A very popular middle eastern dish. Traditionally cooked rotisserie style, this method allows you to recreate the flavor and texture on a much more economical and smaller scale.

2 lbs chicken breasts
1 lemon, Juiced (keep the rind)
1 tablespoon olive oil
3 garlic cloves
3 tablespoons yoghurt
1 teaspoon tomato paste
1 teaspoon ground cumin
1 teaspoon ground coriander
2 teaspoons ground cardamom
1/2 teaspoon pepper
1/2-1 teaspoon salt

Steps:

  • Cut the chicken breasts, into long, slim strips, then into lengths that are about an inch long.
  • Put them into a bowl, and allow them to marinate in the lemon juice and rind, olive oil, crushed and diced garlic, yoghurt, tomato paste, salt, pepper and spices.
  • Allow 24 hours for the flavors to develop. [ i know it seems like a long wait, but it'll be worth it].
  • The following day, remove and drain the chicken pieces from the marinade, and saute them for 10 minutes.
  • Serve hot as a mezze or for sandwiches along with thinly sliced onions, deseeded tomato, pickles, and fresh baked pita.

As part of a mezze, or as the main ingredient in a sandwich, or pita wrap, this is a flavorful, homey recipe. This recipe is translated from Cuisine du Liban by Pomme Larmoyer.

2 lbs chicken breasts
4 tablespoons lemon juice
1 tablespoon olive oil
3 garlic cloves
3 tablespoons yoghurt
1 teaspoon tomato paste
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon pepper
1/2-1 teaspoon salt

Steps:

We love chicken shwarma, and have been trying to duplicate it ever since our area's Middle Eastern restaurant closed. The closest we have been able to come is by using garam masala, a spice mixture you can find in some specialty grocery stores.

3 tablespoons clarified butter, divided
1 pound skinless, boneless chicken breast halves - cut into 1/2 inch pieces
3 tablespoons garam masala

Steps:

  • Melt clarified butter in a large skillet over medium high heat. Sprinkle one side of chicken pieces with garam masala and place seasoned side down in hot butter. Sprinkle top of chicken pieces with more garam masala and saute for 5 minutes.
  • Turn chicken pieces, adding more butter as needed, and saute for 5 to 10 minutes more, or until chicken is cooked through and no longer pink inside.
