EASY, AUTHENTIC TASTING CHICKEN PARMESAN (PARMIGIANA)
This is a tasty Italian favorite that I always serve with linguine. It looks and tastes just as delicious as in a restaurant and costs a lot less :)

Steps:
- Combine eggs, milk, salt and pepper in a shallow bowl or pie plate.
- Combine bread crumbs and parmesan cheese in a shallow bowl, plate or pie plate.
- Dip each chicken cutlet in egg mixture and then coat completely with bread crumb mixture.
- Heat half inch of oil in a pan over med-high heat.
- Fry each cutlet and turn over when golden brown.
- Heat oven to 400 degrees.
- When cutlets are crispy and golden on both side and juices run clear, place them on a baking sheet.
- Place a slice of provolone cheese on top of each cutlet and place in the oven.
- In the meantime, heat sauce in the microwave or on the stove top.
- When cheese is melted, remove cutlets from oven and spoon some sauce nicely over each one.
- Sprinkle with grated parmesan cheese.
- Serve with your favorite pasta and remaining sauce.

- 1. If your cutlets are really thick it will take too long to cook. I like to pound them thin between two pieces of clear wrap or place them in a plastic bag and pound with a food mallet.
- 2. Season the chicken with salt and pepper.
- 3. Set up your workstation with bread crumbs, flour, and egg.
- 4. Dip each cutlet in flour.
- 5. Then egg.
- 6. Coat in bread crumbs.
- 7. Once they are all ready, fry in a pan with heated cooking oil until golden brown (about 2-3 minutes on each side). If you have a big frying pan you can do them in two batches. If you have a smaller frying pan and need to fry in multiple batches, don't use all the oil at one as it may be too much.
- 8. Transfer to a long baking pan lined with about a cup of tomato sauce.
- 9. Top each cutlet with some tomato sauce.
- 10. Sprinkle Parmesan cheese and mozzarella over the cutlets.
- 11. Bake in a 350-degree oven for about 30 minutes or until cheese melts. Cooking time may be less depending on the thickness of the cutlets.
- 12. Remove from the oven and sprinkle some basil or parsley.
LOW CARB DELICIOUS CHICKEN PARMIGIANA (PARMESAN)
Delicious version for the Atkins diet. Totally satisfies the carb crave "normal" chicken parmigiana. Made Mr. carb starved into Mr. happy as he has a delicious version of his favorite Italian dish.

- Preheat oven to 400°F.
- As written by Lv2Sun, in a small bowl combine the mayo, eggs and cream.
- Be sure that the mayo is blended well and doesn't clump.
- Crush bags of pork rinds and then, in a separate bowl, combine them with cheese, parsley and garlic salt.
- Take each cutlet and dip in the egg mixture and then rind mixture.
- Place the cutlets in a sprayed glass dish.
- Drizzle with lemon juice.
- Top the cutlets liberally with the sauce and then with the cheese.
- (Note, the victorias caponata only has 4 total carbs per serving and is just delicious!).
- Bake at 400°F for 20 minutes.
- You can place under the broiler for 2-3 minutes if you like the bubbly look.
- Tastes fabulous.
- You can't tell that it is low carb!

Steps:
- MARINARA SAUCE: cook garlic slowly in 1 tablespoon olive oil.
- About 1 minute.
- Add tomatoes, salt and basil.
- Let simmer for about a hour.
- CHICKEN: Salt chicken very little.
- Mix about 2-3 tablespoons parmesan cheese in the egg.
- Dip each breast into egg then dust with bread crumbs.
- Fry in skillet in enough oil to coat the skillet.
- Be careful not to burn.
- Brown on a low to medium heat on both sides until chicken is done.
- Cook spaghetti according to directions.
- PREHEAT OVEN 375°.
- In casserole dish place chicken flat.
- Ladle 1 or 2 spoonfuls of sauce on top of each breast put desired amount of grated mozzarella on top.
- Bake until cheese is melted.
- Serve over noodles with more sauce.
- Garnish with parmesan cheese.
- **For added ZIP: Squeeze fresh lemon juice over chicken before you put on the sauce and into the oven!
