- Heat oil in a small saute pan over medium heat, and cook onion until translucent and soft, about 3 minutes. Add apples and cook until soft, about 5 minutes. Let cool.
- Combine chicken with onion-apple mixture and remaining ingredients, mixing with your hands. Form into 1 1/2-inch-round patties, and chill until ready to use.
- Preheat oven to 350 degrees. Heat a little oil in a medium ovenproof saute pan, and brown patties over medium-low heat 2 minutes on each side; transfer pan to oven, and bake until cooked through, about 10 minutes.

- In a medium saute pan over medium heat add, 1-ounce oil and all raw vegetables and saute until translucent. Remove and cool.

- Heat a small nonstick skillet over medium heat. Add butter and melt. Add apples and onions and season with a little salt, pepper and fennel seeds. Gently saute the mixture 5 minutes to soften and remove from heat to cool.
- Heat a griddle pan or large nonstick skillet over medium-high heat.
- Place chicken in a bowl and season with salt and pepper, poultry seasoning, allspice, paprika and a healthy drizzle of extra-virgin olive oil. JAMAICAN PATTIES; BEEF, CHICKEN, OR LAMB
These are delicious curry-flavored pastries found in the Caribbean islands, particularly in Jamaica. Great as a snack or as a Jamaican meal compliment. I also enjoy them with a spinach, corn, and bean salad. I have used pre-packaged Crescent rolls (2 cylinders rolled out and cut into 10 circles or phyllo dough (15 sheets cut lengthwise to make 30 triangles) as a time saver. Not as good or as spicy as the handmade pastry, but sometimes there's just not enough time. Store in the fridge for up to 5 days an reheat in microwave on medium heat.

- Heat oil in skillet over medium heat.
- Add onions and cook for 10 minutes stirring occasionally until soft and translucent.
- Add garlic, cook 2 minutes.
- Add beef, curry, cumin, salt, and pepper.

- Stir in stock and breadcrumbs.

- Cut in 1/4 cup margarine and shortening until mixture resembles coarse crumbs.
- Stir in water until mixture forms a ball. Shape dough into a log, and cut into 10 equal sections.
- Roll each section into a six inch circle (approximately 1/8 inch thick). Cover with damp towel.
- Spoon equal amounts of filling into each pastry circle. Fold over making a half circle and press edges together. Use a fork to press edges, and brush the top of each patty with beaten egg.
- Cook for 25- 30 minutes.

- Cut chicken thighs into 1-inch pieces. Chop pancetta finely using a meat cleaver until paste-like in texture. Mix chicken and pancetta together. Sprinkle salt, pepper, thyme, fennel, coriander, cayenne, nutmeg, and sage. Mix until combined and place mixture on a plate; cover with plastic wrap and freeze for 15 to 20 minutes before grinding.
- Peel and quarter apples. Grate apples into a bowl. Place grated apples in a paper towel and squeeze all the water out. Add apples to the partially frozen chicken sausage meat.
- Place 1/2 of the chicken mixture in a food processor. Pulse on and off until mixture is slightly finer than coarse sausage. Repeat with the remaining chicken. Cover with plastic wrap and refrigerate to let the flavors develop, 4 hours to overnight.
- Use a large ice cream scoop to portion out the meat. Flatten scoops with dampened hands to make patties about the same size as your biscuits.
- Heat oil in a large skillet over medium-high heat. Cook patties until bottom is browned and leaves a deep brown fond in the skillet, 3 to 5 minutes. Reduce heat to medium and flip patties over. Add butter and sage leaves. Cook until patties are firm to the touch, removing leaves once they stop bubbling, about 5 minutes more. Remove patties.
- Whisk flour into the pan; cook and stir until starting to thicken, about 1 minute. Pour in broth and bring to a boil, whisking the browned bits of food off the bottom of the skillet. Add maple syrup and creme fraiche; season with salt and pepper. Cook until gravy is spoonable and reaches desired thickness, 2 to 3 minutes more. Add more broth if gravy is too thick. Remove from heat.
- Place biscuit halves on individual plates. Top each with a chicken sausage patty; spoon gravy on top. Garnish each with a fried sage leaf.

- 1. Place the flour in a shallow dish
- 2. whisk the egg and milk together in another shallow dish.
- 3. Place the cracker crumbs in a shallow dish
- 4. Make four patties out of the ground beef
- 5. Place enough oil in either a nine or ten in skillet to be about an 1/8 to 1/4 inch deep and begin heating the oil on medium heat.
- 6. Dredge the patties in first the flour be sure to coat both sides really well, then dip into the egg milk mixture coating both sides. ( this is the secret to getting your cracker or bread crumb coating to stick on any meats when you use the flour first then your egg mix it forms a type of glue that your cracker or bread crumb coatings stick to easier.) Last coat both sides well with the cracker crumbs. Salt and pepper to taste.
- 7. When oil is hot place your patties in the pan and fry on each side 7 or 8 minutes until nicely golden brown and juices run clear.
- 8. Mom always made homemade cream gravy, mashed potatoes and corn on the cob when in season along with her hot from the oven biscuts with butter and honey from our own hive. Oh my was this a wonderful meal.

This was a recipe I came up with when I started trying to lose weight with Sure Slim. It uses Cruskit crispbreads or crackers and follows the "rules" of the diet. Cruskits are those revolting puffed crispbreads that you buy thinking that you are being good but then don't eat. I found that they make an excellent binder for burgers.

- Put the Cruskits in the food processor and grind to a fine breadcrumb consistency. Tip the crumbs into a bowl.
- Put the rest of the ingredients except the chicken into the food processor and pulse until finely chopped.
- Note: Resist the temptation to do the Cruskits and vegetables together. You'll end up with a gluggy mess that is difficult to get out of the food processor.
- Add the chicken and vegetables to the crumbs and mix together quickly. The crumbs absorb the liquid and become sticky so the quicker you can work, the easier it is to combine everything evenly. I get into it with my hands.
- Divide into 4 large patties or 8 small ones, about 1.5 to 2 cm thick. Grill for 7 minutes on each side.
- Serve in a pita bread with lettuce and tomato or serve as a main dish with vegetables.
- These patties can also be baked in a hot oven. I also make them into meatballs and bake them then freeze them. They can be added to stock and bok choy for a very quick meal.

- Bring a large pot of water to a boil and add the salt and chicken.
- Cook 5-10 minutes until done, then remove, let cool, and dice finely.
