in the raisins.
  • Place chicken breasts into a lightly greased, 2 quart capacity casserole dish. Cover with the pear mixture. Sprinkle the top with 1 tablespoon of Asiago cheese. Bake uncovered at 325 for 35 minutes. Serve over a bed of steamed white rice.

3 tablespoons plus 2 teaspoons vegetable oil
1/2 cup chopped onion
1 tablespoon minced garlic
2 cups apple juice
1/2 cup red wine
2 tablespoons balsamic vinegar
2 tablespoons dried rosemary
1 teaspoon fresh thyme or 1/2 teaspoon dried
Pinch of dried crushed red pepper
1/2 cup whipping cream
1 Bosc pear, quartered, cored, thinly sliced
4 skinless boneless chicken breast halves
1/4 cup Marsala

Steps:

  • Heat 2 tablespoons oil in heavy medium saucepan over medium-high heat. Add onion and garlic; sauté until tender, about 5 minutes. Add apple juice, red wine, vinegar, rosemary, thyme and crushed red pepper; bring to boil. Reduce heat; simmer until mixture is reduced to 1 1/2 cups, stirring occasionally, about 20 minutes. Strain mixture into small saucepan; discard solids. Add cream and simmer until reduced to sauce consistency, about 12 minutes.
  • Meanwhile heat 2 teaspoons oil in heavy medium skillet over medium heat. Add pear slices; sauté until tender and golden brown, about 8 minutes. (Sauce and pears can be prepared 2 hours ahead. Cover separately and refrigerate. Rewarm pears over medium-low heat before serving.)
  • Heat remaining 1 tablespoon oil in heavy large skillet over medium-high heat. Sprinkle chicken with salt and pepper. Add to skillet and sauté until cooked through and golden brown on both sides, about 4 minutes per side. Add Marsala and bring to boil. Stir in reserved sauce, turning chicken once to coat. Cook until heated through, about 2 minutes longer.
  • Divide chicken among 4 plates. Spoons some sauce around chicken on each plate. Garnish with pear slices.

Asian pears are now available anywhere...I found them at Wal-Mart! I've tried a whole lot of stir fry combinations (probably close to 200!) and this one from Eileen Yin-Fei Lo is truly phenomenal. The shallots, pears, asparagus and macadamia nuts go great together - I know it sounds odd but you've got to trust me on this one. Cook time includes marinade time.

1/2 lb boneless skinless chicken breast, cut into 1 1/2-inch by 1-inch strips
3 tablespoons peanut oil
1 tablespoon sliced fresh ginger, in tissue-thin half moons
5 ounces asparagus, tough ends cut off and cut into 1/4-inch pieces on a diagonal (3/4 cup)
1 stalk celery, cut in 1/4-inch pieces on a diagonal (1/2 cup)
1/2 cup red pepper, cut into 1-inch x 1/4-inch pieces
1 bosc pear, peeled and quartered and cut into 1/4-inch pieces on a diagonal (3/4 cup)
2 large shallots, thinly sliced
1 teaspoon minced garlic
2 teaspoons white rice wine or 2 teaspoons gin
1/2 cup macadamia nuts
2 teaspoons beaten egg whites
1 teaspoon white rice wine or 1 teaspoon gin
2 teaspoons cornstarch

Steps:

  • Combine the marinade ingredients in a large bowl.
  • Add the chicken and allow to rest for at least 20 minutes.
  • In another bowl, combine the sauce ingredients and reserve.
  • Heat a wok over high heat for at least 45 seconds.
  • Add 1 1/2 tablespoons of the peanut oil and coat the wok using a spatula. When a wisp of white smoke appears, add the ginger slices, stir and cook for 15 seconds.
  • Add the asparagus and cook, stirring, for one minute.
  • Add the celery and bell pepper and cook, stirring for another minute.
  • Add the pear and cook, stirring, for 30 seconds.
  • Remove the contents of the wok and reserve on a platter.
  • Add the remaining 1 1/2 tablespoons of oil and coat the wok with it using a spatula.
  • When a wisp of white smoke appears, add the shallots, stir, and cook for 20 seconds.
  • Add the garlic and stir briefly.
  • Add the chicken and marinade, spread in a thin layer, and cook for 45 seconds.
  • Turn over and cook for one minute.
  • Splash the wine over, and stir to mix.
  • Add the reserved vegetable-fruit mixture and cook, stirring for two minutes.
  • Make a well in the center of the mixture, stir the sauce mixture, pour in and stir to mix until the sauce thickens, about 1 1/2 minutes.
  • Turn off the heat, add the macadamia nuts, mix well, transfer to a heated platter, and serve.

1 ¹⁄3 cups whole wheat couscous
1 tablespoon olive oil, see direction step 2

4 small (about 1 pound) skinless, boneless chicken-breast halves
2 Bosc pears, each unpeeled, cored, and cut into 8 wedges
1 cup chicken broth
3 tablespoons balsamic vinegar
2 teaspoons cornstarch

Steps:

  • Prepare Roma beans and couscous as labels direct. Meanwhile, in 12-inch skillet, heat 1 tablespoon oil on medium until hot. Add chicken and cook 10 to 12 minutes or until juices run clear when thickest part is pierced with tip of knife, turning over once. Transfer chicken to plate. In same skillet, in remaining oil, cook pear wedges 3 to 4 minutes or until lightly browned and tender. In cup, mix broth, vinegar, and cornstarch; add to skillet with pears.
