This Cheesy Chicken Pasta is the perfect dinner any night of the week. It's packed with creamy, rich, cheesy goodness, with some tender chicken and spinach to balance everything out! Only 10 minutes of prep time and all done in one pot!

2 tablespoon olive oil
1 medium onion (chopped)
1 pound chicken breast (cut into bite sized pieces)
¼ teaspoon salt (or to taste)
¼ teaspoon pepper (or to taste)
3 cloves garlic (minced)
10 ounce penne (uncooked (2 1/2 cups))
2½ cups chicken broth (low sodium)
1 cup milk
8 ounce spinach (fresh (about 3 cups))
3 ounce cream cheese
1 cup mozzarella cheese (shredded)
½ cup Parmesan cheese (freshly grated)

Steps:

  • Saute the onion: Heat the olive oil in a large skillet or dutch oven over medium heat. Add the onion and cook till translucent.
  • Brown the chicken: Add the chicken and season with salt and pepper and cook through until browned. Stir in the garlic and cook till aromatic for about 1 minute.
  • Combine the cheesy chicken pasta: Add the pasta, chicken broth, milk, stir and bring to a boil. Reduce the heat, cover and simmer for 15 - 20 minutes or until the pasta is cooked. Uncover and if there's any more liquid cook for another 5 minutes or until all the liquid has cooked off.
  • Finish the dish: Remove from heat, stir in the cream cheese till creamy and melted. Add the spinach, mozzarella and Parmesan cheese. Stir until all the cheese melts and the spinach wilts. Serve while warm.
  • Serve while warm.

2 TBS olive oil
1/2 cup diced yellow onion
1 red pepper ((diced))
3 cloves garlic ((minced))
2 boneless skinless chicken breast ((cut into bite size))
1 1/2 cups chicken broth
2 cups penne noodles
3/4 tsp dried basil
3/4 tsp dried oregano
1 1/2 tsp salt ((to taste))
1/2 tsp pepper ((to taste))
4 oz light cream cheese ((room temperature))
3/4 cup plain Greek nonfat yogurt
1 1/4 cups shredded Italian cheese ((divided))

Steps:

  • In a large saucepan over medium heat add 2 TBS olive oil.
  • Add the onion and saute for a few minutes until transparent, stirring occasionally.
  • Add the red pepper and saute for a minute or two, stirring 1 or 2 times.
  • Add the minced garlic and saute until lightly golden.
  • Add the chicken pieces and brown. Turning to brown on each side but don't cook the chicken thoroughly (that will happen while cooking the penne).
  • Add the chicken broth and then the penne noodles.
  • Add all the spices and stir in.
  • Bring to a boil and cook until penne is al dente (follow the instructions on the packaging). Stirring occasionally, put the lid on if necessary to not let it dry out.
  • Once the penne is al dente, lower the temperature and then add the Greek yogurt and cream cheese. Stir until all is mixed in and it makes a creamy sauce.
  • Finally add 1 cup of the Sargento Chef Blend shreeded 6 Cheese Italian, stir in and let melt.
  • Serve warm sprinkling the remaining 1/4 cup of 6 Cheese Italian on top of your individual plates.

I had some chicken, sour cream, Lipton onion soup and Pasta...this is what I came up with..and it was absolutely delicious.. I thought the kids were going to lick their plates..LOL! I just served it with some crusty bread to sop up that lovely sauce.. My pictures.

2 1/2 - 3 c boneless, skinless chicken, cubed
1 small celery stalk, chopped small ( optional )
1 small carrot, chopped small ( optional )
2 clove garlic, minced
1 - 8 oz sour cream
1 pkg lipton onion soup mix
2 1/2 c boiling water
3 Tbsp corn starch
salt and pepper to taste
1/2 tsp cayenne pepper ( optional )
2 tsp paprika, i used smoked paprika
1 Tbsp dried parsley
pasta or rice to serve chicken over
vegetable oil for sauteing

Steps:

  • 1. In a medium sized bowl; mix the soup mix, 3 tablespoons corn starch and 2 1/2 cups boiling water. Set aside.
  • 2. In a large skillet, with about a tablespoon of oil; saute the celery and carrots until tender. Add the garlic the last minute of cooking. Remove the vegetables from skillet and set aside.
  • 3. Season chicken with salt, pepper and paprika. In the same skillet you saute the veggies in; add enough oil to saute the chicken; over medium heat. Stirring occasionally until tender and no longer pink.
  • 4. Add the vegetable back into the skillet with the chicken. Stirring to blend.
  • 5. Add the sour cream to the soup mixture, stirring until well blended.
  • 6. Now, pour the soup and sour cream mixture over the chicken and vegetable, stir to blend. Bring to a boil, then simmer until sauce is thickened. About 5 minutes. Add the parsley; stir. Taste the sauce and adjust the seasonings, if any is needed.
  • 7. Serve over prepared pasta or rice. This was so flavorful..I hope you enjoy it as much as my family did.

I found this in Bernard Clayton's Cooking Across America. I've had this cookbook for years and it's the first thing I've made from it! The original name of the dish is "Pasta Prima Peschke", named for a chef on a ranch in Wyoming who made it up, but that's not very descriptive, so I changed it. I also changed some of the amounts - I only used half of the butter and bacon and chicken called for in the original and it was plenty.

3 boneless skinless chicken breasts
1/4 cup white wine
1 dash white pepper
1/2 lb bacon, cut into bits
1/2 lb mushroom, thinly sliced
4 teaspoons minced garlic
1 tablespoon butter
1 lb fettuccine pasta
1 cup sour cream (I used lite)
1/2 cup butter, melted
3/4 cup grated monterey jack cheese
1/2 cup white wine
1/2 cup grated parmesan cheese
1/4 cup grated mozzarella cheese
chopped parsley

Steps:

  • Poach the chicken in white wine, uncovered, seasoned with a dash of white pepper, about 10 minutes. Cut into small pieces and set aside.
  • Fry bacon bits till crisp. Remove from skillet and drain on a peper towel. Set aside.
  • Over medium heat saute the mushrooms and garlic in butter for about 5 minutes.
  • Combine chicken, bacon and mushroom garlic mixture and keep warm.
  • Prepare and drain fettucine, tossing with a light coating of olive oil if desired.
  • Sauce:.
  • Combine all sauce ingredients except parsley in a saucepan. Over low heat, mix till cheese is melted and sauce becomes smooth.
  • Pour the sauce over the noodles and mix together well.
  • Top with chicken, bacon and mushroom mixture.
  • Garnish with chopped parsley.

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, cubed
2 cups milk
1/4 tsp. garlic salt
4 cups cooked rotini pasta
3 cups chopped cooked chicken breasts
1/2 cup KRAFT Grated Parmesan Cheese, divided

Steps:

  • Heat oven to 350ºF.
  • Cook and stir vegetables in large nonstick skillet sprayed with cooking spray on medium heat 3 min. or until crisp-tender. Add cream cheese, milk and garlic salt; cook on low heat 3 to 5 min. or until cream cheese is melted, stirring frequently.
  • Add pasta, chicken and 1/4 cup Parmesan; spoon into 2-1/2-qt. baking dish.
  • Bake 20 to 25 min. or until heated through. Sprinkle with remaining Parmesan.

My kids will only eat this lemon pasta. Rich, lemony and creamy.....uuuummm, try to cook this with fresh linguine pasta, its heavenly!

8 ounces linguine or 8 ounces fresh pasta
1/4 cup onion, minced
4 garlic cloves, minced
2 tablespoons butter
300 ml sour cream or 300 ml low-fat sour cream
4 tablespoons parmesan cheese, grated and divided
2 tablespoons milk
2 teaspoons lemon pepper seasoning
1 -2 tablespoon lemon juice
1 lemon, zest of
1/2 teaspoon salt (optional)
2 tablespoons parsley, freshly chopped

Steps:

  • Boil water and cook pasta according to package instruction.
  • If using fresh pasta, it wont take 3 minutes. Set aside.
  • Melt butter in a large pan.
  • Saute onions till fragrant.
  • Add in the minced garlic.
  • When light brown, add the sour cream.
  • Lower heat, add 2 T. Parmesan cheese, milk, lemon pepper, juice and zest of lemon and salt if desired.
  • Simmer for 1-2 minutes only.
  • Remove from heat.
  • Pour over cooked pasta.
  • Toss gently, add parsley and remaining 2 T Parmesan cheese. Serve with Garlic bread.
