4 boneless skinless chicken breasts (7-8 ounces each)
4 ounces light jarlsberg cheese (four 1-ounce slices)
1 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 large eggs, beaten
2 cups panko breadcrumbs
1 (15 ounce) can raspberries, drained
1/2 cup rice wine vinegar
2 tablespoons unsalted butter
1 1/2 teaspoons cornstarch

Steps:

  • FOR THE STUFFED CHICKEN ~ Preheat oven to 350 degrees F & lightly coat a baking sheet with non-stick cooking spray.
  • Between 2 pieces of plastic wrap, flatten chicken breasts fairly thin.
  • Roll up a slice of cheese & then roll the chicken breast around the cheese roll, securing with toothpicks. Repeat with the other 3 breasts.
  • Season the flour with salt & pepper, then dredge the chicken rolls in the flour ~ Shake off any excess.
  • Dip chicken rolls in the beaten egg & then roll them in the bread crumbs, before placing them on the prepared baking sheet.
  • Bake 30-35 minutes or until bolden brown & the chicken is done.
  • Remove toothpicks & place stuffed chicken rolls on a serving plate.
  • FOR THE RASPBERRY SAUCE ~ In a medium saucepan, combine all sauce ingredients, then bring to a boil & cook 2 minutes, stirring often.
  • Remove from heat &, if desired, strain sauce through a sieve to remove the seeds.
  • Pour sauce over chicken breasts & serve!

6 skinless, boneless chicken breast halves
1 pound Brie cheese
1 cup chopped green onion
2 cloves garlic, crushed
2 cups finely chopped toasted pecans
1 egg, beaten
¼ cup water
2 cups fresh raspberries
¼ cup white sugar
¼ cup water
salt and pepper to taste
½ cup olive oil

Steps:

  • Pound the chicken to flatten. Soften Brie in microwave; in a medium bowl combine the Brie, green onion and garlic and mix together. Spread about 1/4 cup of this mixture onto each chicken breast half. Roll up and secure with toothpicks.
  • Combine egg beat and water in a small bowl and whisk together to make egg wash. Place toasted pecans in a shallow dish or bowl. Dip each chicken roll in egg wash, then roll through the pecans, coating on all sides.
  • Heat oil in a large skillet over medium high heat and cook chicken rolls for 15 minutes, turning to brown on each side. When browned, cook for an additional 15 minutes, until cooked through and chicken juices run clear.
  • To Make Raspberry Sauce: Meanwhile, place raspberries, sugar and water in a blender. Blend for 3 to 4 minutes, then pour through a sieve to remove seeds.
  • Remove cooked chicken rolls from skillet to paper towels to drain. When drained, transfer to a serving plate and drizzle with raspberry sauce. Drizzle some sauce onto the plate in a circle, and serve.

1 cup plus 4-1/2 teaspoons raspberry vinaigrette, divided
2 tablespoons minced fresh rosemary or 2 teaspoons dried rosemary, crushed, divided
6 bone-in chicken thighs
6 chicken drumsticks
1/2 cup seedless raspberry jam
1-1/2 teaspoons lime juice
1/2 teaspoon soy sauce
1/8 teaspoon garlic powder

Steps:

  • In a large resealable plastic bag, combine 1 cup vinaigrette and half of the rosemary. Add chicken. Seal bag and turn to coat; refrigerate for 1 hour. , In a small bowl, combine the jam, lime juice, soy sauce, garlic powder, and remaining vinaigrette and rosemary; set aside., Drain and discard marinade. So easy. I got this recipe years ago from a friend. Her mother had given her the recipe. The cream made it a little different from the other recipes I read (and more fattening too)! This can be doubled to feed four and so on which is a good thing since my kids like this a lot.

2 boneless skinless chicken breasts
1/4 cup onion, chopped
3 tablespoons raspberry jam or 3 tablespoons jelly
3 tablespoons vinegar, red wine or balsamic
1/4 cup heavy cream
1 tablespoon butter
1 tablespoon olive oil
salt
pepper
garlic (optional)
fresh raspberry, to garnish (optional)

Steps:

  • Season the chicken with salt and pepper to taste. In a skillet, heat the oil and melt the butter and saute the chicken over medium heat.
  • After about 5 minutes, add the onion and garlic, if desired. Cook until the chicken is cooked through and the onions are tender.
  • Remove chicken from the skillet and set aside. Add the jam and vinegar to the pan and stir.
  • Boil for 1 minute and stir in cream and heat until boiling.
  • Return chicken to the skillet and heat for a few minutes; turning the chicken in the sauce.

3 tablespoons reduced-sodium soy sauce

2 teaspoons pepper, divided
1 tablespoon onion powder
4 teaspoons kosher salt, divided
1 tablespoon garlic powder
8 oz baby spinach
1 cup sun-dried tomato
2 cups canola oil
2 cups panko breadcrumbs
4 large eggs, beaten
1 cup all purpose flour
3 tablespoons unsalted butter
5 cloves garlic, minced
2 medium shallots, diced
2 cups baby spinach
1 ½ tablespoons sun-dried tomato, chopped
¾ cup tomato, diced
2 cups heavy cream
1 tablespoon all purpose flour
1 ½ teaspoons kosher salt
1 teaspoon pepper
¾ cup grated parmesan cheese
1 tablespoon lemon juice
4 cups spaghetti
4 cups green salad, lightly dressed

Steps:

  • Make the chicken rolls: Butterfly the chicken breasts and season on both sides with 1 teaspoon of pepper, the onion powder, 2 teaspoons of salt, and the garlic powder.
  • Place a chicken breast between 2 sheets of plastic wrap and pound with a meat mallet, rolling pin, or heavy pan until about ¼ inch (6 mm) thick.
  • Remove the top sheet of plastic wrap and place a handful of baby spinach over the center of the chicken breast, then cover with ¼ cup (50 G) of sun-dried tomatoes. Starting from the bottom, tightly roll the chicken, using the plastic wrap to help. Wrap the chicken roll tightly in plastic wrap to secure. Repeat with the remaining ingredients.
  • Chill the chicken rolls in the fridge for 30-60 minutes.
  • Make the béchamel sauce: Melt the butter in a medium saucepan over medium heat. Add the garlic and shallot and cook until softened and the onions are beginning to caramelize and become very fragrant, about 5 minutes. Stir in the spinach, sun-dried tomatoes, and diced tomatoes and cook until the spinach is wilted, about 3 minutes. Add the heavy cream and flour and stir to incorporate. Add the salt and pepper and bring to a boil. Stir in the Parmesan cheese and cook until the sauce thickens slightly, 5-7 minutes. Remove the pot from the heat and stir in the lemon juice.
  • Heat 2-3 (5 - 7 cm) inches of oil in a large heavy-bottomed pan over medium heat until it reaches 325°F (170°C).
  • Add the panko to a shallow dish and stir in 1 teaspoon of salt and ½ teaspoon pepper. Add the eggs to a separate shallow dish. Add the flour to a third shallow dish and stir in the remaining teaspoon of salt and ½ teaspoon pepper.
  • Remove the chicken rolls from the fridge and coat in the flour, then the eggs, then the bread crumbs.
  • Fry the breaded chicken rolls in the hot oil for about 5 minutes per side, or until the outside is an even golden brown and the internal temperature reaches 165°F (75°C). You may need to work in batches, so as not to overcrowd the pan. If a good color is achieved and the chicken's center is still not to temperature, place the chicken on a wire rack set over a baking sheet and finish cooking in the oven at 325°F (170°C) until the proper temperature is reached. Once the proper internal temperature is reached, place the rolls on a baking sheet lined with paper towels and a wire rack to cool slightly before slicing and serving.
  • Slice the chicken rolls and serve over a bed of spaghetti with the béchamel sauce and a green salad alongside.

4 boneless, skinless chicken breast cutlets
Kosher salt and freshly ground black pepper

1/4 cup olive oil
4 cloves garlic, chopped
1 large shallot, chopped
1 cup chicken stock
1/2 cup white wine
6 ounces cremini mushrooms, sliced
1 cup fresh raspberries
1 tablespoon unsalted butter
1 tablespoon balsamic vinegar
1 teaspoon grated lemon zest

Steps:

  • Season the chicken with some salt and pepper. Heat a large skillet over medium heat and add the olive oil. Once the oil is hot but not burning, add the chicken and sear for 3 minutes on each side. Remove from the skillet and set aside.
  • Using the same skillet, add the garlic and shallot and cook over medium heat for 1 minute. Add the chicken stock and wine and cook until slightly reduced, about 10 minutes. Add the sliced mushrooms and lower the heat to a simmer. Return the chicken to the skillet, cover and cook until the chicken is cooked through, an additional 10 minutes. Add the raspberries, butter, balsamic vinegar and lemon zest, and continue cooking, uncovered, for 1 minute.
