Chicken breasts are seasoned and fried, then served with rice and a creamy gravy. A family original, my family members request this all the time!!

2 cups long-grain white rice
4 cups water
4 boneless, skinless chicken breasts
3 tablespoons butter
1 cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon ground paprika
¼ teaspoon dried thyme
¾ cup cold water
¼ teaspoon salt

Steps:

  • Place rice in a saucepan with 4 cups of water. Bring to a boil, then reduce heat to low, cover and simmer for 20 minutes or until rice is tender. Prepare chicken while the rice is cooking.
  • In a medium bowl, stir together the flour, 1/2 teaspoon salt, pepper, paprika, and thyme. Use a finger to grind the thyme to a powder in the palm of your hand before adding. Coat the chicken breasts in the flour mixture. Reserve 2 tablespoons of the flour mixture for the gravy.
  • Melt butter in a large skillet over medium heat. Place chicken in the skillet, and cook for about 10 minutes on each side, until the chicken is golden brown, and the juices run clear. Remove chicken from the pan, leaving the drippings and crusty bits in.
  • Whisk together 3/4 cup water, 2 tablespoons of the flour mixture, and 1/4 teaspoon salt. Whisk into the skillet, scraping the browned bits from the bottom of the pan. Cook over medium heat, stirring constantly, until thick and bubbly. Add additional water 1 tablespoon at a time if the gravy is too thick. Serve chicken alongside rice topped with gravy.

4 boneless chicken breasts
1/2 teaspoon ms. dash seasoning
salt and pepper
1 (10 ounce) cream of mushroom soup
1/2 cup sour cream
1 (4 ounce) French fried onion rings
2 1/2 cups cooked rice

Steps:

  • Place chicken breasts in a baking dish. Sprinkle with Ms. Dash, salt and pepper.
  • Mix cream of mushroom soup and sour cream. Pour over chicken breasts.
  • Bake covered in a 350 degree oven for 45 minutes. Remove and place on onion rings. Bake uncovered for 15 minutes.
  • Serve chicken breasts and gravy over cooked rice. Makes a pretty dish.

2 tablespoons extra-virgin olive oil (EVOO)
1-1/2 cups long-grain white rice
3-1/2 cups chicken broth
1 cup frozen peas, thawed
1 cup shredded sharp white cheddar cheese
4 skinless, boneless chicken breasts
Salt and pepper
2 tablespoons butter
1 tablespoon flour
1/2 cup unfiltered apple cider
1 pound green beans, trimmed
2 scallions, chopped

Steps:

  • 1.In a large saucepan, heat 1 tablespoon EVOO, 1 turn of the pan, over medium heat. Add the rice and toast until light brown, about 4 minutes. Stir in 2 1/2 cups broth and bring to a boil, then lower the heat to medium-low, cover and cook for 15 minutes. During the last 3 minutes of cooking, stir in the peas and cheese. 2.While the rice cooks, in a large skillet, heat the remaining 1 tablespoon EVOO, 1 turn of the pan, over medium-high heat. Season the chicken with salt and pepper, add to the skillet and cook until the juices run clear, 5 to 6 minutes on each side. Transfer to a plate and cover with foil to keep warm. 3.Melt 1 tablespoon butter in the skillet, then whisk in the flour and cook for 1 minute. Whisk in the apple cider and 1 cup chicken broth and cook until slightly thickened; season with salt and pepper. Remove from the heat. 4.While the chicken cooks, in a large saucepan, bring 1 inch of salted water to a boil. Add the green beans, cover and cook until al dente, about 3 minutes. Drain the beans and return to the saucepan. Toss with the remaining 1 tablespoon butter and the scallions; season with salt and pepper. 5.Pour the apple gravy over the chicken and serve the rice and green beans alongside.

Crock Pot Chicken and Peppers With Gravy over Rice image

I kinda just fudged this one together one night by combining a few recipes that I had made before. My fiance loved it but I thought it might be lacking on salt or that little extra something (but my taste buds have been odd since I quit smoking so it might be perfectly okay). Any suggestions would be great. This can be cooked on High in the crock pot, but I would suggest doing it on Low so it gives the flavors time to cook into the chicken!

4 boneless skinless chicken breasts
garlic powder, to taste
season salt, to taste
1 green pepper, cut into strips
1 red pepper, cut into strips
1 yellow pepper, cut into strips
1 (1 1/4 ounce) envelope dry onion soup mix
1 (10 1/2 ounce) can 98% fat-free condensed mushroom soup
1/4 cup light ranch salad dressing
1 -2 cup diet cola
2 tablespoons flour
1/4 cup water
3 cups whole grain rice

Steps:

  • Place chicken in slow cooker. Sprinkle with garlic powder and season salt, to taste.
  • Cut tops off of peppers and scoop out insides. Discard. Cut peppers into lengthwise. Put in crock pot on top of chicken.
  • Mix the rest of the ingredients in a separate bowl; pour over chicken and peppers.
  • Cover and cook on low for 6 hours or high 3 hours.
  • Mix flour and water in a small bowl. Turn crock pot to High and add flour mixture. Cover and cook for another half hour. This will help the "gravy" thicken up.
  • While "gravy" is cooking, prepare rice according to package directions (I use Success Boil in the Bag and it comes out perfect every time).
  • Serve chicken, peppers and gravy over rice.

I'm not sure where this recipe originated, but my Mom has been making it for years, and it's our "standby" when we can't decide what to make for dinner. We usually use leftover rice, but recently my sister has decided no-yolk egg noodles work well with it too! This recipe can be made low-fat by using reduced fat soups and sour creams, but they won't thicken up like the regular varieties.

2 (10 1/2 ounce) cans cream of mushroom soup
2 (10 1/2 ounce) cans cream of chicken soup
1 (16 ounce) container of regular sour cream
water, to thin mixture
1 lb chicken breast tenders
1 dash salt
1 dash pepper
2 cups instant rice, prepared as directed

Steps:

  • Combine soups, sour cream, and water in large sauce pan. Add water till it's as thin or thick as you'd like. Heat till bubbly.
  • Place the chicken breast tenders in a separate,shallow baking dish. Pour enough sauce to almost cover the chicken. Make sure you flip them so sauce is on both sides of the chicken. Apply salt and pepper to your liking.
  • Bake chicken at 350 degrees for 20 mins, or until no longer pink.
  • Prepare instant rice as directed.
  • After chicken and rice are finished cooking, it's time to plate.
  • Place chicken in the center of the plate and surround with rice. Pour as little or as much sauce as you'd like!

1/2 SOUP CAN OF WATER TO RINSE OUT CANS

Steps:

  • PLACE BREASTS IN 13 X 9 OR LARGER DISH. IN LARGE BOWL MIX ALL SOUPS AND WATER TOGETHER ADD RICE MIX WLL POUR OVER BREAST. COVER WITH FOIL AND BAKE 350 FOR 90 MINUTES. BEST TO CHECK AND MAKE SURE ENOUGH MOISTURE IN DISH WHILE COOKING.
