This simple rice pilaf with brown rice and angel hair pasta is a healthy, homemade version of Rice-A-Roni that makes the perfect side dish.

2 teaspoons butter ((use olive oil for dairy free))
1/4 cup 3/4 ounce angel hair spaghetti broken into small pieces* (wheat, whole wheat or gluten-free)
1 cup uncooked 10 minute instant brown rice (such as Uncle Ben's)
2 cups chicken broth ((or water and chicken bouillon))
optional (chopped parsley for garnish)

Steps:

  • Melt the butter in a deep skillet with a fitted lid over medium heat.
  • When the butter is melted, add the broken spaghetti and rice. Cook, stirring constantly, for 2 to 3 minutes, until slightly toasted.
  • Add the chicken broth and bring to a boil. Reduce the heat to a simmer. Cover and cook for 10 to 12 minutes, until the rice is tender and the broth is absorbed.
  • Remove from the heat and let sit for 5 minutes, then fluff with a fork.

1 (3 1/2) pound whole chicken
1 stalk celery, roughly chopped
1 medium carrot, roughly chopped
½ medium yellow onion, roughly chopped
1 large bay leaf
1 tablespoon kosher salt
3 quarts water
2 tablespoons olive oil
2 tablespoons butter
½ medium yellow onion, diced
⅓ cup diced red bell pepper
2 teaspoons kosher salt
1 cup broken uncooked spaghetti (2-inch pieces)
1 ½ cups basmati rice
¼ teaspoon freshly ground black pepper
¼ teaspoon dried oregano
½ teaspoon ground cumin
½ teaspoon saffron threads, crushed
1 pinch cayenne pepper
½ cup garbanzo beans, drained and rinsed
⅓ cup frozen green peas, thawed and drained
2 tablespoons chopped fresh parsley, or to taste
2 tablespoons chopped fresh cilantro, or to taste

Steps:

  • Place chicken, celery, carrot, onion, and bay leaf in a stockpot and cover with water. Set over high heat, add salt, and bring to a simmer. Reduce heat to medium-low and simmer until the thighs and legs can be pulled easily from the carcass, about 1 hour and 15 minutes. Remove chicken to a bowl, carefully tipping the carcass to drain any broth from the cavity back into the stockpot.
  • Let meat sit until it's cool enough to handle, 15 to 20 minutes. Separate skin, bones, and meat. Set aside 2 cups shredded meat (white, dark, or a combination of the two) for rice-a-roni and reserve the rest for another use.
  • Transfer skin and bones back to the stockpot with the broth and simmer for 1 to 2 hours or until you need it. Strain.
  • Combine oil and butter in a skillet over medium-high heat. When hot and melted, add onion, bell pepper, and salt. Cook and stir until onion just starts to turn translucent, 3 to 4 minutes. Add broken spaghetti and cook until toasted and light golden brown to dark brown in color, about 3 minutes; it's okay if the onions and peppers start to caramelize.
  • Add rice and stir until completely coated. Add pepper, oregano, cumin, and saffron. Stir in 3 ½ cups chicken broth. Add cayenne, garbanzo beans, peas, and shredded chicken and return to a simmer.
  • Cover tightly with a lid, reduce heat to medium-low, and cook for 15 minutes; do not lift the lid or stir during this time.
  • Remove the lid and check the rice in a couple spots. It should be just barely tender. (If it seems undercooked, you can cover and cook for a few more minutes.) Replace the lid, turn off the heat, and let rice sit for 10 minutes.
  • Sprinkle parsley and cilantro over top and stir to combine. Check for seasoning and serve immediately.

This is a pretty simple recipe that I threw together when I was making a whole chicken. I find it to be really good and everyone loved it! The recipe can change I used canned veggies and boil in bag rice for convienience but you can use fresh and it dont think it would make a taste difference

1 (15 1/2 ounce) can mixed vegetables
1 small onion (chopped)
1 large piece celery (chopped)
2 tablespoons chicken base
1 tablespoon chicken dripping (optional)
2 tablespoons butter or 2 tablespoons margarine
2 (1 cup) bags boil-in-the-bag rice (I used Uncle Ben's)

Steps:

  • In a large skillet combine Veggies, Onion, Celery, 1 tablespoon Chicken Base and Butter. Let simmer for about 10 minutes.
  • In a seperate pot prepare rice as directed after water comes to a boil, add the remaining Chicken Base.
  • When Rice is done add it to the skillet along with the Chicken Drippings, Let simmer all together for about 15 minutes
  • Serve immediatley.

6 boneless skinless chicken breast halves (1-1/2 pounds)
1 tablespoon canola oil
3/4 cup chopped sweet red pepper

How on earth do we know what's in it?...LOL! This is my version of chicken Rice - A - Roni...season it up to your liking...Don't like chicken? Try Beef...same...

2/3 c long grain rice - i use uncle bens
2 1/2 c chicken broth
1/3 c vermicelli, broke into small pieces
1 1/2 Tbsp butter
1/2 tsp onion powder
1/2 tsp garlic powder
1/8 - 1/4 tsp dried thyme
1/2 - 1 tsp better than buillon chicken flavored - or chicken buillon
parsley flakes

Steps:

  • 1. Break vermicelli into small pieces. Melt butter in a non-stick pan over medium heat. Stir in rice and vermicelli; cook, stirring frequently, until vermicelli is lightly browned.
  • 2. Add chicken broth and spices, except for parsley. Bring to a boil. Lower heat to a simmer and cover pan. Simmer for 10 to 15 minutes until rice is just a bit soupy.
  • 3. Remove from heat, cover and let sit for about 5 minutes. If it gets too dry, just add some water or more broth. Stir in parsley and serve.
