This classic piccata sauce is also a traditional accompaniment to veal medallions.

⅓ cup all-purpose flour
¼ teaspoon fresh ground black pepper
¼ teaspoon paprika
1 pound skinless, boneless chicken breast halves, pounded thin and cut into 2-inch pieces
2 tablespoons olive oil
1 clove garlic, minced
¼ cup butter, divided
1 cup dry white wine
⅓ cup chicken broth
¼ cup fresh lemon juice
2 tablespoons capers
2 tablespoons chopped fresh parsley
1 (8 ounce) package angel hair pasta, cooked and drained

Steps:

  • Whisk together flour, black pepper, and paprika in a shallow dish. Dredge the chicken pieces in the flour mixture, coating evenly; set aside. Heat olive oil in a large skillet over medium-high heat; stir and cook the garlic until light brown, about 1 minute. Remove the garlic from the skillet and set aside.
  • Place 2 tablespoons of butter into the skillet with the olive oil. Cook the chicken pieces in the oil and butter over medium-high heat until brown, about 5 minutes per side. Remove the chicken from the pan and set aside.
  • Pour the wine into the hot skillet and bring to a boil over high heat, scraping the browned pieces from the bottom and sides of the pan. Boil the wine until it is reduced by half, about 5 minutes. Whisk in the chicken broth, reserved garlic, lemon juice and capers. Cook for 5 minutes over medium-high heat. Stir in the remaining 2 tablespoons butter and parsley. Return the chicken pieces to the skillet and continue cooking over medium heat until the sauce thickens, about 15 minutes.
  • Meanwhile, fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, 4 to 5 minutes. Drain well.
  • Remove the chicken pieces to a serving dish and drizzle with a few tablespoons of the sauce and capers. Place the cooked angel hair pasta into the skillet with the remaining piccata sauce and toss to coat.

1/3 cup all-purpose flour, divided
2 cups reduced-sodium chicken broth
1/2 teaspoon salt, divided
1/4 teaspoon fresh ground pepper
1 lb chicken cutlet, trimmed
3 teaspoons extra virgin olive oil, divided
1 (10 ounce) package mushrooms, sliced
5 large garlic cloves, minced
1/2 cup white wine
2 tablespoons lemon juice
1/4 cup fresh parsley, chopped
2 tablespoons capers, rinsed

Steps:

  • Bring a large pot of water to a boil. Add pasta and cook until just tender, 4 to 6 minutes or according to package directions. Drain and rinse.
  • Meanwhile, whisk 5 teaspoons flour and broth in a small bowl until smooth. Place the remaining flour in a shallow dish. Season chicken with 1/4 teaspoon salt and pepper and dredge both sides in the flour.

Usually I make Chicken Piccata as whole chicken breast filets as a main dish and serve with sides and salad for a full meal. For this dish, I was looking for a single plate meal that was delicious and flavorful. So I mixed it up a little bit to create this dish. Use one pot to cook the pasta and a large sauté pan to cook the rest. Time is in the prep but I do it as I am cooking so start to finish is less than 30 minutes. Take the three minutes to gather ingredients before you start. I list the items below in their desired prep but I actually do the prep while cooking. Have a medium bowl sitting nearby to hold cooked food while working on others.

1 tablespoon olive oil
1 medium onion, sliced
1/2 red pepper, sliced
5 garlic cloves, minced
8 ounces button mushrooms, sliced
1 teaspoon olive oil
3 boneless skinless chicken breasts
2 tablespoons capers
2 lemons
2 cups reduced-sodium chicken broth
8 ounces thin whole wheat spaghetti (or pasta of choice)
1 teaspoon salt
1 teaspoon pepper
2 tablespoons parsley
2 tablespoons parmesan cheese

Steps:

  • Fill a pasta pot with water and set on burner (don't need to turn on yet).
  • Turn a burner on medium high and place a large, non-stick sauté or skillet on to heat.
  • Add olive oil and sauté onions until just tender, 3-5 minutes.
  • Meanwhile slice the red pepper and mince the garlic.
  • Pour onions into large bowl and now sauté pepper and garlic, 3 minutes.
  • Slice mushrooms while this is going on.
  • Pour pepper and garlic into bowl and sauté mushrooms. Note here: I do not add additional oil to sauté the mushrooms. I want them to render some of their liquid. Stir occasionally and cook until rendered and lightly browned.
  • While they are cooking, remove skin and bones from the chicken and cut into small bite size pieces. Season with a little salt -half teaspoon and set aside.
  • Pour mushrooms into the bowl. Now add 1 teaspoon olive oil to the pan and add chicken. Sauté until white and cooked through.
  • Turn water on to boil for the pasta. Add pasta and cook per box instructions.
  • Add capers, broth, salt, pepper and parsley to chicken pan.
  • Zest both lemons and add to pan. Then slice one lemon and add slices to pan and juice the second one and add juice to pan.
  • Cook over medium heat to reduce liquid to half. Then add all ingredients in the bowl to warm back up. Add one cup pasta water to the chicken mixture.
  • Drain the pasta and put back into the pot. Pour chicken mixture over top and stir and serve. Sprinkle as desired with fresh grated parmesan cheese.

2 tablespoons olive oil, divided
1 1/2 tablespoons lemon pepper, rub
3 (14 ounce) cans 33% reduced-sodium chicken broth (about 6 cups)
1/2 medium onion
12 ounces uncooked angel hair pasta
1 lemon
2 ounces cream cheese, softened (I use 4 ounces,must be very soft)
1 (14 ounce) can quartered artichoke hearts in water, drained
1/4 cup cups capers, drained and rinsed
chopped fresh parsley
grated fresh parmesan cheese

Steps:

  • Cut chicken into 1-in. pieces. Combine chicken, 1 tablespoon of the oil and rub in a large bowl; toss to coat. Heat remaining oil in a skillet over medium-high heat 1-3 minutes or until shimmering. Add chicken to hot skillet; cook and stir 10 minutes or until chicken is golden brown and centers are no longer pink. Remove chicken from skillet; set aside.

I came up with this recipe while contemplating what to do with leftover chicken. It turned out so good, I had to post it to preserve it. I didn't add all of the cooked pasta to the pan so I could preserve some for kids, and because I like a lot of sauce to cover my noodles.

16 ounces thin spaghetti
2 -3 cups chicken, cooked and sliced
14 1/2 ounces chicken stock
6 tablespoons butter
2 tablespoons olive oil
1 cup dry white wine
6 tablespoons lemon juice
1/2 cup capers, drained
14 1/2 ounces artichoke quarters in water
1/2 cup half-and-half, fat free
4 tablespoons all-purpose flour
5 ounces spinach, fresh baby
1/4 cup parmesan cheese, shredded
1/4 cup parsley, fresh chopped

Steps:

  • Cook pasta as directed on the package, set aside.
  • While cooking, heat the chicken stock in the microwave to warm, add the chicken and set aside.
  • Melt butter and oil in a large skillet/sauce pan.
  • Add wine and lemon juice and bring to a boil, reduce heat and return to simmer.
  • Add artichoke quarters, capers, broth and chicken.
  • Slowly bring back to boil.

2 teaspoons olive oil
1 1/2 cups chicken broth
6 tablespoons lemon juice
2 tablespoons capers
1/2 cup sliced green onion
1 tablespoon butter

Steps:

  • Heat a large nonstick skillet over medium-high heat. Coat with cooking spray. Add bell pepper and onion; saute 8 minutes or until tender. Remove from pan and keep warm.
  • Recoat pan with cooking spray. Add zucchini and yellow squash, saute 4 minutes or until crisp tender. Add tomatoes and garlic, saute 2 minutes more. Add squash mixture to onion mixture; keep warm.
  • Cook pasta according to package directions, omitting salt and fat. Drain over a bowl, reserving 1/2 C cooking liquid. Add pasta and reserved cooking liquid to vegetable mixture; toss to combine. Add 1/2 C Parmesan cheese and basil; toss to combine. Keep warm.
  • Sprinkle both sides of chicken with salt and 1/4 tsp pepper. Dredge chicken in flour, turning to coat. Shake off excess flour.
  • Recoat the pan with cooking spray. Add olive oil to pan, swirling to coat. Add chicken and cook 4 minutes on each side or until done. Remove from pan and keep warm.
  • Add broth, juice, and capers to pan, scraping pan to loosen browned bits. Bring to a boil; cook 3 minutes. Remove from heat. Add green onions, butter, and remaining 1/4 tsp black pepper; stir until butter melts.
  • Arrange 1 C pasta mixture on each of 4 plates. Top each serving with 1 chicken breast half, 1/4 C sauce, and 1 tbsp remaining Parmesan.

1 1/4 lb boneless, skinless chicken breast
1 1/2 Tbsp lemon pepper rub
3 can(s) (14 oz each) 33% reduced-sodium chicken broth (about 6
2 Tbsp olive oil, divided
1/2 medium 1 onion
1 pkg 12 oz uncooked angel hair pasta
1 lemon
1 2 oz (60 g) cream cheese, softened
1 can(s) (14 oz ) quartered artichoke hearts in water, drained
1/4 c capers, drained and rinsed
chopped fresh parsley and grated fresh parmesan cheese

Steps:

  • 1. Cut chicken into 1-in. (2.5-cm) pieces on Cutting Board. Combine chicken, 1 tbsp (15 mL) of the oil and rub in Stainless (4-qt./4-L) Mixing Bowl; toss to coat. Heat remaining oil in (12-in./30-cm) Skillet over medium-high heat 1-3 minutes or until shimmering. Add chicken to Skillet; cook and stir 10 minutes or until chicken is golden brown and centers are no longer pink. Remove chicken from Skillet; set aside
  • 2. Meanwhile, pour broth into Large Micro-Cooker®; microwave, covered, on HIGH 8-10 minutes or until broth comes to a boil. On clean cutting board, chop onion using Food Chopper. Add onion to Skillet; cook 10-20 seconds or until onion is fragrant. Carefully add broth and pasta to Skillet; cook, uncovered, 7-8 minutes or until pasta is tender, stirring occasionally.
  • 3. Zest lemon with Microplane® Adjustable Grater to measure 1 tbsp (15 mL). Juice lemon with Juicer to measure 2 tbsp (30 mL). Add zest, juice and cream cheese to Skillet; stir until cream cheese is fully incorporated. Add chicken and artichokes to Skillet. Cook, covered, 1-2 minutes or until heated through. Remove Skillet from heat; stir in capers. Garnish with parsley and Parmesan cheese, if desired

1 cup water
1/2 cup lemon juice
6 chicken breasts (boneless & skinless)
2 eggs
1 cup flour
salt and pepper
3/4 cup butter (or margarine)
1 cup Chardonnay wine
1 cup chicken broth
1 cup mushroom (sliced)
2 teaspoons seasoning salt
1 teaspoon garlic powder
1 1/4 cups artichoke hearts (canned-drained-cut in half)
2/3 cup lemon juice
2 tablespoons cornstarch
2 tablespoons water
2 tablespoons butter
2 teaspoons parsley (chopped)
1 1/2 teaspoons basil leaves (dried)
1/2 lb angel hair pasta

Steps:

  • In a gallon size plastic bag, combine water,lemon juice & chicken,refrigerate 1 hour.
  • Put beaten eggs in a small bowl and in another bowl,mix flour and salt/pepper.
  • Remove chicken from marinade, dip into egg mixture, then into flour mixture, coating evenly.
  • Over medium heat in a large skillet, melt butter; add chicken pieces cooking about 5 minute on each side and cooked through.
  • Cook pasta according to package directions, adding 1 tablespoon oil to cooking water, drain, set aside.
  • In a medium saucepan, cook wine over medium heat until about 1/3 has evaporated, add brtoh,mushrooms,salt & garlic powder, simmer 4-5 min, add artichoked & lemon juice, continue simmering 2 minute.
  • Mix cornstqrch and water until cornstarch is completely dissolved, add to sauce mixture, stirring constantly, continue cooking 1 min or until thickned.
  • Remove from heat, add butter, parsley and basil.
  • Arrange cooked pasta on a serving platter and top with chicken and sauce or make individual plates with pasta,chicken & sauce.

4 boneless skinless chicken breasts, pounded flat (or butterflied and cut in half)
3 tablespoons olive oil
2 tablespoons butter
2-3 cloves of garlic, minced
2/3 cup chicken broth
½ cup white wine
1 large lemon
2 tablespoons fresh parsley, chopped
¼ cup all-purpose flour
salt and pepper to taste
8 ounces of pasta, cooked... fettuccini, linguine, or angel hair pasta

Steps:

  • 1. On a piece of waxed paper or in a plate, mix together the flour, salt and pepper.
  • 2. In a large skillet, heat the olive oil and butter on medium high heat.
  • 3. Coat the chicken pieces in the flour mixture. Add the chicken to the skillet and cook for about 3-4 minutes on each side until nicely browned.
  • 4. Remove chicken from the skillet and add to an oven safe dish, and cover with foil. Keep the chicken warm in the oven on lowest setting.
  • 5. Add garlic to the skillet and sauté for about a minute. Add the wine and chicken broth to the skillet and bring to a boil. Reduce heat to medium and continue to cook for another 5-10 minutes.
  • 6. Add the juice of one lemon and 2 Tablespoons of chopped Parsley into the pan.
  • 7. Put the chicken back into the pan of sauce and heat through. Serve; spooning the sauce over chicken and pasta. Garnish with chopped parsley and lemon slices, if desired.

2 tablespoons olive oil, divided
1 1/2 tablespoons Lemon Pepper Rub
3 cans (14.5 oz each) reduced-sodium chicken broth
1 medium onion, chopped
12 oz uncooked angel hair pasta (or penne)
1 lemon
2 oz cream cheese, softened
1 can (14 oz) quartered artichoke hearts in water, drained
1/4 cup capers, drained and rinsed
1-2 tablespoons chopped parsley
grated parmesan to taste

Steps:

  • Toss chicken with Lemon Pepper Rub and 1 tablespoon olive oil. Heat remaining olive oil in large skillet over medium high heat until shimmering. Add chicken to skillet. Cook and stir 10 minutes or until chicken is golden brown and no longer pink inside. Remove chicken from skillet and set aside. Add onion to skillet and cook until fragrant (20 seconds or longer if you like your onions more done... I like mine caramelized to a deep brown!). Add broth and heat to boiling. Add pasta and cook until pasta is tender (about 7-8 min for angel hair or longer for penne). Zest lemon to make 1 tablespoon of zest. Add zest, at least 2 tablespoons of juice from lemon, and cream cheese to skillet. Stir until fully incorporated. Add artichokes and chicken. Toss until heated through - 1 to 2 minutes. Top with parsley and grated cheese and serve immediately! Yum!!! Great leftover, too!! :-) In the absence of the lemon pepper rub, use 1 teaspoon salt and 1 teaspoon pepper to toss with chicken then add 1 to 2 tablespoons of lemon juice and 2 large cloves of garlic (pressed) at end of onion cooking time.
