BAKED SWEET AND SOUR CHICKEN
My oven baked version of Sweet & Sour chicken which is not like most recipes you will find on the internet. My sauce uses less sugar so it's not overly sweet, the sauce ingredients has a few extra things in it so it really does taste more like restaurant Sweet & Sour sauce, and the chicken is only baked for 20 minutes so it does not dry out (but still lovely and crispy!). The ingredients list for this recipe is longer than most on my site - but it is well worth it!

Steps:
- Preheat oven to 200C/390F.
- Place chicken in a bowl, sprinkle with salt then add the egg. Mix to coat all chicken with egg, then drain out excess egg. (Note 2)
- Working a handful at a time, shake excess egg mixture off chicken then place chicken in ziplock bag. When all the chicken is in the bag, seal (trap as much air in it as you can to make a "balloon") and shake well to coat chicken in cornflour. Discard excess cornflour.
- Heat oil in a large skillet on high. Add chicken (in 2 batches if your skillet is not big enough) and cook briefly for 2 minutes, turning, just to make the outside light golden and a bit crispy. The chicken should be raw inside.
- Transfer to baking tray, spray with oil and bake for 15 to 20 minutes until it becomes a little more golden brown and is crispy.

CHICKEN- SWEET AND SPUNKY
This is a wonderfully simple and quick recipe to make for a dinner for 2 or for company. With each bite you get to roll the tastes around and enjoy the spunk that comes from the ingredients. To be sure they are not the normal for a chicken recipe but make a great sauce which flavors and smells so good.

Steps:
- in a small saucepan heat water to simmer.
- add in honey and stir til combined, turn off heat.
- add in cinnamon and soy sauce stirring til incorporated.
- in a 9x12 casserole dish put frozen spinach, baby carrots in first.
- place chicken on top of vegetables.
- pour sauce over top of chicken and veggies.
- put onion slices and butter pats on top.
- cook in 350 oven for 45 minutes or until juices run clear from chicken.
- check chicken at 20 min mark and baste with juices.
- Note- I used large breasts, depending on size of chicken piecss, cooking times will vary.

SWEET AND TANGY PULLED CHICKEN SANDWICHES
I created this just by messing around in the kitchen and craving a sweet meal for supper. My friends and family love it! Can be served with French fries, veggies, or mac and cheese.

Steps:
- Place chicken in a slow cooker and pour cola-flavored beverage around it. Turn slow cooker to High and cook for 3 hours.
- Meanwhile, mix barbecue sauce, vinaigrette, brown sugar, honey, teriyaki marinade, and cardamom in a mixing bowl until well blended. Place in the refrigerator.
- After 3 hours, remove chicken from the slow cooker and shred. Set aside 1/2 cup of the cooking juices and discard the rest.
- Return chicken and 1/2 cup juice to the slow cooker; stir to combine. Remove barbecue sauce from the refrigerator and pour and blend it into the chicken. Cook for 1 more hour.
- Spread mayonnaise on hamburger buns and fill with pulled chicken and sauce.

Steps:
- Whisk egg yolks, soy sauce, cornstarch, salt, and pepper for marinade together in a bowl and pour into a resealable plastic bag. Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for at least 20 minutes.
- Beat egg whites for coating in a bowl until foamy. Add water, then cornstarch, then flour, mixing completely after each addition.
- Combine hot water, sugar, rice wine, vinegar, cornstarch, soy sauce, bouillon granules, and salt for glaze in a bowl.
- Remove chicken from the refrigerator. Dip each piece in coating.
- Heat vegetable oil in a wok over medium-high heat until hot. Add chicken and cook in small batches until crispy, about 5 minutes per batch. Remove chicken to a plate and drain oil from the wok.
- Add bell pepper and garlic to the wok and stir-fry until tender, about 3 minutes. Remove from the wok onto a separate dish.
- Add pineapple chunks to the wok. Stir the reserved glaze and pour over pineapple. Simmer until sauce thickens, 2 to 3 minutes.

- Combine flour, garlic powder, salt, and black pepper in a shallow dish.
- Roll and coat chicken cubes in flour mixture.

- Mix together brown sugar, honey, soy sauce, ginger, garlic and hot sauce in a small bowl.
