¼ cup shredded Cheddar cheese
5 drops hot pepper sauce (such as Tabasco®)
12 corn tortillas

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Combine the chicken and cheese in a bowl; stir in the hot pepper sauce. Warm the tortillas one at a time in a skillet over medium heat until flexible about 10 seconds per side.
  • Spread about 1 heaping tablespoon of the chicken over half of the warmed tortilla. Roll tightly to form the taquito starting at the filled side of the tortilla. Place seamed side down in the baking dish. Repeat with the remaining tortillas. Bake for 30 minutes in the preheated oven.

2 tablespoons diced onion
1 clove garlic, minced
2 tablespoons chopped green chiles (such as Ortega®)

1 cup shredded rotisserie chicken
2 tablespoons Neufchatel cheese
½ cup shredded Mexican cheese blend
1 pinch salt and ground black pepper to taste
6 each corn tortillas
1 serving avocado oil cooking spray

Steps:

  • Heat oil in a skillet. Add onion and cook until soft and translucent, 3 to 5 minutes. Add garlic and cook until fragrant, about 1 minute. Add green chiles and Mexican tomato sauce; stir to combine. Add chicken, Neufchatel cheese, and Mexican cheese blend. Cook and stir until cheeses have melted and mixture is completely warmed, about 3 minutes. Season with salt and pepper.
  • Heat tortillas in a skillet or directly on the grates of a gas stove until soft and pliable. Place 3 tablespoons of chicken mixture down the center of each tortilla. Fold over and roll into taquitos.
  • Preheat an air fryer to 400 degrees F (200 degrees C).

2 cups shredded rotisserie chicken
1 cup shredded mild white Cheddar cheese
1/2 teaspoon ground cumin
1/2 cup chunky prepared salsa, plus more for serving, optional
Eight 6-inch flour tortillas
1/2 cup sour cream, for serving, optional

Steps:

  • Add enough oil to a heavy bottom straight-sided pan to come 2 inches up the sides. Heat over medium heat to 350 degrees F on a deep-fry thermometer.
  • Meanwhile, mix together the chicken, Cheddar, 1/2 cup salsa and the cumin in a medium bowl. Spoon about a 1/4 cup of the mixture into the center of each tortilla. Roll the tortillas tightly around the filling and secure with a toothpick.
  • Working in batches of 2 or 3 at a time, place the taquitos in the hot oil and fry, flipping as needed to brown evenly, until crispy and golden brown, about 3 minutes. Using tongs, remove the taquitos to a paper-towel lined plate to drain. Continue with the remaining taquitos. Serve alongside salsa and sour cream for dipping, if desired.

1 cup water
1 pound skinless, boneless chicken breast halves
3 ½ cups vegetable oil (such as Crisco®), divided
1 cup finely chopped tomatoes
½ cup minced green onions
6 tablespoons chicken broth
2 teaspoons all-purpose flour
1 teaspoon minced garlic
½ teaspoon ground cumin
½ teaspoon dried oregano
½ teaspoon chili powder
½ teaspoon salt
12 (6 inch) corn tortillas
12 wooden picks
1 cup shredded lettuce, or to taste
¼ cup guacamole, or to taste

Steps:

  • Bring water to a simmer in a skillet over medium heat; add chicken. Cover skillet and cook until chicken is no longer pink in the center, 20 to 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove chicken from water and cool; shred with a fork.
  • Heat 1 tablespoon vegetable oil in a skillet over medium heat; cook and stir chicken, tomatoes, green onions, chicken broth, flour, garlic, cumin, oregano, chili powder, and salt until heated through, 3 to 5 minutes.

2 tablespoons olive oil
1 1/2 pounds boneless, skinless chicken thighs
1 tablespoon minced garlic
1 small onion, sliced
2 tablespoons ancho chile powder
1 tablespoon ground cumin
1 teaspoon kosher salt
One 8-ounce can tomato sauce
Juice of 1 lime
1 cup sour cream
1/2 cup mayonnaise
3 tablespoons milk
1 tablespoon minced fresh cilantro, plus more for garnish
1 tablespoon minced fresh dill
1/2 teaspoon ancho chile powder
1 clove garlic, grated
Dash of hot sauce
Pinch of kosher salt
Vegetable oil, for frying
1 1/2 cups grated Colby jack cheese
18 small corn tortillas

Steps:

  • For the chicken: Heat the olive oil in a medium skillet over medium-high heat. Sear the chicken until browned well, 1 to 2 minutes per side; set aside. Add the garlic and onions to the skillet and cook briefly. Add the chile powder, cumin, salt, tomato sauce, 2/3 cup water and the seared chicken back to the skillet. Bring to a boil, reduce to a simmer and cook until the sauce has reduced by about half, 12 to 15 minutes.
  • For the sour cream ranch dip: Meanwhile, whisk together the sour cream, mayonnaise, milk, cilantro, dill, chile powder, garlic, hot sauce and salt in a mixing bowl until smooth. Cover and place in the refrigerator to chill until ready to serve.
  • Once the sauce for the chicken is reduced, remove the chicken to a cutting board with a slotted spoon. Using 2 forks, shred the chicken, then return it to the skillet and toss to coat thoroughly. Stir in the lime juice and adjust the seasoning as needed. Set aside and allow to cool slightly, 10 to 12 minutes.
  • For the taquitos: Fill a large Dutch oven halfway with vegetable oil and heat to 375 degrees F.
  • Mix the cooled chicken with the Colby jack cheese. Divide the mixture among the tortillas, then roll the tortillas tightly, securing them with a toothpick.
  • Add the taquitos to the hot oil in batches of 8 to 10 and fry until golden brown, 2 to 3 minutes per batch. Remove the taquitos to a paper towel-lined plate and repeat with the remaining taquitos. Remove the toothpicks and serve alongside the sour cream ranch dip.

QUICK AND EASY CHICKEN TAQUITOS

However, the mean mommy that I am, am working on reducing the amount of processed food in our diet so I had to try homemade. After checking all the recipes for taquitos I could find, I decided to mix it up and create my own! So I took ideas from about 4 different recipes and went to town. My kids and husband have given their seal of approval. My very picky 3-year-old even had seconds! I serve them on a bed of lettuce with sour cream and do Mexican rice on the side.

Steps:

  • In a sauce pan, over medium-high heat, combine all taquito filling ingredients. Mix well and cook for 5 minutes, stirring occasionally.
  • Wrap tortillas in a damp towel and microwave for 15-20 seconds.
  • Place about 2 tablespoons of filling across the tortilla about ⅓ of the way up from the bottom of the tortilla, and roll the tortilla around the filling.
  • Heat about ¼ inch (½ cm) of oil over medium-high heat. Carefully, place 3-4 taquitos in the oil, and cook for 3 minutes on each side. (Frying them seam side down first helps them stay closed during frying!)
  • Remove from the pan and drain excess oil on the taquito on a paper towel.
  • Place cooked taquitos on a bed of lettuce and garnish with crema, cilantro, cotija, and avocado.

2 (4 ounce) boneless, skinless chicken breasts, cut into strips
1 ¼ cups mojo criollo marinade
1 pound corn tortillas
1 (14 ounce) package fire-roasted peppers and onion blend (such as Trader Joe's®), thawed
1 cup shredded Mexican cheese blend
cooking spray

Steps:

  • Place chicken strips in a sealable container and add marinade. Seal and allow to marinate for 2 hours.
  • Drain off marinade and discard. Heat a skillet over medium-high heat and cook chicken strips until browned, 6 to 7 minutes. Add thawed peppers and onions and cook for 2 to 3 minutes more.
  • Transfer chicken strips to a cutting board and chop into smaller pieces. Add chopped chicken back to the peppers and onions; stir to combine.

4 c shredded rotisserie chicken
45 corn tortillas, room temp
1/2 c canola oil, for frying
salt
SOUTHWESTERN DIP
2 c sour cream
1 c mayonnaise
1 Tbsp parsley
1 Tbsp dried onion flakes
1 Tbsp dried chives
1 Tbsp cumin
1 tsp jalapeno salt (or regular salt)
1/2 Tbsp cayenne pepper
1/2 tsp smoked paprika
1 tsp white pepper, optional

Steps:

  • 1. Mix sour cream and mayonnaise together in a bowl. Mix dry ingredients in a separate bowl. Add dry spices to sour cream and mayonnaise mixture stir to combine, cover & refrigerate for 2 hours to allow flavors to meld. Can be made day before.
  • 2. Taquito instructions: Heat oil in frying pan. Add one corn tortilla and fry for just a second, then turn and repeat. Place tortilla on a paper towel lined cookie sheet fitting about 6-8 per sheet. Place another paper towel over the tortillas and repeat with the rest until all are cooked. Sprinkle Salt over the tortillas as you go.
  • 3. Once all the tortillas have been lightly fried and are soft, take shredded chicken and place on center of tortilla in a line. Gently roll tight and place seam side down on another cookie sheet, each one snug to the other to keep shape. Repeat until all the taquitos are rolled.
  • 4. Heat an electric skillet or griddle between 300-350 degrees and oil surface generously. Place one taquito seam side down, add another right up against it and continue until you have a row across the skillet and taquitos are secure. Continue another row if you have room (I can generally cook about 25-30 at a time) Check the first taquito by rolling or using tongs to make sure seam is secure before turning. Roll taquitos left to right and let them cook 1-2 minutes, then roll again until they are secure and golden.
  • 5. Serving: This recipe makes 45 nice size taquitos. I will cut them in half as appetizers. Place Dip in the middle of a tray or large plate and surround the taquitos around the dip.

1/2 cup salsa, plus more, as dip, optional
1/3 cup shredded fat-free Cheddar cheese

8 (6-inch) yellow corn tortillas
Fat-free sour cream, as dip, optional

Steps:

  • Preheat the oven to 375 degrees F.
  • In a medium bowl, combine the chicken and salsa, and mix thoroughly. Cover and refrigerate for 15 minutes.
  • Remove chicken mixture from the refrigerator, and drain any excess liquid. Add cheese and taco seasoning, and mix to combine. This is your filling. Set aside.

  • Place one tortilla flat on a clean dry surface (keep the rest between the paper towels), and spoon about 2 heaping tablespoons filling onto the tortilla. Spread it evenly across the entire surface, and roll the tortilla up tightly, so that you have a cigar-shaped tube. Secure with toothpicks, if needed, and place seam-side down on the baking sheet. Repeat with remaining tortillas and filling.
  • Bake in the oven until crispy, 14 to 16 minutes.
  • Allow to cool for 5 minutes. Serve with sour cream and additional salsa for dipping, if using. Enjoy!

1 cup chicken broth
1 pinch paprika, or to taste
salt and ground black pepper to taste
¾ cup Buffalo wing sauce (such as Frank's® RedHot)
1 (4 ounce) package cream cheese, softened
1 (1 ounce) package ranch dressing mix
10 (6 inch) flour tortillas
½ cup shredded Cheddar-Monterey Jack cheese blend
2 tablespoons peanut oil

Steps:

  • Place chicken breasts into slow cooker; pour in chicken broth. Season with paprika, salt, and pepper. Cook on Low until chicken is tender, about 4 hours.
  • Drain broth; shred chicken with 2 forks in the slow cooker. Add Buffalo sauce, cream cheese, and ranch dressing mix; stir until well mixed. Cook on low until flavors are blended, about 1 hour.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Spoon chicken onto the tortillas and sprinkle cheese on top. Roll up and place seam-side down on a nonstick baking sheet. Brush all sides of taquitos with oil.

1 tablespoon olive oil, more for brushing tortillas
1 cup chopped onion
2 garlic cloves, chopped
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon sea salt
1/4 cup chopped cilantro
2 cups shredded cooked chicken meat
2 cups low-sodium gluten-free chicken stock
12 (6 inch) corn tortillas
1 cup shredded monterey jack cheese

Steps:

  • Preheat oven to 425°F and oil a baking sheet. Heat olive oil over medium heat in a skillet. Add onion and cook until starting to soften and turn translucent, 3 to 5 minutes. Add garlic, cumin, paprika and salt. Stir to combine and cook 2 to 3 minutes longer, until fragrant. Take from heat and stir in cilantro and chicken. Set aside.

This recipe came from the book "365 Easy Mexican Recipes." I have made these several times and they are always a big hit and never last long. This recipe does take a little time - but the end result is worth the work.

1 1/4 lbs boneless skinless chicken breasts
5 tablespoons vegetable oil
1 medium onion, finely chopped
1/2 teaspoon dried oregano
3 ounces cream cheese, at room temperature
1/2 teaspoon salt
1/8 teaspoon pepper
12 corn tortillas

Steps:

  • Place chicken in medium saucepan of lightly salted water. Bring to a boil over med-high heat.
  • Reduce to low, simmer until chicken is done - but moist.
  • Shred into strips.
  • In medium skillet, heat 1 TBSP oil over med-high heat. Add onion and oregano. Cook until onion is tender. Remove from heat.
  • Stir in cream cheese. Add chicken, salt and pepper. Mix thoroughly.
  • In medium skillet, heat 2 TBSP oil over med-high heat. Using tongs, soften tortillas 1 at a time by dipping in hot oil for about 2 seconds on each side.
  • Add oil if needed.
  • Drain between paper towels. Stack and keep covered with clean towel.
  • To fill: Spoon about 2 TBSP mixture in strip in lower 1/3 of tortilla. Roll up tightly.
  • Secure with toothpick and lay seam side down on plate.
  • Repeat with all tortillas.
  • Taquitos can be held, covered and refrigerated, up to 6 hours before frying. Cover with plastic wrap to keep from drying out.
  • In medium skillet, heat remaining oil over med-high.
  • Fry taquitos, 2 at a time, seam side down, turning until lightly browned on both sides, about 2 minutes.
  • Drain on paper towels. Cut each taquito in half.

1 chipotle chile in adobo sauce (from 7-oz can), seeded, chopped
1 tablespoon adobo sauce (from can of chipotle chiles)
3 green onions, chopped
1 1/2 cups shredded sharp Cheddar cheese (6 oz)
1 package (11 oz) Old El Paso™ flour tortillas for burritos (8 tortillas; 8 inch), heated as directed on package
Cooking spray
1 tablespoon coarse (kosher or sea) salt
1 avocado, halved, pitted
Juice of 1 lime
1 to 2 tablespoons chopped fresh cilantro
1 clove garlic, finely chopped
Coarse or table salt to taste

Steps:

  • Heat oven to 350°F. Spray large cookie sheet with cooking spray.
  • In a large skillet, cook chicken over medium-high heat about 5 minutes, stirring occasionally, until no longer pink. Remove from heat. Add chipotle chile, adobo sauce, onions and cheese; stir to combine.

1 deli rotisserie chicken (2 lb)
3/4 cup shredded Cheddar cheese (3 oz)
1/4 cup finely chopped onion
2 tablespoons finely chopped fresh cilantro
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon dried oregano leaves
1 can (4.5 oz) Old El Paso™ chopped green chiles, undrained
24 corn tortillas
1 tablespoon vegetable oil
Additional cilantro to garnish, if desired
1 ripe avocado
1/2 cup plain yogurt (from 6-oz container)
1 tablespoon fresh lime juice
Dash salt

Steps:

  • Heat oven to 400°F. Line cookie sheet with cooking parchment paper or silicone baking mat.
  • Shred chicken to make about 4 cups; discard bones and skin. In large bowl, toss chicken, cheese, onion, cilantro, cumin, chili powder, oregano and green chiles.
  • Over gas burner or in skillet, heat tortillas until warm and pliable. Wrap tortillas in kitchen towel to keep warm.
  • Working with 1 tortilla at a time, spoon about 2 tablespoons chicken mixture onto one side of tortilla. Wrap tortilla over filling and roll up. Place taquito seam side down on cookie sheet, gently pressing flat with palm of hand if needed to make sure taquito does not roll around. Repeat with remaining tortillas and chicken mixture, making sure to leave a bit of space between taquitos so they crisp nicely during baking. Brush tops of taquitos lightly with oil.
  • Bake in center of oven 25 minutes, rotating pan once about halfway through baking.
  • Meanwhile, cut avocado in half; remove pit. With spoon, scoop avocado flesh from shell into large bowl. With back of fork, mash avocado well. Fold in yogurt, lime juice and salt until thoroughly combined.
  • Serve warm taquitos with dip.
