Time 1h

Number Of Ingredients 39

1 pound tomatillos, husked
1 white onion, peeled, sliced, quartered or whole
4 garlic cloves
2 jalapenos
2 teaspoons ground cumin
1 teaspoon salt
1/2 cup chopped cilantro leaves
1/2 lime, juiced
Extra-virgin olive oil
1/2 medium onion, diced
3 garlic cloves, chopped
1 1/2 teaspoon ground cumin
1/4 cup all-purpose flour
2 cups chicken stock, store-bought
Chopped cilantro leaves
1 deli roasted chicken (about 3 pounds), boned, meat shredded
Salt
Freshly ground black pepper
10 large flour tortillas
1/2 pound Monterey Jack cheese, shredded
2 cups sour cream
Chopped tomatoes and cilantro leaves, for garnish
Spicy Black Beans, recipe follows
Yellow Rice, recipe follows
Guacamole, optional
2 cups (about 1 pound) dried black beans, picked over, soaked overnight
3 tablespoons extra-virgin olive oil
1/2 medium onion, diced
1 jalapeno pepper, chopped
2 cloves garlic, chopped
1 bay leaf
Kosher salt
freshly ground black pepper
2 cups long-grain rice
4 cups water
2 cloves garlic, smashed
1 tablespoon turmeric
1 teaspoon kosher salt
1 bay leaf

Steps:

  • Preheat oven to 400 degrees F.
  • For the salsa:
  • On a baking tray, roast tomatillos, onion, garlic and jalapenos for 12 to 15 minutes. Transfer the roasted vegetables and any juices on the bottom of the tray to a food processor. Add the cumin, salt, cilantro, and lime juice and pulse mixture until well combined but still chunky.
  • For the enchiladas:
  • Meanwhile heat a 2 count of olive oil in a medium saucepan over medium heat. Add the onion and cook until soft and caramelized - this should take 5 to 7 minutes. Add the garlic and cumin then cook for a further minute. Sprinkle on the flour and stir to ensure the flour doesn't burn then gradually add the chicken stock to make a veloute. Continue stirring over a low simmer until the flour cooks and the liquid thickens. Turn off the heat, add half of the roasted tomatillo chile salsa, some additional fresh chopped cilantro and fold in the shredded chicken meat. Season, to taste, with salt and pepper.
  • Change the temperature of the oven to 350 degrees F and begin assembling the dish. Take a large flameproof baking dish and smear the bottom with some of the reserved tomatillo salsa. Now take the flour tortillas and briefly flash them over the stove-top flame (or put them briefly under the broiler if using an electric stove). Using a shallow bowl, coat each tortilla lightly with the reserved salsa mix. Put a scoop of the shredded chicken-enchilada mix on top of the tortilla followed by a sprinkle of the shredded cheese. Fold the tortilla over the filling and roll like a cigar to enclose it. Using a spatula place the tortillas in the baking dish and continue to do the same with all the tortillas. Finally pour over some more of the salsa and top with the remaining shredded cheese. Bake uncovered for about 30 minutes until bubbly and cracked on top. Garnish, cilantro and tomato.
  • Serve hot with Spicy Black Beans and Yellow Rice, the remaining tomatillo salsa, sour cream and fresh guacamole, if desired.
  • In a large pot, soak beans overnight covered in water by 2 inches. Drain and set aside.
  • In the same pot, heat the olive oil. Add the onion, jalapeno pepper, garlic, and bay leaf and cook until the vegetables begin to soften, about 5 minutes. Add the beans and cover with water by about 1-inch. Bring to a boil, reduce the heat, cover, and simmer for 1 to 1 1/2 hours, or until the beans are tender. Remove the bay leaf and discard. Taste the beans and season with salt and pepper.
  • Put all the ingredients into a heavy-bottomed pot, stir well, and bring to a boil over medium-high heat. Reduce the heat to a simmer, cover, and cook over low heat until the rice has absorbed the water, about 15 to 20 minutes. Remove from the heat and let sit, covered, for 5 minutes. Discard the garlic and bay leaf, fluff with a fork, and serve.

Skillet Chicken and Zucchini Enchiladas with Tomatillo Sauce image

A recipe for quick-cooking chicken and zucchini enchiladas.

Categories     22-Minute Meals     Chicken     Zucchini     Salsa     Tortillas     Dinner     Coriander     Cumin     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added

Yield 4 servings

Number Of Ingredients 12

2 tablespoons neutral vegetable oil, such as grapeseed
1 cup thinly sliced onion (about 1 small onion)
1 cup (1/2" pieces) zucchini
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 (16-ounce) jars store-bought tomatillo salsa or 4 cups homemade tomatillo salsa, divided
2 cups shredded cooked chicken (from 1/2 [2 1/2-pound] rotisserie chicken)
8 (5-6") corn tortillas
3/4 cup grated Monterey Jack cheese
Sour cream, 1 sliced avocado, cilantro leaves with tender stems, and lime wedges (for serving)

Steps:

  • Heat oil in a 12" (preferably cast-iron) skillet over medium-high. Add onion and cook, stirring, until it starts to soften, about 2 minutes. Add zucchini, coriander, cumin, salt, and pepper. Cook, stirring, until onion and zucchini are softened and lightly browned, about 3 minutes. Stir 1 1/2 cups salsa, scraping up any brown bits from the pan. Fold in the chicken and cook until warmed through, about 1 minute. Transfer enchilada filling to a medium bowl; set skillet aside (do not wipe out).
  • Meanwhile, wrap tortillas in damp paper towels and microwave on high in 30-second bursts, flipping after each burst, until warmed, about 1 minute total. Alternatively, wrap in foil and heat in a 350°F oven until warmed through, 10-12 minutes.
  • Pour 1 cup salsa into reserved skillet. Working with one at a time, dip tortillas in salsa until coated on both sides; transfer to a large rimmed baking sheet. Divide enchilada filling among tortillas. Roll each tortilla around filling and place seam side down in skillet, arranging in a pinwheel formation.
  • Heat enchiladas over medium-high. Pour remaining salsa over enchiladas, making sure each is coated. Sprinkle with cheese. Cover with a lid or large baking sheet and cook until cheese is melted and enchiladas are warmed through, about 3 minutes. Top with sour cream, avocado, and cilantro. Serve with lime wedges alongside.

I found this recipe in a magazine and tried it and loved it. The tomatillos give the sauce a kind of citrous lime type of flavor. Very unique and different and very addicting.

GREEN JALAPENO AND TOMATILLO CHICKEN ENCHILADAS

Green Jalapeno and Tomatillo Chicken Enchiladas image

This recipe has a couple of short cuts to make the prep time easier than the traditional green enchiladas but it does not sacrafice taste. I preffer to use the Crema salvadorena or Crema Hondurena as the cream that will top the enchiladas but these are not always available at your local supermarket as Crema Mexicana is. They are usually found in Mexican specialty supermarkets. The stove can be completly OMITTED in this recipe and you can use the microwave also.

Provided by Chef Sarita in Aust

Categories     Whole Chicken

Time 35m

Yield 3-4 serving(s)

Number Of Ingredients 9

1 roasted store brought chicken (shredded)
28 ounces canned cooked tomatillos (preffer La Costena)
4 ounces canned chopped jalapenos
1 whole fresh jalapeno (cut in half and seeded)
10 tortillas
1/2 cup Mexican crema (or Crema salvadorena or hondurena)
1 cup crumbled queso fresco (mexican)
1/4 cup cooking oil
salt

Steps:

  • Heat the cooking oil in a small frying pan. Slide the torillas thru with a spatula (one by one) quickly for about 2-3 secs on each side. What you are trying to accomplish with this is for the tortillas to become soft and pliable. Be careful not to harden them by leaving them too long in the oil. Place on a paper towel to drain.
  • Open the can of tomatillos and drain. In a blender add the tomatillos and cleaned jalapeno. Blend for about 3 minute or until everything is thoroughly mixed. Preheat oven to 375°F.
  • In a medium pot, add the tomatillo mix and stir under medium heat for about 3 minutes. Add salt to taste. Turn stove off. Stir in ONLY 1/4 cup of the crema. Reserve 1/2 of this sauce and set aside.
  • Open and drain can of jalapenos and mix with the shredded chicken. At this point, add the reserved tomatillo mixture to chicken and combine by mixing together.
  • In a baking sheet, start making enchiladas by adding 2 table spoons of chicken mixture to middle of tortilla and roll. Do this with all the tortillas.Place all the enchiladas side by side in the baking pan.
  • Pour the remaining tomatillo mixture on top of the enchiladas. Place enchiladas in oven and heat thru for about 5-7 minute.
  • In a small ziploc bag, place the remaining CREMA. Make a medium-small opening at one corner, in order to squeeze cream thru corner.
  • Once enchiladas are heated thru, Drizzle crema on top of enchildas in wide and long zig zag motion. Add crumbled queso fresco on top of enchiladas and serve with rice and refried beans.

ROASTED TOMATILLO CHICKEN ENCHILADAS

Roasted Tomatillo Chicken Enchiladas image

These enchiladas are amazing! I made this for a themed dinner party and the crowd went wild. They tasted as if we were at a mexican restaurant...without all the grease. It takes a little more time to prepare, but so worth it! NOTE: the first 8 ingredients are for the salsa. NOTE: This is a recipe by Tyler Florence.

1 white onion, peeled and chopped
4 garlic cloves, chopped
2 jalapenos, de-stemmed

1 roasted deli chicken, pulled from the bones and shredded, we buy a pre-roasted chicken at the supermarket
black pepper, to taste
10 large flour tortillas
2 cups colby-monterey jack cheese, shredded

Steps:

  • For the salsa: Under the broiler and a watchful eye, place whole tomatillos, onion, garlic and jalapenos in a glass baking dish. Add half of the tomatillo salso, the fresh chopped cilantro, and the shredded chicken. Season to taste with black pepper.
  • Assembly: Change oven temp to 350. Smear the bottom of a large glass baking dish with salsa. Pour the rest of the salsa on a large plate. Take the tortillas and flash them over a stove top flame, or under the broiler so they get a little crispy. Place the tortilla on the plate of salsa, add chicken filling and cheese and then roll like a cigar. Place in the baking dish and repeat until the dish is full. Pour the rest of the salsa over the tortillas and top with the remaining cheese. Bake uncovered for 30 minutes. Enjoy!

Number Of Ingredients 20

INGREDIENTS
4 teaspoon(s) vegetable oil
1 medium onion , chopped medium (about 1 cup)
3 medium garlic cloves , minced or pressed through garlic press (about 1 tablespoon)
1 1/2 teaspoon(s) ground cumin
1 1/2 cup(s) low-sodium chicken broth
1 pound(s) boneless, skinless chicken breasts (2 to 3 breasts), trimmed of excess fat
1 1/2 pound(s) tomatillos (16 to 20 medium), husks and stems removed, rinsed well and dried (see note)
3 medium poblano chiles , halved lengthwise, stemmed, and seeded (see note)
1 to 2 1/2 teaspoon(s) teaspoons sugar
- salt and ground black pepper to taste
1/2 cup(s) fresh cilantro leaves, coarsely chopped
8 ounce(s) pepper jack cheese or monterey jack cheese, grated (2 cups)
12-18 - corn tortillas (6-inch)
GARNISH
- scallions , sliced thin
- thinly sliced radishes
- sour cream
- lime wedges
- fresh salsa (see note)

Steps:

  • Note: Halve large tomatillos (more than 2 inches in diameter) and place them skin-side up for broiling in step 2 to ensure even cooking and charring. You can substitute three 11-ounce cans of tomatillos, drained and rinsed, for the fresh ones in this recipe if necessary. If you can't find poblanos, substitute 4 large jalapeño chiles (with seeds and ribs removed). To increase the spiciness of the sauce, reserve some of the chiles' ribs and seeds and add them to the food processor in step 4. For fresh salsa, chopped fresh tomatoes, chopped sweet onion, chopped ancho/poblano/pasilla/jalapeno/serrano chilies (your preference or a combination of several), chopped fresh cilantro, dash of garlic powder, chili powder, ground cumin, seasoned salt, and a squeeze of fresh lime juice. Mix and adjust seasonings to your taste.
  • Adjust oven racks to middle and highest positions and heat broiler. Heat 2 teaspoons oil in medium saucepan over medium heat until shimmering; add onion and cook, stirring frequently, until golden, 6 to 8 minutes. Add 2 teaspoons garlic and cumin; cook, stirring frequently, until fragrant, about 30 seconds. Decrease heat to low and stir in broth. Add chicken, cover, and simmer until instant-read thermometer inserted into thickest part of chicken registers 160 degrees, 15 to 20 minutes, flipping chicken halfway through cooking. Transfer chicken to large bowl; place in refrigerator to cool, about 20 minutes. Remove 1/4 to 1/2 cup liquid from saucepan and set aside; discard remaining liquid.
  • Meanwhile, toss tomatillos and poblanos with remaining 2 teaspoons oil; arrange on rimmed baking sheet lined with foil, with poblanos skin-side up. Broil until vegetables blacken and start to soften, 5 to 10 minutes, rotating pan halfway through cooking. Cool 10 minutes, then remove skin from poblanos (leave tomatillo skins intact). Transfer tomatillos and chiles to food processor. Decrease oven temperature to 350 degrees. Discard foil from baking sheet and set baking sheet aside for warming tortillas.
  • Add 1 teaspoon sugar, 1 teaspoon salt, remaining teaspoon garlic, and half the reserved cooking liquid to food processor; process until sauce is somewhat chunky, about eight 1-second pulses. Taste sauce; season with salt and pepper and adjust tartness by stirring in remaining sugar, 1/2 teaspoon at a time. Add more of the reserved liquid if desired. Set sauce aside (you should have about 3 cups).
  • When chicken is cool, pull into shreds using hands or 2 forks, then chop into small bite-sized pieces. Combine chicken with cilantro and 1 1/2 cups cheese; season with salt.
  • Place tortillas on 2 baking sheets. Spray both sides of tortillas lightly with cooking spray. Bake until tortillas are soft and pliable, 2 to 4 minutes. Remove tortilla pans and increase oven temperature to 450 degrees (Alternate method: spray 6 tortillas at a time on each side with cooking spray and stack on a small microwaveable plate, cover with damp paper towel and microwave for 30-60 seconds until soft and pliable, repeat as the tortillas are used so they stay pliable enough to roll easily.)
  • Smear bottom of 13- by 9-inch baking dish with 3/4 cup tomatillo sauce. Place warm tortillas on cutting board or countertop and spread approx 1/3 cup filling down center of each tortilla. Roll each tortilla tightly and place in baking dish, seam-side down.
  • Pour remaining tomatillo sauce over top of enchiladas. Use back of spoon to spread sauce so that it coats top of each tortilla. Sprinkle with remaining 1/2 cup cheese and cover baking dish with foil.
  • Bake enchiladas on middle rack until heated through and cheese is melted, 15 to 20 minutes. Uncover, sprinkle with scallions, and serve immediately, passing radishes, sour cream and fresh salsa separately.

1 teaspoon salt
1/2 cup chopped cilantro leaves
1/2 lime, juiced
Enchiladas:
Extra-virgin olive oil
1/2 medium onion, diced
3 garlic cloves, chopped
1 1/2 teaspoon ground cumin
1/4 cup all-purpose flour
2 cups chicken stock, storebought
Chopped cilantro leaves
1 deli roasted chicken (about 3 pounds), boned, meat shredded
Salt
Freshly ground black pepper
10 large flour tortillas
1/2 pound Monterey Jack cheese, shredded
2 cups sour cream
Chopped tomatoes and cilantro leaves, for garnish
Spicy Black Beans, recipe follows
Yellow Rice, recipe follows
Guacamole, optional

Steps:

  • Directions Preheat oven to 400 degrees F. For the salsa: On a baking tray, roast tomatillos, onion, garlic and jalapenos for 12 to 15 minutes. Transfer the roasted vegetables and any juices on the bottom of the tray to a food processor. Add the cumin, salt, cilantro, and lime juice and pulse mixture until well combined but still chunky. Enchiladas: Meanwhile heat a 2 count of olive oil in a medium saucepan over medium heat. Change the temperature of the oven to 350 degrees F and begin assembling the dish. Take a large baking dish and smear the bottom with some of the reserved tomatillo salsa.

The tortillas and filling are layered (instead of rolled) to reduce prep time.

Provided by @MakeItYours

Number Of Ingredients 10

2 pounds large tomatillos, husked, rinsed, halved
1 1/4 cups low-salt chicken broth
10 garlic cloves, peeled
2 cups sliced green onions
2 cups (packed) very coarsely chopped fresh cilantro
1 large serrano chile, sliced (with seeds)
12 5- to 6-inch corn tortillas
1 purchased roasted chicken, meat torn into strips (about 4 cups)
1 pound whole-milk mozzarella cheese, cut into strips
1 cup whipping cream

Steps:

  • Preheat oven to 450°F. Mix tomatillos, chicken broth, and garlic cloves in large saucepan. Cover and bring mixture to boil. Reduce heat; simmer gently until tomatillos are soft, about 10 minutes. Transfer hot mixture to processor. Add sliced green onions, chopped cilantro, and sliced chile; blend mixture to coarse puree. Season sauce to taste with salt and pepper.
  • Overlap 6 tortillas in 13x9x2-inch oval or rectangular baking dish. Top tortillas with half of chicken strips and half of mozzarella strips. Pour 2 cups tomatillo sauce evenly over. Top with remaining tortillas, chicken strips, and mozzarella. Pour 1 1/2 cups tomatillo sauce over, then whipping cream. Sprinkle with salt and pepper. Bake until bubbling, about 25 minutes. Cool enchiladas 10 minutes. Serve with remaining tomatillo sauce.
  • Prep tip:
  • Related to both the tomato and the gooseberry, tomatillos look like small green tomatoes with papery husks. They are tart and acidic with flavors of apple and lemon, and can be eated raw or cooked. Choose ones that are firm; make sure to remove the husk and rinse the fruit before using. You'll find tomatillos at some supermarkets and at Latin markets.

CHICKEN ENCHILADAS WITH TOMATILLO SAUCE

CHICKEN ENCHILADAS WITH TOMATILLO SAUCE image

Categories     Chicken

Yield 8

Number Of Ingredients 17

For the chicken:
2 lb. chicken breasts
1/4 white onion
1 garlic head, halved crosswise
1 Tbs. sea salt
For the sauce:
3 lb. tomatillos, husked and rinsed
9 serrano chilies
3 garlic cloves, chopped
1/4 cup safflower or canola oil
1 Tbs. sea salt, or to taste
For the enchiladas:
1/3 cup safflower or canola oil
18 thin corn tortillas
1 cup crema or crème fraîche
1 white onion, thinly sliced
1 cup crumbled queso fresco

Steps:

  • Place in a saucepan with the onion, garlic and salt and add water to cover. Bring to a boil over high heat, reduce the heat to medium, cover and simmer until the chicken is cooked through, 20 to 25 minutes. Let cool and lift out the chicken. Discard the skin and bones and shred the meat with your fingers. You should have 4 cups chicken. To make the sauce, in a saucepan, combine the tomatillos and chilies with water to cover. Bring to a boil over medium-high heat and cook until tender, 10 to 15 minutes. If some of the tomatillos remain firm, the pan should still be removed from the heat. Drain and, working in batches, place the tomatillos and chilies in a blender along with the garlic. Process until a smooth sauce forms. In a fry pan over medium-high heat, warm the oil until it is smoking. Quickly add the tomatillo sauce and fry, stirring constantly, until the sauce begins to bubble. Reduce the heat to low and cook until the sauce starts to thicken, 5 minutes more. Add the 1 Tbs. salt; taste and add more salt, if needed. When the sauce is combined with the tortillas and chicken, the taste of salt will be quite diminished; it should be highly seasoned at this point. You should have 3 cups of sauce. If needed, add some of the chicken broth. Preheat an oven to 350°F. To make the enchiladas, in a fry pan, heat the oil over medium-high heat until sizzling hot. Using tongs, quickly pass each tortilla through the oil to soften, then drain on paper towels. Using your fingers, dip each tortilla briefly in the warm sauce, place on a plate, put a large spoonful of shredded chicken near one edge and roll up the tortilla. Place, seam side down, in a baking dish. Cover with the remaining sauce. Bake until thoroughly heated, about 10 minutes. Remove the enchiladas from the oven and top with the crema, onion slices and crumbled cheese. Alternately, arrange the enchiladas on individual warmed plates and garnish before serving. Serve immediately.

Number Of Ingredients 12

2 cup(s) cooked chicken, shredded or diced
1 cup(s) sour cream
1 cup(s) grated cheese
1 cup(s) tomatillo salsa
2 can(s) 4 oz diced green chiles
- **dice onion, opt
- corn or flour tortillas
CREAMY SAUCE
2 cup(s) chicken broth
1 cup(s) tomatillo salsa
1-2 cup(s) white melting cheese, grated
dash(es) lemon juice, if needed

Steps:

  • Mix together shredded or chopped chicken with sour cream, tomatillos salsa, green chiles, onion, and 1 c grated cheese. I normally use Asadero or Muenster. Be sure to use a good melting cheese.
  • CREAMY SAUCE: Heat 2 c chicken broth and one cup tomatillo salsa. Add grated cheese, if cheese becomes stringy, squeeze a little lemon juice and stir.
  • ENCHILADAS: Using a 8x8 baking dish, spray with non stick spray and spoon in just enough sauce to barely coat bottom of dish. Heat tortillas (you can use flour tortillas instead of corn if preferred), in microwave, covered with a damp paper towel for about 2 min. till soft enough to roll up.
  • Sprinkle on grated cheese, (diced onion if desired), and top with sauce. Bake 450° on an upper rack for 15-20 min. or until sauce is hot and bubbly.
