ONE PAN CHEESY SMOKED SAUSAGE PASTA SKILLET
One Pan Cheesy Smoked Sausage Pasta recipe has smoked sausage and pasta in a spicy, creamy sauce that's all cooked in one pan for a quick weeknight meal.

Steps:
- Add olive oil to a 5 quart saute pan over medium high heat. Add onions and sausage and cook until lightly browned. Add garlic and cook for about 30 seconds.
- Add chicken broth, tomatoes (undrained), milk, pasta, and seasonings. Bring the mixture to a boil, cover, and reduce heat to low. Simmer for about 15 minutes, or until pasta is tender and most of the liquid is absorbed.
- Turn off the heat and stir in 1/2 cup of cheese. Sprinkle remaining cheese on top and cover for about five minutes to allow cheese to melt. Top with sliced scallions and serve. (You could also broil for a couple of minutes to melt the cheese).

- Sprinkle chicken with cayenne and salt. In a Dutch oven, heat oil over medium-high heat. Brown chicken in batches. Remove from pan., Add sausage, onion, green pepper and celery to same pan; cook and stir over medium heat 3 minutes. Add garlic; cook 1 minute longer. Stir in tomatoes. Return chicken to pan; bring to a boil. Reduce heat; simmer, covered, until chicken juices run clear, about 1 hour., Cook spaghetti according to package directions. Remove chicken from pan. When cool enough to handle, remove meat from bones; discard skin and bones. Shred meat with 2 forks; return to pan. Bring to boil. Reduce heat; simmer, uncovered, until slightly thickened, 8-10 minutes. Skim fat. Drain spaghetti; serve with chicken mixture.

- Cook pasta according to package directions. Meanwhile, in a large nonstick skillet, saute the sausage, mushrooms, garlic and basil in oil until mushrooms are tender. Drain pasta; add to the sausage mixture. Add the tomatoes, salt and pepper; toss gently. Heat through. If desired, top with additional fresh basil and grated Parmesan cheese.

CHICKEN SPAGHETTI WITH SMOKED SAUSAGE
I have two words for this meal, and that is easy and delicious!!

Steps:
- 1. In a cast iron skillet combine chicken, pre-cooked smoked sausage(roughly chopped), cheeses, onion, and spaghetti sauce. Stir to combine. Heat to a simmer on low heat, then heat through for about 10 minutes more.
- 2. In the meantime prepare spaghetti according to package directions. I always cook my spaghetti in salted water, and a little vegetable oil. Drain spaghetti and set aside.
- 3. Serve chicken-sausage mixture over hot spaghetti and enjoy. You can sprinkle with more parmesan cheese on top if you like.
- 4. ***As a special note*** When I cook my sausage, I boil it in the skillet in water, until the internal temperature comes to at least 160 to 165 degrees.****
