CROCK POT CHICKEN TACO MEAT

I adopted this recipe from the Recipezaar account, and I'm so glad that I did. This has become a regular addition to my OAMC and I have created a public cookbook filled with recipe ideas using this recipe. This is a three-ingredient wonder that's easy (5 minutes of your time), delicious and versatile.

3 tablespoons taco seasoning, I use Bulk Taco Seasoning Mix
1 cup chicken broth
1 lb boneless skinless chicken breast

Steps:

  • Dissolve taco seasoning into chicken broth.
  • Place chicken breasts in crock pot and pour chicken broth over.
  • Cover and cook on low for 6-8 hours.
  • With two forks, shred the chicken meat into bite-size pieces.
  • To freeze, place shredded meat into freezer bags with the juices.
  • Press out all the air and seal.

2 tablespoons olive oil
6 large boneless, skinless chicken breasts, cut into bite-sized pieces
3 cloves garlic, minced
1 large onion, chopped
2 tablespoons chili powder
2 teaspoons paprika
1 tablespoon cumin
Salt
One 14-ounce can tomato sauce

Steps:

  • In a skillet over medium-high heat, add the olive oil and heat until hot. Add the chicken in batches and cook, browning, a couple minutes per side; remove the chicken to a plate using a slotted spoon. Add the garlic and onions to the skillet and cook briefly. Add the chili powder, paprika, cumin and salt to taste. Pour in the tomato sauce and 2 cups water to create a broth. Add the chicken back to the skillet. Bring to a boil, then simmer until the broth is reduced by half.
  • Let cool, divide among 4 freezer bags and freeze.

16 taco shells
1 bag Chicken Taco Meat (thawed if frozen), recipe follows
1 head green lettuce, thinly sliced
6 Roma tomatoes, chopped
1 1/2 cups grated Cheddar-Jack cheese
1 cup sour cream
Hot sauce, as needed
Chopped fresh cilantro, for garnish
Lime wedges, for squeezing
2 tablespoons olive oil
6 large boneless, skinless chicken breasts, cut into bite-sized pieces
3 cloves garlic, minced
1 large onion, chopped
2 tablespoons chili powder
2 teaspoons paprika
1 tablespoon cumin
Salt
One 14-ounce can tomato sauce

Steps:

  • Warm the taco shells in the oven according to the package instructions. Heat the Chicken Taco Meat in a skillet until piping hot.
  • Pile up the warm shells with: sliced lettuce, Chicken Taco Meat, chopped tomatoes, grated Cheddar-Jack and sour cream. Top with hot sauce and garnish with chopped cilantro. Serve with lime wedges for squeezing over the tacos.
  • In a skillet over medium-high heat, add the olive oil and heat until hot. Add the chicken in batches and cook, browning, a couple minutes per side; remove the chicken to a plate using a slotted spoon. Add the garlic and onions to the skillet and cook briefly. I threw this together for dinner one afternoon and the entire family was pleased with the results. It uses ingredients that you normally have in your kitchen to make a slow cooked shredded taco meat that pleases!

5 -6 chicken breasts
1 cup salsa (we used medium)
2 tablespoons tomato paste
1 (1 1/2 ounce) packet taco seasoning
flour tortilla (for serving)
sour cream (for serving)
corn (for serving)
guacamole (for serving)
shredded cheese (for serving)
shredded lettuce (for serving)
canned jalapeno slices (for serving)
refried beans (for serving)

Steps:

  • Place chicken in the crock pot.
  • Mix salsa, tomato paste and taco seasoning; pour over chicken.
  • Cover and cook on Low 6-8 hours or High 3-4 hours.
  • Shred in crock pot and mix with sauce. Add more tomato paste if it seems too watery.
  • Serve on flour tortillas with any suggested toppings or any topping of your choice!

1 teaspoon active dry yeast
4 cups all-purpose flour
1/3 cup olive oil
1 teaspoon kosher salt
1/2 cup canola oil, for frying
4 corn tortillas, sliced into thin strips
Olive oil, for oiling the baking sheet
1/2 cup good-quality salsa, plus more for serving
1 bag Chicken Taco Meat (partially thawed if frozen), recipe follows
1 cup grated sharp Cheddar
1 cup grated Monterey Jack cheese
1 head green leaf lettuce, sliced or thinly shredded
2 ripe tomatoes, diced
1/2 cup fresh cilantro leaves
1/4 cup sour cream
3 tablespoons hot sauce, or more as needed
2 tablespoons olive oil
6 large boneless, skinless chicken breasts, cut into bite-sized pieces
3 cloves garlic, minced
1 large onion, chopped
2 tablespoons chili powder
2 teaspoons paprika
1 tablespoon cumin

One 14-ounce can tomato sauce

Steps:

  • For the pizza dough: Mix the yeast with 1 1/2 cups warm water in a measuring cup or small bowl and set aside for 8 to 10 minutes. Mix together the flour, olive oil and salt in a bowl using an electric mixer. With the speed on low, drizzle in the yeast/water mixture and mix until totally combined. Cover the bowl with a towel and set in a warm, draft-free place. Allow to rise for 1 to 2 hours.
  • For the tortilla strips: In a small skillet, heat the canola oil over medium heat until a test tortilla strip dropped in the oil sizzles immediately. Drop in the remaining tortilla strips in batches, frying them quickly and removing them from the oil with a fork when crisp, 30 to 45 seconds per batch. Transfer to a paper towel-lined plate. Set aside.
  • For the taco pizza: Position an oven rack in the bottom position in the oven. Preheat the oven to 500 degrees F. Oil a baking sheet with some olive oil.
  • Remove half of the pizza dough from the bowl. (Place the remaining half in a large resealable plastic bag and refrigerate, saving it for another use.) With your hands, spread the dough out on the oiled baking sheet, making sure it's relatively thin. Spread a thin layer of the salsa all over the crust, then spread a layer of the Chicken Taco Meat on top of the salsa. Sprinkle the grated Cheddar and Monterey Jack cheese over the top.
  • Place the baking sheet on the bottom rack in the oven and bake for about 25 minutes, watching to make sure the crust doesn't burn. Remove the pizza from the oven and sprinkle on the shredded lettuce, diced tomatoes and cilantro leaves.
  • Mix together the sour cream and hot sauce in a small bowl, adding enough hot sauce to make the mixture pourable. With a spoon (or you can put it in a pastry bag), drizzle the mixture over the finished pizza. Sprinkle with the tortilla strips. Cut into squares and serve immediately with more salsa.

1 (10 1/2 ounce) can 98% fat-free cream of chicken soup
1/2 cup skim milk (optional)
1/2 cup lean ground meat, seasoned with taco seasoning (venison or ground beef)
1/2 cup russet potato, diced (I use leftovers)
1 teaspoon garlic salt
1 teaspoon garlic pepper seasoning

Steps:

  • 1. If not using leftover potato, cube a russet potato and boil in water until tender. Drain and add in garlic pepper and garlic salt.
  • 2. Warm cream of chicken soup in microwave or in saucepan on stove.
  • 3. Add in potatoes and leftover taco meat, and milk, if using. For thicker soup, do not use milk, or use less.
  • 4. Allow to simmer 2-3 minutes.
  • 5. Serve immediately.

1 (14 1/2 ounce) can tomatoes, petite diced
1 onion, large
1 red pepper, large
6 garlic cloves, minced
2 large jalapeno peppers, diced small

1 tablespoon cayenne pepper
1 tablespoon chili powder
flour tortilla
shredded cheddar cheese
avocado

Steps:

  • Drain as much juice as possible out of the can of tomatoes.
  • In crock pot put tomatoes, onion, red pepper, garlic and jalapenos.
  • Add cumin, cayenne and chili powder.
  • Stir it all together.
  • Put in chicken breasts and stir around.
  • Cover and cook on high 4-5 hours.
  • Remove chicken breasts to a plate and shred the meat.
  • Return all meat to the crock pot and stir through.
  • To make tacos I put some meat in the center of a flour tortilla, then top with cheese and a couple slices of avacado.
  • Enjoy!
