CRESCENT CHICKEN SQUARES

Through many years living on a farm, I've collected quite a few recipes using chicken. Family and friends tell me this is one of my best dishes. -Ruth Dyck, Forest, Ontario

3 ounces cream cheese, softened
3 tablespoons butter, melted, divided
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups cubed cooked chicken
2 tablespoons milk
1 tablespoon chopped onion
1 tablespoon diced pimientos
1 tube (8 ounces) refrigerated crescent rolls
1/4 cup seasoned bread crumbs

Steps:

  • In a bowl, beat cream cheese, 2 tablespoons butter, salt and pepper until smooth. Stir in chicken, milk, onion and pimientos. Unroll crescent roll dough and separate into four rectangles; place on an ungreased baking sheet an press perforations together. , Spoon 1/2 cup chicken mixture into the center of each rectangle. Bring edges up to the center and pinch to seal. Brush with remaining butter; sprinkle with crumbs. , Bake at 350° for 20-25 minutes or until golden.

1 (3 ounce) package cream cheese, softened
3 tablespoons butter, melted
2 cups cooked cubed boneless chicken or 2 (5 ounce) cans boneless chicken
1/4 teaspoon salt and pepper, to taste
2 tablespoons milk
1 tablespoon chopped onion
1/4 cup chopped olive (optional)
1 (8 ounce) can refrigerated crescent dinner rolls
3/4 cup crushed crouton

Steps:

  • Blend cream cheese with 2 Tbsp butter until smooth.
  • Add next five ingredients and mix well.
  • Spoon 1/2 C meat mixture onto 2"triangles" of dough.
  • (don't separate, so you actually have a "square") Pull 4 corners to the top, center of mixture and twist slightly and seal edges by pinching.
  • Brush tops with remaining butter and sprinkle with croutons Bake on ungreased cookie sheet for 20-25 minutes in a 350* oven until golden brown.

3 tablespoons butter, melted
2 cups cooked chicken, cubed
salt and pepper, to taste
2 tablespoons milk
1 tablespoon onion, chopped
8 ounces Pillsbury Refrigerated Crescent Dinner Rolls
3/4 cup seasoned bread crumbs

Steps:

  • Preheat oven to 350 degrees.
  • Blend butter with cream cheese Add milk and onion. Stir in chicken. Add salt and pepper.
  • Separate dinner rolls into four rectangles, pressing perforations to seal. Spoon 1/2 cup mixture into center of each rectangle. Fold over two opposite sides to meet in the middle forming a square. Press the other two edges together to seal.
  • Brush top with melted butter and dip into bread crumbs. Place on non stick cookie sheet crumb side up.
  • Bake at 350 degrees for 20-25 minutes until browned.

This is my own creation of a recipe from a local restaurant that closed. This was my favorite along with their Robert Redford Pie. That's a recreation waiting to happen too! You may choose to used canned chicken to have even less prep or make triangles,instead of squares, for appetizers. Great with a salad to complete a light meal.

Steps:

  • Blend cream cheese with butter.

  • Sprinkle top liberally with cooked broccoli.
  • Pull 4 corners to the top center of the mixture and twist slightly to seal edges by pinching.
  • Brush tops with remaining butter.
  • Bake on ungreased cookie sheet for 20-25 minutes in 350 degrees oven until golden brown.

  • Shred chicken and mix with cream cheese and onion.
  • Spoon the chicken mixture into an opened crescent roll and pull edges up and over in order to create a square or pocket shape.

1 (8 ounce) package cream cheese, softened
2 tablespoons mayonnaise
1 garlic clove, pressed
1 teaspoon dill
1 (10 ounce) can white chicken meat, drained and flaked
1/2 small cucumber, sliced and quartered
2 plum tomatoes, seeded and diced
1/2 cup shredded cheddar cheese (2 ounces)
6 slices bacon, cooked, drained, and crumbled

Steps:

  • Preheat oven to 375 degrees.
  • Unroll one package of crescent rolls acoss one end of a 10x15 inch pan with longest sides of dough across width of pan.
  • Repeat with remaining package of dough, filling pan.
  • Seal perferations and press dough up sides of the pan to form a crust.
  • Bake 12-15 minutes or until golden brown.
  • remove to cooling rack and cool completely.
  • Place cream cheese, mayonaise, garlic, and dill in a bowl and mix until smooth.
  • Spread cream cheese mixture evenly over cooled crust.
  • Sprinkle chicken evenly over filling.
  • Sprinkle cucumber, tomatoes,cheese and bacon over chicken.
  • Cut into 12 squares.

1 (8 ounce) package cream cheese, softened
2 tablespoons mayonnaise
1 small garlic clove, pressed
1 teaspoon dill seasoning mix (optional)
1 (10 ounce) can white chicken meat, drained and flaked*
1/2 small cucumber
2 plum tomatoes
1/2 cup shredded cheddar cheese
6 slices bacon, crisp-cooked and crumbled

Steps:

  • Preheat oven to 375
  • Unroll one package of crescent rolls across one end of the bar pan with longest sides of dough across the width of the pan. Repeat with other package. Use the baker's roller to seal the perforations and press up the sides to form a crust. Bake 12-15 minutes, till golden, then remove to stackable cooling rack and cool completely.
  • Place cream cheese, mayo, garlic and seasoning mix in a bowl, mix until smooth. Spread this mixture over the cooled crust using the large spreader. Sprinkle chicken over filling. Score cucumber lengthwise. Remove seeds with corer. Thinly slice using slice & grate. Cut slices into quarters. Slice tomatoes in half lengthwise and remove seeds. Dice tomatoes. Grate cheese. Sprinkle cucumber, tomatoes, cheese and bacon over filling. Slice with pizza cutter and serve.

3 oz cream cheese, room temperature
1 Tbsp butter, softened
2 c cubed cooked chicken
1 Tbsp chopped fresh chives or onion
1/4 tsp salt
1/8 tsp pepper
2 Tbsp milk
1/4 c chopped pecans
1 can(s) (8 oz) pillsbury® refrigerated crescent dinner rolls
1 Tbsp butter, melted
3/4 c seasoned croutons, crushed

Steps:

  • 1. Heat oven to 350°F. In medium bowl, mix cream cheese and 1 tablespoon softened butter; beat until smooth. Add chicken, chives, salt, pepper, milk and pecans; mix well.
  • 2. Separate or cut dough into 4 rectangles. If using crescent dough, firmly press perforations to seal. Spoon 1/2 cup chicken mixture onto center of each rectangle. Pull 4 corners of dough to center of chicken mixture; twist firmly. Pinch edges to seal.

2 cups broccoli florets, chopped
1 1/2 cups cooked chicken, cubed
1/2 cup mayonnaise
1 teaspoon Dijon mustard
1 (10 ounce) cream of chicken soup
1 teaspoon pimentos, diced
1 1/2 cups cheddar cheese, shredded

Steps:

  • Unroll dough and spread out into an ungreased 9 x 13 inch baking pan, pressing over bottom and 1/2 inch up sides to form a crust.
  • Bake crust at 375 degree for 10 minutes and remove from oven.
  • Trim away stem portions of florets and discard. Cut broccoli into small pieces.
  • Distribute broccoli, cubed chicken and pimento evenly over crust.
  • In separate bowl, mix mayonnaise, mustard, soup and 1/2 cup of cheddar cheese. Spoon.

3/4 cup yellow cornmeal
3/4 cup grated Gruyère cheese
3 tablespoons gluten free flour blend such as Old Fashioned Baking Mix from The Pure Pantry (www.thepurepantry.com)
2 tablespoons butter
Pomegranite Chipotle Chicken Topping:
1 tablespoon olive oil
1 1/2 cups yellow onions, finely diced
1/2 lb. boneless, skinless chicken breasts cut into bitesize pieces
1/4 t. sea salt
1/4 t. pepper
6 slices cooked bacon, finely chopped (can use turkey bacon or omit if desired)
2/3 cup Pomegranite Chipotle BBQ sauce (recipe below)
3 T. chopped pecans
1 T. chopped cilantro

Steps:

  • Butter 9 x 12 -inch-diameter glass baking dish. Bring broth to boil in heavy medium saucepan. Gradually whisk in corn meal. Reduce heat to medium and whisk constantly until mixture thickens, about 6 minutes. Remove from heat. Add cheese, baking mix and butter; stir until cheese melt. Season with salt and pepper. Transfer polenta to prepared dish; using buttered knife, spread evenly. Cool until polenta is firm, at least 1 hour. Line baking sheet with foil. Cut polenta into squares. Transfer squares, bottom side up, to prepared sheet, fitting closely together. (Can be made 1 day ahead by cutting, covering and chilling.) Preheat oven to 350 F. Bake polenta squares until golden, about 15 minutes. Cool on sheet. Next, preheat oven to 400 degrees F. Spray a 13×9 inch pan with cooking spray. Add olive oil and onions to skillet and cook over medium for 3 minutes. Add chicken and cook with onions for 4 minutes or until chicken is just-opaque. Remove from heat and stir in chopped bacon. Sprinkle 1 cup of the shredded cheese evenly over baked polenta squares; spoon chicken mixture evenly over cheese. Drizzle pomegranate chipotle sauce over cheese, then top with remaining 1 cup of cheese. Sprinkle pecans over top. Bake for 6-8 minutes or until cheese is melted and sauce is bubbly; sprinkle top with cilantro. Pomegranite Chipotle BBQ Sauce (submitted as separate entry as well) ½ cup organic tomato paste 4 T. organic balsamic vinegar 2 T. organic blackstrap molasses ½ cup organic brown sugar 2 T. organic gluten free Tamari ½ c. dark agave nectar ½ c. pomegranate juice ½ t. chipotle chile powder 1 T. cornstarch Mix all ingredients, except cornstarch, in a medium size bowl with whisk. Whisk in cornstarch. Transfer to medium saucepan. Cook over medium heat while whisking for 2-3 minutes. Turn off heat and let cool.

2 cups soft bread crumbs
2 cups chicken broth
4 eggs, lightly beaten
1 celery rib, chopped
1 jar (4 ounces) diced pimientos, drained
2 tablespoons finely chopped onion
1/2 teaspoon salt
1/4 teaspoon poultry seasoning
3 cups cubed cooked chicken
1 cup cooked rice
1 cup sliced fresh mushrooms
1/3 cup butter, cubed
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups 2% milk

Steps:

  • In a large bowl, combine bread crumbs, broth, eggs, celery, pimientos, onion, salt and poultry seasoning. Stir in the chicken and rice., Transfer to a greased 8-in. square baking dish. Bake, uncovered, at 350° for 55-65 minutes or until bubbly and golden brown. , Meanwhile, in a large saucepan, saute mushrooms in butter. Stir in the flour, salt and pepper until blended. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Cut chicken casserole into squares. Serve with mushroom sauce.

1/2 cup onion, chopped
1 (10 ounce) can cream of mushroom soup
1/2 teaspoon salt
1/2 teaspoon onion powder or 1/2 teaspoon garlic powder
2 cups milk
3 eggs
pepper, to taste
1 (10 ounce) can cream of chicken soup
2 cups chicken, diced and cooked
1/2 cup mayonnaise
1 cup shredded cheese, your choice

Steps:

  • Put half of bread cubes in an 8 x 12" greased pan.
  • Combine chicken, onion, mushroom soup, mayo and seasonings.
  • Spoon over bread cubes.
  • Top with remaining cubes of bread.
  • Beat eggs slightly and blend with milk.
  • Pour over bread.
  • At this point, cover and refrigerate overnight if you choose to do so. If not, continue with below instructions without refrigerating (I have made both ways and notice no difference.).
  • Before baking, top with undiluted cream of chicken soup.
  • Bake at 325 for 1 hour.
  • Sprinkle cheese over top and bake 5 minutes more.
  • Let stand 10 minutes before serving.

2 c cooked cubed/shredded chicken
1/4 tsp each salt & pepper

1 can(s) cornbread stuffing, crushed
1 can(s) cream of mushroom soup
1/2 can(s) milk

Steps:

  • 1. In a bowl blend softened cream cheese, melted butter & milk. Mix in chicken & seasonings. Seperate crescent rolls into 4 rectangles. Firmly press performations to seal. Top w/ gravy or soup mixture, and more crushed croutons/stuffing and bake an addition 10-15 min.
  • 2. *I made a chicken gravy for this. I used about 1 C. chicken broth (heated on stovetop). Mix 1/2 C. milk with 1/4 C. flour - whisk or use a "shaker" to blend. Pour slowly into broth to make gravy thicken. OR you can mix a can of cream of mushroom soup w/ about a half can of milk for a quick gravy.

1 roasting chicken, cooked and boned
1 (2 ounce) jar pimientos, drained and diced
1 cup cheddar cheese, shreddded
3 eggs
1 cup sour cream
4 ounces mushrooms, sliced
1/3 cup onion, thinly sliced
1/3 cup mayonnaise
1 teaspoon garlic powder
2 cups Bisquick
1/2 cup water

Steps:

  • mix bisquick with water.
  • spread dough.
  • in greased 9x13 pan so edges are 1/2 up sides.
  • combine rest of ingredients.
  • pour into shell.
  • bake in 400 degree oven until edges are golden and knife comes out clean about 25 minutes
  • dont let it get dry.

We altered this (see notes in directions) to our preferences and my lack of reading the ingredients needed...LOL. This was so amazingly good, I am thinking it would also be great for turkey leftovers...and stuffing if there is any leftover! Whole recipe listed, with our halved recipe in ( ) beside it. Really fantastic recipe!...

MAIN LAYER
4 c chicken, cut up (2 cups)
12 oz pkg herb stuffing, we used pepperidge farm bag (6 oz)
butter for stuffing
chicken broth for stuffing
6 Tbsp butter, unsalted (3 t)
1/2 c flour (1/4 c)
1/4 tsp salt (1/8 t), i just put in a couple grinds of sea salt, didn't measure
6 slightly beaten eggs (3)
4 c chicken broth (2 c)
SAUCE
1 can(s) cream of mushroom or celery soup, we used mushroom (1/2 can)
1/4 c milk (1/8 c)
1 c sour cream (1/2 c)
1/4 c chopped pimientos, optional (2 t), i omitted

Steps:

  • 1. Prepare stuffing to pkg directions. Put into bottom of 9x13 sprayed with PAM. Cut up chicken and spread evenly over stuffing. In a saucepan, melt butter, add flour and salt. Add broth, cook thick. Stir small amount into eggs, then add back into broth. Stir, but do not cook (take off heat to add back into the broth). Pour over chicken. Put baking dish in pan of hot water and bake at 325 degrees 1 hour. Knife in center comes out clean when done. Make sauce, mix all ingredients on low, spoon over casserole when you cut into squares.
  • 2. If using a whole chicken boil, remove bones and skin. We used rotisserie leftovers, it was fantastic that way and easier.
  • 3. 11-19-20 NOTE: I did full recipe of gravy. Halving the rest of the recipe it fit into an 8" square casserole, then into the 9x13 with the water bath. I used about an extra cup of chicken. For the herb stuffing, I only did butter and broth, since I forgot to read the whole recipe and didn't realize I didn't have onion or celery at the house...
  • 4. 12-6-20 note: I did full recipe, put into Longaberger 9x13, in oven on a 15x21 cookie sheet full of water. It took an entire rotiserie chicken, and I used the whole bag of stuffing. Sauce is just mushroom soup and 3/4 cup milk this time. Again, no onions in stuffing, or celery.

3 oz cream cheese, softened
1/4 tsp salt
2 Tbsp margarine, melted
1/8 tsp pepper
2 c cooked cubed chicken
2 Tbsp milk
1 Tbsp chopped onion
8 oz crescent rolls
1 Tbsp chopped pimiento (i omitted)
seasoned crountons, crushed

Steps:

  • 1. Blend cream cheese and margarine until smooth. Add other ingredients and mix. Separate rolls ito 4 rectangles, seal perforations. Spoon 1/2 c chicken into center of each rectangle, pull corners of dough to center. Seal. Brush tops with melted margarine and sprinkle on crushed seasoned croutons. Bake at 350 degrees on ungreased cookie sheet 20-25 minutes or until golden.
