8 frozen breaded chicken tenders
1 loaf (1 pound) frozen pizza dough, thawed
1/2 cup marinara sauce
1/4 teaspoon garlic powder
2 cups (8 ounces) shredded part-skim mozzarella cheese
1/4 cup shredded Parmesan cheese
2 tablespoons thinly sliced fresh basil
Additional warmed marinara sauce

Steps:

  • Bake chicken tenders according to package directions. Remove from oven; increase oven setting to 450°., Meanwhile, grease a 12-in. pizza pan. Roll dough to fit pan. In a small bowl, mix marinara sauce and garlic powder; spread over dough., Cut chicken into 1-in. pieces. Top pizza with chicken and mozzarella cheese. Bake on a lower oven rack 12-15 minutes or until crust is golden brown and cheese is melted. Sprinkle with Parmesan cheese and basil. Serve with additional marinara.

I love having pizza dough stocked up in our freezer. Just throw it in the fridge in the morning and it's thawed and ready to shape for dinner in the evening. Even better is having pizza toppings ready to toss on for a quick meal. Such is the case with this pizza. As Josie suggested wen she created this chicken parmesan one night, this pizza is perfectly simple when you have leftover chicken. Combine the chicken with some marinara, mozzarella and parmesan for a delicious weeknight meal.

1 pizza dough (homemade or store-bought)
cornmeal, for sprinkling
olive oil
garlic salt (optional)
3/4 cup marinara sauce
1 cup chopped cooked chicken
1 1/2 cups shredded mozzarella cheese
1/2 cup freshly grated parmesan cheese
2 tablespoons chopped fresh basil (optional)

Steps:

  • Preheat the oven to between 400°F to 500°F, depending on the pizza crust recipe you're using. (If using my pizza dough recipe, heat the pizza stone in the 500°F oven and allow to preheat for 30 minutes.).
  • Shape the dough to a large round (about 12 to 13 inches) on top of parchment paper or a pizza peel dusted with cornmeal, or in a pizza pan if using another dough recipe. Brush the middle and edges with olive oil and sprinkle with garlic salt (optional). Spread a layer of marinara on top, then sprinkle with the chicken, mozzarella, and parmesan. Carefully transfer the pizza to the oven (on the hot stone if using my dough recipe) and bake for 12 to 15 minutes, or until the crust is golden and cheese is melted.
  • Remove from the oven and let stand for 5 minutes before cutting and serving. Sprinkle with basil for garnish.

One 10-ounce tub Stonemill Kitchens Artichoke & Parmesan dip
6 to 7 ounces Hillshire Farms all-cooked chicken breasts (2 breasts per package, found where lunch meats are sold, garlic-herb seasoned is a good choice)
One 6.5-ounce jar marinated artichoke hearts
3/4 cup shredded mozzarella cheese
3/4 cup shredded Parmesan cheese

Steps:

  • Brush thin pizza crust lightly with olive oil. Spread Stonemill Kitchens Artichoke & Parmesan dip evenly over crust. Cube chicken breasts and sprinkle evenly over dip. Chop marinated artichoke hearts and spread over chicken. Sprinkle shredded cheeses evenly on top and bake at 350 for 12 to 15 minutes or until cheese is bubbly and golden brown. 1 lb. ground chicken
4 T. parmesan cheese
4 T. romano cheese
1 t. salt
1 1/2 t. Italian seasoning
3/4 t. garlic powder
3/4 t. onion powder
3 eggs
1/4 c. flour
3/4 c. Italian seasoned bread crumbs
1/4 c. panko
1/2 c. olive oil
1 c. shredded mozzarella
1/2 c. marinara sauce
Fresh basil leaves for garnish

Steps:

  • Line 2 8" cake pans with plastic wrap. In a medium bowl mix the chicken with 1 t. Italian seasoning, 1 t. salt and ½ t. each of the garlic and onion powders. Divide the chicken in half and press into the bottom of each cake pan. Cover with plastic wrap and freeze for 4 hours. Preheat the oven to 400 degrees. In a large shallow bowl, beat the eggs. Place the flour in a large shallow dish and on another plate combine the bread crumbs (both), 2 T. each of the parmesan and romano cheeses and the remaining Italian seasoning, garlic and onion powders. Coat the frozen chicken in the flour, then the egg and then the breadcrumb mixture. Repeat with the other chicken round. Heat ¼ c. olive oil in a large skillet over medium-high heat. Cook 1 chicken round for 2 minutes on each side until golden brown and transfer to a paper towel lined plate. Repeat with the other chicken round. Place about ¼ c. of marinara sauce on each chicken pizza, leaving a 1" border. Add the remaining 2 T. of each cheese to each of the chicken pizzas. Top each pizza with ½ c. of mozzarella cheese. Place each pizza on a baking sheet on top of a wire cooking rack. Bake in the oven for 15 minutes. Top with fresh basil. Slice into pizza shape wedges and serve. Notes You could also shape these into 4 rounds instead of 2 so that it's more of a personal "pizza". Instead of an 8" circle just form the patties into 4" circles.

I think some of my best dinners are 50% creativity and 50% laziness! ;) So with some of the usual pantry suspects, some leftover chicken, and a minimum amount of fuss, we ended up...

1 loaf of your favorite garlic bread cut lengthwise (we used aldi's l'oven fresh parmesan and romano)
1 jar(s) prego roasted garlic parmesan sauce
4 oz sliced mushrooms (canned or fresh)
1-2 c cubed or shredded chicken (we used a rotisserie chicken)
8 oz shredded cheese, 5-cheese italian blend
1 pkg caesar salad kit (optional)

Steps:

  • 1. Preheat oven to 400F.
  • 2. Lay out the loaf halves on a baking sheet.
  • 3. Spread on the sauce, as much or as little as you like. (Save the remaining sauce for another meal or warm it up for dipping.)
  • 4. Add the mushrooms, dividing evenly. Then the chicken, and finally the cheese.
  • 5. Bake for 12-15 minutes. Depending on how crispy you like your pizza bread, I'd start keeping watch after 10 minutes. Cut each loaf half into 3 pieces, add a small caesar side salad and dinner is served!
  • 6. Going to try it with sliced olives next time, and maybe sliced up breaded chicken tenders. Yummy! I imagine this would also work with the texas toast style garlic bread if you prefer it.

1/2 cup grated parmesan cheese
1 (4 1/2 ounce) can green chilies (drained and chopped)
3 -4 green onions, finely chopped
1 teaspoon minced fresh garlic
black pepper
2 cups shredded monterey jack cheese or 2 cups mozzarella cheese, divided

Steps:

  • Set oven to 450 degrees.
  • Place the prepared pizza on a pizza pan.
  • Brush the crust with oil, then sprinkle lightly with kosher salt (if using).
  • Prick holes in the crust with a fork to prevent riing while baking.
  • Bake for 8-10 minutes (if the crust rises while baking just push down withm a fork).
  • In a large bowl mix all ingredients (use only 1 cup cheese).
  • Spread the mixture onto the pre-baked crust.
  • Sprinkle the remaining 1 cup (or more) shredded mozzeralla cheese.
  • Bake for about 15-17 minutes or until heated through and the cheese is melted.

2 ounces (about 1/2 cup plus 2 tablespoons) finely shredded reduced-fat mozzarella cheese (no more than 3 g of fat per ounce; I used Lucerne, found at Safeway chains)
1 tablespoon grated reduced-fat Parmesan cheese (look for it in a plastic canister or jar, not in the refrigerated section)
1 to 2 tablespoons fresh basil slivers, optional
1/8 to 1/4 teaspoon crushed red pepper flakes, or more to taste, optional

Steps:

  • Preheat the oven to 450°F.
  • Place the crust on a baking sheet large enough for it to lie flat. Spread the sauce evenly over the crust to cover all but the outer 1/2 inch.
