CHICKEN NORMANDY (ESCALOPE DE POULET A LA NORMANDE)

Chicken Normandy (Escalope de Poulet a la Normande) image

This is how my mum and grandma make chicken Normandy. The main things in this recipe are to have the chicken breasts really tender and the sauce not too liquidy. Bon appetit!

Time 40m

Yield 4

Number Of Ingredients 8

1 tablespoon olive oil, or as needed
4 (5 ounce) skinless, boneless chicken breasts
1 (4.5 ounce) can button mushrooms, drained
1 cup heavy cream
1 large egg yolk
1 tablespoon Dijon mustard, or more to taste
salt and freshly ground black pepper to taste
2 cups hot cooked rice, or as needed

Steps:

  • Heat olive oil in a skillet over medium-high heat. Pan-sear chicken breasts in the hot oil until lightly browned, 2 to 3 minutes per side. Remove chicken breasts from the skillet.
  • Add drained mushrooms to the pan juices in the skillet and cook until they start to pop, about 5 minutes.
  • Whisk together cream, egg yolk, Dijon mustard, salt, and pepper in a small bowl; pour into the skillet with the mushrooms. Return chicken breasts to the skillet and simmer over medium-low heat, stirring occasionally to prevent the egg yolk from setting, until chicken is no longer pink in the center and the juices run clear, 15 to 20 minutes. An instant-read thermometer inserted into the center of the chicken breast should read at least 165 degrees F (74 degrees C).
  • Serve with cooked white rice.

Yield 4 to 6 servings

Number Of Ingredients 12

3 cups canned low-salt chicken broth
1 cup apple cider or apple juice
8 ounces parsnips, peeled, cut into 1/2-inch cubes
1 3/4 pounds Yukon Gold potatoes, peeled, cut into 1/2-inch cubes
3/4 pound Golden Delicious apples (about 2 large), peeled, cored, cut into 1/2-inch cubes
5 tablespoons butter
8 skinless boneless chicken thighs, cut into 1-inch pieces
6 teaspoons minced fresh thyme
2 tablespoons all purpose flour
1 cup frozen peas, thawed
1/3 cup brandy
1/3 cup whipping cream

Steps:

  • Combine first 3 ingredients in heavy large pot and bring to boil. Reduce heat to medium, cover and simmer until parsnips are tender, about 5 minutes. Using slotted spoon, transfer parsnips to small bowl. Add potatoes and apples to same pot. Cover; simmer until very tender, about 20 minutes. Remove from heat. Using slotted spoon, transfer potatoes and apples to large bowl; add 3 tablespoons butter. Mash until almost smooth. Season with salt and pepper. Pour broth mixture from pot into medium bowl; reserve pot.
  • Sprinkle chicken with salt, pepper and 4 teaspoons thyme; dust with flour. Melt remaining 2 tablespoons butter in reserved pot over medium-high heat. Add half of chicken. Sauté until brown and cooked through, turning with tongs, about 5 minutes. Using slotted spoon, transfer sautéed chicken to 11x7x2-inch glass baking dish. Repeat with remaining chicken. Top with parsnips, remaining 2 teaspoons thyme and peas. Return broth mixture to same pot; add brandy and whipping cream. Boil over medium-high heat until sauce is reduced to 1 1/4 cups, scraping up browned bits, about 3 minutes. Season with salt and pepper. Spoon over chicken. Cover with potato-apple mixture. (Can be prepared 1 day ahead. Refrigerate until cold, then cover and keep refrigerated.)
  • Preheat oven to 350°F. Bake casserole uncovered until potato topping is crusty and chicken filling is heated through, about 35 minutes (about 45 minutes if refrigerated).

Number Of Ingredients 10

3 tablespoons all-purpose flour, divided
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
2 boneless skinless chicken breasts
3 teaspoons canola oil, divided
2 tablespoons onions, minced
2 cups apples, sliced
3/4 cup chicken stock
1/2 cup dry white wine
1 tablespoon fresh parsley, chopped

Steps:

  • Combine 2 tablespoons flour, salt and pepper in a shallow dish. Dredge chicken in the flour mixture. Heat 2 teaspoons oil in a large nonstick skillet over medium heat. Add the chicken and cook until golden and cooked through, 3 to 4 minutes per side, adjusting heat as necessary to prevent burning. Transfer to a plate and cover with foil to keep warm.
  • Increase the heat to medium-high and add the remaining 1 teaspoon oil to the pan. Add onion and sauté for 1 minute. Add apples and cook, stirring occasionally, until softened and browned, 1 to 5 minutes. Sprinkle the apples with the remaining 1 tablespoon flour and cook, stirring, for 30 seconds. Pour in stock and wine and bring to a boil, stirring constantly. Reduce heat to a steady simmer and cook, stirring occasionally, until slightly thickened, about 5 minutes. Reduce heat to low and stir in parsley. Return the chicken to the pan, turn to coat with the sauce, and cook until heated through, 3 to 5 minutes.

CHICKEN CUTLET A LA NORMANDE

Categories     Sauce     Sauté     Calvados

Yield 2-4 people

Number Of Ingredients 12

4 chicken breast or veal cutlets, pounded to 1/4 inch thin
1/4 cup flour for dredging
1/2 teaspoon dried thyme
salt and pepper
3 Tablespoons butter or cooking oil (butter is better!)
1 large shallot, minced
1 large Apple, peeled, cored, quartered and sliced
8 ounces of mushrooms, sliced, buttons are fine but exotics will make for party quality
1/2 Cup of Calvados, Applejack or unsweetened cider
1/2 teaspoon of thyme
1 Cup of heavy cream
salt and white pepper to taste!

Steps:

  • 1. Pre-heat oven to 200 F. 2. Season chicken or veal with salt, pepper and thyme, dredge in flour. 3. Heat butter in large saute pan over medium-high heat. Brown chicken in pan. Turn pieces and cook until done, should be firm and springy when poked with your finger. Remove to a plate and put in the oven to keep warm. 4. Raise pan heat to medium-high and add shallots, stir and cook for about two minutes. Then add the mushrooms and cook for several minutes, until they stop releasing liquid and begin to brown. Then add the apples, continue to toss and fry until apples and mushrooms begin to brown a little bit. 5. Add the Calvados, off the Flame! If you use gas, tip the pan and ignite the liquor. If you have electric, just boil for about 2 minutes to boil off alcohol. Add the thyme, cook for about 1 minute. 6. Add the cream, continue to cook over high heat until the sauce begins to produce large bubbles and thickens. Taste for seasoning. 7. Remove chicken from the oven and incorporate any accumulated juices into the sauce. Serve sauced or with the sauce on the side.
