Roasted Beets & Carrots image

I try to add in as much veggies in every meal as I can. My uncle loves beets & carrots. So this is speed. Plus my brothers dont mind eatting most veggies that are cooked. So works out great for me...

4 beets, trimmed
6 carrots, peeled & cut diagonally into 3/4 inch thick slices
2 tsp olive oil
1/2 c catalina dressing
2 tsp ground ginger

Steps:

  • 1. Heat the oven to 425F.
  • 2. Then wrap the beets individually in foil. Place in a shallow pan. Then toss the carrots with oil in large shallow baking dish. bake the beets for about 1 hour & 15 mins. Add in the carrots to the oven after 45 mins.
  • 3. Then unwrap the beets,remove the skins & stems. Cut each beet into 8 wedges. Then add in the carrots with the combine dressing & ginger. Toss to coat everything.
  • 4. Bake for another 15 mins or until vegetables are tender.
  • 5. Special Tip: You can make the beets can be roasted & peeled up to 3 days ahead.
