5 cups cubed cooked chicken
3 cups cooked rice
1-1/2 cups diced green pepper
1-1/2 cups sliced celery
1 can (20 ounces) pineapple tidbits, drained
3/4 cup mayonnaise
4 teaspoons orange juice
2 teaspoons vinegar
1 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon garlic salt
1 can (15 ounces) mandarin oranges, drained
1 cup slivered almonds, toasted

Steps:

  • In a large bowl, combine the first five ingredients. In a small bowl, combine mayonnaise, orange juice, vinegar, salt, ginger and garlic salt. Pour over salad and toss. Refrigerate. Just before serving, fold in the oranges and almonds.

1 cup white wine or chicken broth
1 tablespoon lemon juice
1 garlic clove, minced
3/4 teaspoon ground ginger, divided
1-1/4 pounds boneless skinless chicken breasts
3 cups chicken broth
1-1/2 cups uncooked long grain rice
1 package (10 ounces) frozen peas, thawed
1/2 cup sliced green onions
1/2 cup diced celery
2 tablespoons diced sweet red pepper
2 tablespoons diced green pepper
DRESSING:
1/4 cup cider vinegar
2 tablespoons Dijon mustard
1 tablespoon reduced-sodium soy sauce
1 tablespoon olive oil
1 tablespoon sesame oil
2 teaspoons honey
1 garlic clove, minced
Dash ground ginger

Steps:

  • In a large nonstick skillet, combine the wine, lemon juice, garlic and 1/4 teaspoon ginger. Bring to a boil; reduce heat. Add chicken; poach, uncovered, over medium-low heat for 15 minutes or until a thermometer reads 170°. Remove chicken from cooking liquid; cool., In a large saucepan, bring broth and remaining ginger to a boil. Stir in rice. Reduce heat; cover and simmer for 15-20 minutes or until liquid is absorbed and rice is tender. Fluff with a fork., Transfer to a large bowl; cool. Add the peas, onions, celery and peppers. Cut chicken into bite-size pieces; add to rice mixture and toss., Whisk the dressing ingredients; drizzle over salad and toss to coat.

1 (6 ounce) package long grain and wild rice blend
1 cup mayonnaise
1/2 cup sour cream
1/2 cup finely chopped celery
12 ounces cooked chicken, drained and flaked
1/2 cup salted cashews, coarsely chopped
lettuce leaf
alfalfa sprout

Steps:

  • Prepare rice according to package directions, chill.
  • In a small mixing bowl, combine mayonnaise, sour cream, and chicken.
  • Stir in cooked rice.
  • Refrigerate until ready to serve.
  • Stir in cashews and serve on lettuce leaf.
  • Garnish with alfalfa sprouts.

4 skinless, boneless chicken breast halves
4 eggs
1 red apple, diced
3 green onions, chopped
½ cup sweet pickle relish
½ cup mayonnaise
3 stalks celery, thinly sliced
1 (8 ounce) can pineapple chunks, juice reserved
¼ cup chopped fresh cilantro
1 cup chopped pecans
fajita seasoning to taste

Steps:

  • Bring a large pot of water to a boil. Add chicken and cook until thoroughly cooked and no longer pink inside, approximately 20 minutes. Drain, cool and chop.
  • Meanwhile, place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and slice.
  • In a large bowl, mix together the chicken, sliced eggs, apple, onions, relish, mayonnaise, celery, pineapple (with just a little juice for flavor), cilantro, pecans and fajita seasoning to taste.

A very pretty salad with a slightly Morrocan feel to it. Special enough for a dinner party or just whenever! Easily adjusted for more or less servings.

1 1/2 cups brown rice
1 teaspoon olive oil
1 clove garlic, crushed
2 skinless chicken breasts
1 red onion, thinly sliced
2 stalks celery, thinly sliced (optional)
1/2 cup dried apricot, sliced
1/2 cup currants
1/3 cup pistachio nut, toasted
1/4 cup of fresh mint, chopped
2 oranges, peeled and cut into 8 segments each
1/2 cup fat-free French dressing (or whatever type you prefer)
1 baby romaine lettuce, washed

Steps:

  • Cook rice until just tender and drain well.
  • Heat oil in a large non-stick pan or wok.
  • Cook garlic and chicken until chicken is just browned and cooked.
  • Remove chicken from pan and let rest 5 minutes, then slice the breasts thinly.
  • Combine rice, chicken, onion, celery, apricots, currants, nuts, mint and oranges in a large bowl.
  • Just before serving, stir through dressing.
  • Arrange lettuce leaves in the base and sides of 4 bowls and spoon salad over the top.
  • Garnish with a sprig of mint.
