1 tbsp sunflower oil
2 tsp mild curry paste
2 large boneless, skinless chicken breasts, cut into bite-size pieces
2 medium-sized sweet potatoes, peeled and cut into bite-size pieces
4 tbsp red split lentils
300ml chicken stock
400ml can coconut milk
175g frozen peas

Steps:

  • Heat the oil in a deep frying pan or wok, stir in the curry paste and fry for 1 minute. Add the chicken, sweet potatoes and lentils and stir to coat in the paste, then pour in the stock and coconut milk. Bring to the boil, then simmer for 15 minutes.
  • Tip in the peas, bring back to the boil and simmer for a further 4-5 minutes. Season to taste before serving.

You can apply this recipe to any type of curry you like. If you like your food really spicy, try adding dried chili flakes or whole fresh chilies. Curry is a simple, hearty dish; get as creative as you want! As always, practice makes perfect.

6 cups (1.4 liters) full-fat coconut milk, with 4 tablespoons of the cream separated out
2 tablespoons vegetable or canola oil
4 to 6 tablespoons (60 to 90 grams) green curry paste
1 (700 grams) sweet potato, peeled and cut into 1-inch (2 1/2-centimeter) dice
1 small yellow onion, thinly sliced
1/2 cup (20 grams) roughly chopped, whole with stems, Thai sweet basil
8 magrut lime leaves, sliced very thin
1 1/2 pounds (700 grams) chicken thighs, patted dry and sliced into bite-size pieces
2 teaspoons fish sauce
1 teaspoon sugar
1/8 teaspoon tamarind paste
1 red bell pepper, middle part sliced, top and bottom diced for garnish
Cooked jasmine rice, for serving

Steps:

  • In a medium saucepan, heat 4 tablespoons of the thick coconut cream on high for about 1 minute, then add the oil. When the cream starts to sizzle, stir the curry paste into the cream like building a roux. Stir-fry the paste for about 1 minute, until the paste starts to thicken, dry out and become fragrant. If the curry starts to sputter, add a small amount of coconut milk and/or oil to keep the paste moving. Cook the paste until it has the consistency of peanut butter.
  • Stir the sweet potato cubes, onion, basil, half of the lime leaves and remaining coconut milk into the curry paste. Increase the heat to high until you reach a full rolling boil, then reduce to a simmer. Let the curry simmer for 10 to 15 minutes or until the potatoes are fork-tender. Also check that the curry is thick enough to coat the back of a wooden spoon.
  • Add the chicken. Let this simmer for 5 to 7 more minutes, or until the chicken is cooked through. Stir in the fish sauce, sugar and tamarind. Add the bell pepper strips and turn off the heat. Serve hot over cooked rice. Garnish with the Thai basil, remaining lime leaves and diced bell pepper.

3 tablespoons chopped shallots
3 garlic cloves, chopped
2 tablespoons minced lemongrass* (from bottom 4 inches of about 3 stalks, tough outer leaves discarded)
2 tablespoons minced peeled fresh ginger
2 tablespoons Thai yellow curry paste*
2 tablespoons curry powder
1 teaspoon hot chili paste (such as sambal oelek)*
2 13.5- to 14-ounce cans unsweetened coconut milk,* divided
5 cups low-salt chicken broth
2 1/2 tablespoons fish sauce (such as nam pla or nuoc nam)*
2 teaspoons sugar
3 cups snow peas, trimmed
2 cups 1/2-inch cubes peeled red-skinned sweet potato (yam; from about 1 large)
1 pound dried rice vermicelli noodles or rice stick noodles*
3/4 pound skinless boneless chicken thighs, thinly sliced
1/2 cup thinly sliced red onion
1/4 cup thinly sliced green onions
1/4 cup chopped fresh cilantro
3 red Thai bird chiles or 2 red jalapeño chiles, thinly sliced with seeds

Steps:

  • Heat oil in heavy large saucepan over medium heat. Add next 4 ingredients; stir until fragrant, about 1 minute. Reduce heat to medium-low. Stir in curry paste, curry powder, and chili paste. Add 1/2 cup coconut milk (scooped from thick liquid at top of can). Stir until thick and fragrant, about 2 minutes. Add remaining coconut milk, broth, fish sauce, and sugar; bring broth to boil. Keep warm. DO AHEAD: Can be made 1 day ahead. Refrigerate until cold, then cover and keep chilled.
  • Cook snow peas in large pot of boiling salted water until bright green, about 20 seconds. Using strainer, remove peas from pot; rinse under cold water to cool. Place peas in medium bowl. Bring water in same pot back to boil. Add sweet potato and cook until tender, about 7 minutes. Using strainer, remove sweet potato from pot and rinse under cold water to cool. Place in small bowl. Bring water in same pot back to boil and cook noodles until just tender but still firm to bite, about 6 minutes. Drain; rinse under cold water to cool. Transfer to microwave-safe bowl. DO AHEAD: Can be made 1 hour ahead. Let stand at room temperature.
  • Bring broth to simmer. Add chicken; simmer until chicken is cooked through, about 10 minutes. Add sweet potato; stir to heat through, about 1 minute. Heat noodles in microwave in 30-second intervals to rewarm. Cut noodles with scissors if too long. Divide noodles among bowls. Divide snow peas and hot soup among bowls. Scatter red onion, green onions, cilantro, and chiles over soup. Garnish with lime wedges and serve.

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Once the pot is hot, add 1 tablespoon oil. Season chicken with 1/2 teaspoon salt and pepper. Add chicken to the pot and cook until no longer pink in the center, 5 to 7 minutes. Remove chicken and cover to keep warm. 1 onion, chopped
450g boneless, skinless chicken thigh, cut into bite-sized pieces
165g jar korma paste
2 garlic cloves, crushed
500g sweet potato, cut into small chunks

Steps:

  • Heat the oil in a pan, add the onion and cook over a low heat for about 5 mins until softened. Increase the heat slightly, add the chicken pieces and brown.

1/2 onion, chopped
1 small orange, juice of

500g sweet potato, peeled and cut into bite-size pieces
1 tbsp olive oil
4 skinless chicken thigh fillets, each cut into large chunks
1 large red onion, cut into wedges
2 tbsp rogan josh curry paste
2 large tomatoes, roughly chopped
125g spinach

Steps:

  • Cook the sweet potatoes in boiling, salted water for 5-7 mins until just tender. Drain well, then set aside. Meanwhile, heat the oil in a large frying pan, then add the chicken and onion. Cook for 5-6 mins until the chicken is browned and cooked through. Stir in the curry paste, cook for 1 min, add the tomatoes, then cook for another min.

220g cherry tomatoes
300g cooked rice or roti, to serve

Stir in the chicken, then add the sweet potatoes and lentils and keep stirring to coat everything in the paste. Add 300ml water and the coconut milk. Taste's recipe of the day. I made this the other night-it was great. The two teaspoons oil, ginger, garlic and salt and pepper were my additions to the original recipe ( I just can't make a curry without ginger and garlic) I made this in a 4 cup ovenproof dish rather than the one cup ones.

700 g sweet potatoes, peeled, coarsely chopped (kumara)
2 teaspoons oil
1 brown onion, finely chopped
2 garlic cloves, crushed
2 teaspoons grated fresh ginger
1 large carrot, peeled, finely chopped
600 g boneless skinless chicken breasts, cut into 2-3cm pieces
1 1/2 tablespoons korma curry paste
2 teaspoons all-purpose flour
400 g diced tomatoes
1/3 cup water
1 cup frozen peas, thawed
2 tablespoons chopped fresh coriander
2 teaspoons fresh lime juice
2 teaspoons brown sugar
salt and pepper

Steps:

  • Preheat oven to 180°C Cook sweet potato in a saucepan of boiling water for 12 minutes or until tender. Drain and return to pan. Mash until smooth.
  • Heat oil in a frying pan on medium-high heat. Sauté onion, garlic, ginger and carrot, stirring occasionally, for 3-4 minutes or until soft.
  • Add chicken and stir for 3-4 minutes or until browned.
  • Add curry paste and stir for 1 minute.
  • Add flour and stir for 1 minute. Add tomato and water and stir. Bring to boil.
  • Cook for 2-3 minutes or until mixture thickens slightly. Remove from heat. Add peas, coriander, lime juice and sugar, season to taste with salt and pepper.
  • Divide curry among four 250ml (1-cup) capacity ovenproof dishes. Place on a baking tray. Top with sweet potato. Bake for 15 minutes or until golden. Serve with steamed green vegetables (broccoli or beans would be good).

1 teaspoon sunflower oil
2 teaspoons mild curry paste
2 boneless skinless chicken breasts, cut into bitesize pieces
2 sweet potatoes, cut into bite size pieces
4 tablespoons split red lentils
1 1/4 cups chicken broth
1 3/4 cups coconut milk
6 ounces frozen peas

Steps:

  • Hea the oil in a deep frying pan or wok, stir in the curry paste and fry for 1 minute.
  • Add the chicken, sweet potatoes and lentils and stir to coat in the paste, then pour in the broth and coconut milk.
  • Bring to the boil then simmer for 15 minutes.
  • Tip in the peas, bring back to the boil and simmer for 4-5 minutes.
  • Season before serving with rice noodles or basmati rice.

Purchased Curry Paste Thai curry paste consists of a base of chiles, garlic, salt, lemongrass, galangal, shallots, and shrimp paste, though other ingredients are often added. It's available in yellow, green, and red varieties. Traditionally, curry paste is made by pounding the ingredients together in a mortar. Used in long-cooked Asian curries and stews, it adds a quick hit of flavor to stir-fries and soups.

€3 Garlic Cloves
€2 Tablespoons Minced Lemongrass (from Bottom 4"es of About 3 Stalks

€2 Tablespoons Thai Yellow Curry Paste
€2 Tablespoons Curry Powder
€1 Teaspoon Hot Chili Paste (such As Sambal Oelek)
€2 13.5- To 14-ounce Cans Unsweetened Coconut Milk
€5 Cups Low-salt Chicken Broth
€2 1/2 Tablespoons Fish Sauce (such As Nam Pla or Nuoc Nam)
€2 Teaspoons Sugar
€3 Cups Snow Peas
€2 Cups 1/2" Cubes Peeled Red-skinned Sweet Potato (yam; From About 1 Large)

  • •Heat oil in heavy large saucepan over medium heat. Add next 4 ingredients; stir until fragrant, about 1 minute. Reduce heat to medium-low. Stir in curry paste, curry powder, and chili paste. Add 1/2 cup coconut milk (scooped from thick liquid at top of can). Stir until thick and fragrant, about 2 minutes. Add remaining coconut milk, broth, fish sauce, and sugar; bring broth to boil. Keep warm.DO AHEAD Can be made 1 day ahead.Refrigerate until cold,then cover and keep chilled. •Cook snow peas in large pot of boiling salted water until bright green, about 20 seconds.Using strainer, remove peas from pot; rinse under cold water to cool.Place peas in medium bowl.Bring water in same pot back to boil.Add sweet potato and cook until tender, about 7 minutes. Using strainer, remove sweet potato from pot and rinse under cold water to cool.Place in small bowl. Just letting everyone know this is a recipe I adapted that I found in a magazine about 10 years ago but I still can't find anything as good even in restaurants

Steps:

  • Remove the tough outer leaves from the lemongrass and discard. Bash the stalks with a rolling pin to flatten slightly. Then very finely chop.
  • Melt the butter in a large frying pan or wok. (wok is better) Add the shallots, garlic and chicken and stir-fry over a high heat for 3-4 minutes until the chicken is browned.
  • Add chopped lemongrass and the remaining ingredients (except the mangetout and coriander) and bring to the boil.
  • Reduce the heat to simmer for 15 minutes. Sprinkle over the mangetout and simmer for a further 5 minutes or until the sweet potatoes are tender.
  • Season to taste and serve with h steamed jasmine rice and sprinkle with fresh coriander leaves

2 tablespoons all-purpose flour
1 tablespoon curry powder
1/2 teaspoon salt
1 lb boneless skinless chicken breast, cut into 3/4 to 1-inch pieces
1 tablespoon vegetable oil
1 1/2 cups apple juice
2 cups cubed peeled sweet potatoes
1 fresh mild chile, chopped
2 tablespoons apple jelly

Steps:

  • In a heavy-duty plastic zip-lock bag, add the flour, curry powder, and salt; shake to mix.
  • Add in the chicken; seal bag, shake until the chicken is evenly coated.
  • Heat oil in a large nonstick skillet over medium-high heat.
  • Add in the chicken; stir-fry for 2-3 minutes or until browned.
  • Stir any remaining flour mixture into the apple juice.
  • Add apple juice, sweet potatoes, and chili to the chicken; stir.
  • Cover and cook 10-15 minutes, stirring occasionally, until the chicken is no longer pink and potatoes are tender.
  • Stir in jelly until melted.
  • Serve over hot cooked couscous.

1 teaspoon ground coriander
1 teaspoon ground turmeric
1/2 teaspoon salt

1 1/2 teaspoons olive oil
1 1/2 lbs chicken breasts, cubed
1 1/2 cups vertically sliced onions
1 1/2 teaspoons minced peeled fresh ginger
2 garlic cloves, minced
1 (14 ounce) can reduced-sodium fat-free chicken broth
1 (14 1/2 ounce) can diced tomatoes, undrained
2 cups cubed peeled sweet potatoes, 1/2 inch cubes
3/4 cup canned chick-peas, rinsed and drained
1/2 cup frozen green pea
1 tablespoon fresh lemon juice

Steps:

  • 1. Combine curry powder, coriander, turmeric, salt, black pepper, red pepper, and bay leaf in a small bowl.
