- Place chicken in a large pot of lightly salted water, and bring to a boil; simmer until tender and cooked through, about 25 minutes. Drain, set aside. When cool enough to handle, chop coarsely, and place into a large bowl.
- In a separate bowl, stir together mayonnaise, curry powder, lemon juice, and soy sauce.
- Stir into the chopped chicken 2 1/4 cups of the toasted almonds. Stir in grapes, celery, water chestnuts, and pineapple. Gently fold in all but 1/2 cup of the dressing. Cover, and refrigerate salad and reserved dressing for several hours (or overnight).
- Before serving, adjust dressing to taste, and garnish with paprika and remaining 1/4 cup almonds.

I use miracle whip for the recipe but it originally called for mayonnaise, which i don't care for so either can be used according to your preference. - HAWAIIAN CHICKEN SALAD:.
- Preheat broiler to High with rack 6" from the element.
- Saute bacon in a skillet over medium heat until crisp, 8-10 minutes.
- Drain on paper towel-lined plate.
- Slice top 1/3 off the baguettes and remove the bread inside. Cut the baguette into 4 equal portions and the remaining half into 2. Brush each piece with 1 T oil, season with salt and pepper, and broil on baking sheet until toasted, 2-3 minutes.
- Mince cilantro, mint, ginger and lime juice in food processor. Add mayonnaise, yogurt; pulse to combine. Season with salt, pepper and crushed red pepper flakes, if using.
- Mix chicken, reserved bacon, and nuts with pesto(just made)in a bowl and set aside.
- MAKE VINAIGRETTE:.
- Whisk lime juice, honey, oil, salt and pepper together. After assembling salads, sprinkle with shallots.

- Drain juice from crushed pineapple into a medium glass bowl; set aside the pineapple for later. Add cream cheese, salt and pepper to the juice and mix with a whisk or fork until thoroughly blended. Add chicken, rice, green onions, Macadamia nuts, jicama and the reserved crushed pineapple to the cream cheese mixture; stir gently until combined. Refrigerate mixture for 2 hours or until well chilled. To serve, line 4 salad plates with lettuce leaves if desired. Place a pineapple round on top of each plate. Mound chicken salad mixture onto center of pineapple round.
SMOKY HAWAIIAN CHICKEN SALAD
I was obsessed with this chicken salad when it was served at Long John Silvers in the late '80s. It was eventually removed from the menu and massive cravings led me to develop my own formula and reproduce it at home. The smokehouse almonds are the secret ingredient. I have tried it with both mayonnaise and Miracle Whip but the Miracle Whip is much more authentic. Sweet, smoky and super tasty!
