1/2 cup extra-virgin olive oil
10 garlic cloves, minced
5 yellow onions minced
4 pounds boneless, skinless chicken breast, diced into 1/2-inch chunks
Salt and freshly ground black pepper
1/4 cup all-purpose flour
2 serrano chiles, sliced thin
2 tablespoons sweet paprika
2 tablespoons smoked paprika
2 tablespoons cumin seeds, toasted
2 tablespoons dried oregano
4 to 5 cups chicken stock or water
2 red onions, sliced thin
1 head iceberg lettuce, sliced thin
12 radishes, sliced thin
6 small tomatoes, diced
1 pint sour cream
2 bunches cilantro, leaves roughly chopped
1 (15-ounce) can pinto or black beans, drained and rinsed
1 to 2 packages corn or flour tortillas (enough for 6 to 8 medium size tacos)

Steps:

  • Heat a large saute pan over medium heat and pour in enough olive oil to coat the bottom of the pan. Add the garlic and onions and cook until soft and nicely caramelized, about 10 to 12 minutes.
  • In the meantime, season the chicken with salt and pepper. Sprinkle the flour over the chicken and toss to coat. Heat another large saute pan over medium-high heat and add 3 tablespoons of olive oil. Cook the chicken until it is lightly browned, about 6 to 8 minutes.
  • Once the onion mixture is caramelized and softened, add the serranos, paprikas, cumin, and oregano. When the chicken is done, transfer it to the pan with the onions. Pour in the broth or water and bring to a boil. Reduce the heat and simmer until the sauce is thick and delicious, approximately 20 minutes. Adjust seasoning with salt and pepper.
  • To serve the tacos: Put the toppings and chicken filling in bowls and allow guests to build their own tacos.

1 cup teriyaki sauce
1 tablespoon brown sugar
3/4 tablespoon dark mushroom soy
1/2 tablespoon chopped garlic
1/2 tablespoon sesame oil
1/4 teaspoon powdered ginger
8 ounces chicken breast
Salt and pepper
1 ounce blended olive and vegetable oils
1 1/2 ounces pancetta, rendered
1/2 tablespoon chopped garlic
2 ounces shiitake mushrooms
1 1/2 ounces sundried tomatoes, roughly chopped
1/4 cup white wine
1 1/2 cups heavy cream
1 pound bow tie pasta
4 ounces grated Parmesan
Salt and pepper
1 ounce snow peas, julienned

Steps:

  • For the marinated chicken: Combine the teriyaki sauce, brown sugar, mushroom soy, garlic, sesame oil and ginger in a medium bowl. Add the chicken, toss to coat and marinate in the refrigerator for at least 30 minutes. Remove and season with salt and pepper.
  • Preheat the oven to 350 degrees F.
  • Using a grill or grill pan, sear the chicken over high heat until color begins to show, 1 to 2 minutes per side. Remove and roast in the oven until moist, tender and cooked through, about 10 minutes.
  • Cut the chicken into medium-diced sections for the pasta.
  • For the pasta: Cook the pasta according to the package directions until al dente; reserve the pasta and the water in the pot separately.
  • Heat the blended oil in saute pan over medium heat. Add the pancetta and then the garlic and saute until the garlic is golden brown, about 3 minutes.
  • Add the mushrooms, cut-up marinated chicken and sundried tomatoes and cook for about 1 minute, then add the wine and deglaze the pan.
  • Add the cream, then 3 ounces of the Parmesan and cook until thickened. As the sauce thickens, immerse the pasta in boiling water for 15 seconds to heat, strain and then add to saute pan. Saute until all the ingredients are thoroughly combined.
  • Season to taste with salt and pepper then place in a pasta serving bowl. Garnish with the snow peas and sprinkle with the remaining 1 ounce Parmesan.

4 garlic cloves, minced
2 carrots, diced
1 bulb celery root, peeled and finely diced
1 turnip, peeled and finely diced

1 tablespoon fennel seed, toasted
4 sprigs fresh thyme
2 bay leaves
2 1/2 lbs chicken (organic)
1 cup milk
1/2 cup chicken fat (sold in tubs at gourmet stores)
2 tablespoons chopped fresh tarragon
1/2 teaspoon ground nutmeg
fresh ground pepper
1 1/4 cups all-purpose flour
3 large eggs
1 tablespoon chopped fresh parsley

Steps:

  • Melt the butter in a 6-quart pot over medium heat.
  • Add the garlic, carrots, celery root, turnip, rutabaga, onion, diced fennel, and a large pinch of salt; cook until vegetables are tender, about 5 minutes.
  • Add the white wine, 6 cups water, fennel seeds, thyme and bay leaves; bring to a simmer. Add the chicken and simmer for 2 hours. Remove the chicken and let cool. Pick off the meat in shreds; set aside in bowl.
  • About 15 minutes before the chicken has finished simmering, prepare the dumplings: Combine the milk, chicken fat, 1 tablespoon tarragon, the nutmeg, and 1/2 teaspoon each salt and pepper in a medium saucepan; bring to a simmer over medium heat. Remove from heat; add the flour and stir vigorously with a wooden spoon until the liquid is absorbed. Whisk in the eggs, one at a time, to make a thick dough.
  • Bring the soup to a boil. Form the dough into eight dumplings (a big spoon or ice cream scoop); drop into the soup. Cover and cook and until the dumplings float to the top of the surface, about 10 minutes.
  • Add the chicken meat, parsley and the remaining 1 tablespoon tarragon to the soup; stir carefully and divide among warm bowls.

1 small onion, thinly sliced
4 garlic cloves, smashed with the flat side of a knife
1 teaspoon vegetable oil
3 tablespoons kosher salt
5 or 6 branches rosemary, each 4 to 5 inches long
4 1/2 cups water
1 lemon, halved
8 chicken legs, drumsticks and thighs separated
8 chicken wings, wing tips removed
3 cups all-purpose flour
3 tablespoons freshly ground black pepper
2 tablespoons paprika
2 teaspoons cayenne pepper
2 tablespoons baking powder
2 cups buttermilk
Neutral, high-heat oil for deep-frying (like canola)

Steps:

  • Make the brine: In a medium saucepan over medium-high heat, sauté the onion and garlic in the oil until translucent, 3 to 4 minutes. Add kosher salt after the onion and garlic have cooked for 30 seconds or so. Add the rosemary and cook to heat it, 30 seconds or so. Add the water and lemon, squeezing the juice into the water and removing any seeds. Bring the water to a simmer, stirring to dissolve the salt. Remove from the heat and allow the brine to cool. Refrigerate until chilled. To speed this process up, chill over an ice bath, stirring.
  • Place all the chicken pieces in a large, sturdy plastic bag. Set the bag in a large bowl for support. Pour the cooled brine and aromatics into the bag. Seal the bag so that you remove as much air as possible and the chicken is submerged in the brine. Refrigerate for 8 to 24 hours, agitating the bag occasionally to redistribute the brine and the chicken.
  • Remove the chicken from the brine, rinse under cold water, pat dry, and set on a rack or on paper towels. The chicken can be refrigerated for up to 3 days before you cook it, or it can be cooked immediately. Ideally, it should be refrigerated, uncovered, for a day to dry out the skin, but usually I can't wait to start cooking it.
  • Combine the flour, black pepper, paprika, sea salt, cayenne, and baking powder in a bowl. Whisk to distribute the ingredients. Divide this mixture between two bowls.
  • Pour the buttermilk into a third bowl. Set a rack on a baking sheet/tray. Dredge the chicken in the flour, shake off the excess, and set the dusted pieces on the rack. Dip the pieces in the buttermilk, then dredge them aggressively in the second bowl of flour and return them to the rack.
  • Heat oil in a pan for deep-frying to 350°F/180°C. Add as many chicken pieces as you can without crowding the pan. Cook the chicken, turning the pieces occasionally, until they are cooked through, 12 to 15 minutes depending on their size. Remove to a clean rack and allow them to rest for 5 to 10 minutes before serving. For legs, thighs and wings, Ruhlman says, "I like to finish them in a 250˚ F/120˚ C. oven, to make sure they're super tender and to further crisp them. This lets me serve it whenever I want, no last minute frying if guests are invited."

1 whole chicken, cut into 10 pieces
salt & freshly ground black pepper, to taste
2 cups buttermilk
6 garlic cloves, smashed divided
1 small bunch fresh sage, leaves only divided
1 cup flour
3 tablespoons flour
1 cup cracker crumb, finely crushed (Ritz crackers)
1 teaspoon paprika
1/2 cup lard, 1/2 cup chicken fat or 1/2 cup peanut oil
3 cups chicken stock
hot sauce, to taste (recommend Ardvark Habanero)

Steps:

  • Season chicken pieces with salt and freshly ground black pepper. Combine buttermilk with 3 smashed garlic cloves and half the sage. Add chicken to buttermilk mixture and marinate at least 2 hours or overnight.
  • Preheat oven to 375 degrees F. Combine 1 cup flour, cracker crumbs and paprika. Remove chicken from buttermilk and dredge in flour mixture, shaking off excess. Warm a large cast iron skillet over medium-high heat.
  • When pan is hot, add lard, fat or oil, and then breaded chicken pieces in a single layer (work in batches if necessary; don't crowd pan). Brown chicken on both sides until golden. Transfer chicken to a baking sheet with tongs leaving fat in pan. Bake until cooked through (12 to 15 minutes).
  • While chicken is baking, make gravy. Add remaining 3 cloves garlic and remaining sage to fat in skillet. Cook over medium heat 1 to 2 minutes until sage crisps and garlic becomes aromatic. Add remaining 3 Tbsp flour.
  • Whisk to combine, then cook 1 to 2 minutes. Slowly whisk in 1 cup chicken stock, whisking until there are no lumps, then whisk in remaining stock. Season with salt and freshly ground black pepper and bring to a gentle boil. Reduce heat to maintain a simmer and cook about 15 minutes, stirring occasionally.
  • Strain into a small saucepan and check for seasoning one more time, adding more salt and pepper if necessary. Add a few dashes of your favorite hot sauce, making it as spicy as you'd like.
  • Remove the chicken from the oven and let it rest 5 minutes. Serve with gravy.

3 lbs chicken thighs (bone-in, skin on)

4 tablespoons butter
2 carrots (finely diced)
1 onion (finely diced)
3 garlic cloves (sliced thinly)
2 celery ribs (finely diced)
3 tablespoons flour
1 cup dry white wine
6 cups chicken stock
1 lemon (zest and juice)
5 tablespoons butter
5 white onions (sliced thinly)
1 lb cremini mushroom (sliced 1/4-inch thick)
salt and pepper
1/2 cup white wine
2 egg yolks
1/2 cup heavy whipping cream
1/8 teaspoon freshly grated nutmeg
1/4 cup parsley (chopped)

Steps:

  • Pat chicken dry and season with salt and pepper.
  • Brown chicken in oil in a heavy pan, in batches if necessary.
  • While chicken is browning, tie the herbs and peppercorns in cheesecloth with a long piece of kitchen twine.
  • Drain chicken and keep warm.
  • Add butter to the pan with carrots, onions, garlic, and celery, salt and pepper. Saute until slightly soft, about 5 minutes.
  • Sprinkle four over vegetables and quickly stir to mix with butter, then add the wine, a little bit at a time, so sauce does not clump.
  • Reduce the wine by half, then add the chicken stock. Then add the cheesecloth wrapped herbs (bouquet garnis), tying the string to the pot handle so it doesn't get lost, and add chicken to pan.
  • Reduce heat and simmer for 35 minutes or so, until chicken is done and tender.
  • Whisk together the egg mixture in a small bowl and temper it by adding a small amount of the hot cooking liquid at a time, whisking constantly, so eggs do not curdle.
  • Remove bouquet garnis from pan and stir in egg mixture and lemon zest, checking seasoning and adjusting with more salt and pepper if needed. Cook just one or two minutes to heat that, then remove from heat.
  • Saute the onions and mushrooms in butter, seasoning with salt and pepper and cooking for about 8 minutes or until lightly browned. Add the wine to the saute pan and deglaze, stirring up any browned bits, and cooking until wine is reduced by half, a few minutes or so.
  • Place some of the mushroom/onion mixture into a bowl and place some chicken and sauce on top. garnishing with parsley if desired.
  • Cook's note: I recommend serving this with dry white wine, fresh baguette with softened herb butter and a tossed salad with freshly made vinaigrette and shaved parmesan (easy accompaniments for a large meal, or cut the recipe down using the serving sizer on the recipe page).

1/4 cup fennel seeds
1 tablespoon coriander seeds
1 tablespoon white peppercorns
2 tablespoons ground cinnamon
2 tablespoons kosher salt
1/4 cup (1-ounce) sweet chili powder
1 1/2 teaspoons red pepper flakes
1/2 gallon water
7 cups kosher salt
1/4 cup light brown sugar
1 tablespoon whole black peppercorns
4 bay leaves
2 tablespoons juniper berries, optional
2 quarts ice
2 (2 1/2-pound) natural chickens
1 stick (1/2 cup) unsalted butter
1 tablespoon fresh thyme
1/3 cup sherry vinegar
8 cups arugula
3 vine ripe tomatoes in 3/4-inch slices, seasoned with salt and pepper

Steps:

  • For the spice rub: Toast the fennel seeds, coriander seeds, and peppercorns in a small heavy pan over medium heat. When the fennel turns light brown, add the cinnamon, salt, chili powder, and red pepper flakes and toss. Immediately turn the spice mixture out onto a plate to cool. Put into a food processor with the small bowl attachment and blend until the spices are evenly ground. Makes about 1 cup.
  • For the brine: Combine all the ingredients, except ice, in a stockpot, bring to a boil, and stir to dissolve the solids. Remove from the heat, add ice, and cool to room temperature. Refrigerate until thoroughly chilled.
  • Put the chickens in the brine, cover, and refrigerate for 4 to 8 hours. Turn the chickens once half way through brining. Remove the chickens from the brine and pat them dry. Remove the backbones and split the chickens in half. Coat with 1/2 cup toasted spice rub on all sides, pressing into the skin. Put the chickens on a cookie sheet and put them into the refrigerator, uncovered, overnight to dry.
  • Preheat the oven to 400 degrees F.
  • Heat a 14 to 16-inch saute pan or roasting pan over medium-high heat and add the butter. When it is melted place the chicken halves in the pan, skin side down. Cook on the stove for approximately 5 minutes, basting with the pan juices. Put chickens into the oven and roast for 20 minutes. Remove from the oven and turn the chickens over on a cookie sheet to rest for 10 to 15 minutes. Transfer chicken to a platter.
  • Put the roasting pan back on the stove, heat the pan juices to simmering, add the thyme and vinegar, and reduce by half. Spoon some of the vinaigrette over the arugula. Serve with tomato slices and Olive Oil Braised Potatoes. Spoon the rest of the sauce over the chicken and dig in.

4 skin on chicken breasts
Salt, to taste
Freshly ground black pepper, to taste
1 cup Dannon Oikos Plain Greek Nonfat Yogurt
1/2 teaspoon cumin
1/4 teaspoon smoked paprika
1 orange, zest and juice
2 cloves fresh garlic, chopped
3 tablespoons olive oil

Steps:

  • 1. Season the chicken breasts with plenty of salt and pepper on both sides then place them in a gallon sized re-sealable bag. 2. Whisk together the Dannon Oikos Plain Greek Nonfat Yogurt, cumin, smoked paprika, orange zest and juice and garlic. Pour this mixture in to the bag with the chicken, seal and make sure all of the chicken gets coated. Marinate in the refrigerator for 1 hour or up to 3. 3. Remove your chicken from the fridge 30 minutes prior to cooking to take the chill off of it. 4. Remove the chicken from the marinade, wiping off any excess and preheat your oven to 400 degrees. Discard the marinade. 5. Place a large sauté pan over medium heat. When the pan is hot, add the olive oil along with the chicken, skin side down. 6. Cook for about 2 minutes, until the skin is golden brown then flip the chicken and place the whole pan in the oven. Roast for 25-30 minutes until the chicken has finished cooking through. Remove the chicken from the oven and let it rest for 5 minutes. 7. Slice and serve with Creamless Corn (can remove skin from chicken before eating). Yield: 4 servings

For the chicken:
1/2 cup extra-virgin olive oil
10 garlic cloves, minced
5 yellow onions minced
4 pounds boneless, skinless chicken breast, diced into 1/2-inch chunks
Salt and freshly ground black pepper
1/4 cup all-purpose flour
2 serrano chiles, sliced thin
2 tablespoons sweet paprika
2 tablespoons smoked paprika
2 tablespoons cumin seeds, toasted
2 tablespoons dried oregano
4 to 5 cups chicken stock or water
For the tacos:
2 red onions, sliced thin
1 head iceberg lettuce, sliced thin
12 radishes, sliced thin
6 small tomatoes, diced
1 pint sour cream
2 bunches cilantro, leaves roughly chopped
1 (15-ounce) can pinto or black beans, drained and rinsed
1 to 2 packages corn or flour tortillas (enough for 6 to 8 medium size tacos)

Steps:

  • Directions Heat a large saute pan over medium heat and pour in enough olive oil to coat the bottom of the pan. Add the garlic and onions and cook until soft and nicely caramelized, about 10 to 12 minutes. In the meantime, season the chicken with salt and pepper. Sprinkle the flour over the chicken and toss to coat. Heat another large saute pan over medium-high heat and add 3 tablespoons of olive oil. Cook the chicken until it is lightly browned, about 6 to 8 minutes. Once the onion mixture is caramelized and softened, add the serranos, paprikas, cumin, and oregano. When the chicken is done, transfer it to the pan with the onions. Pour in the broth or water and bring to a boil. Reduce the heat and simmer until the sauce is thick and delicious, approximately 20 minutes. Adjust seasoning with salt and pepper. To serve the tacos: Put the toppings and chicken filling in bowls and allow guests to build their own tacos.

2 sprigs Parsley
1 Bay Leaf
1 teaspoon Peppercorns
3 pounds Chicken Thighs (bone-in; skin on)
Salt and Pepper
4 tablespoons Butter
2 Carrots (finely diced)
1 Onion (finely diced)
3 Garlic cloves (sliced thinly)
2 Celery Ribs (finely diced)
3 tablespoons Flour
1 cup Dry White Wine
6 cups Chicken Stock
1 Lemon (zest and juice)
For the Onions and Mushrooms:
5 tablespoons Butter
5 White Onions (sliced thinly)
1 pound Cremini (or Button or Shiitake) Mushrooms (sliced 1/4-inch thick)
Salt and Pepper
1/2 cup White Wine
For the Sauce:
2 Egg Yolks
1/2 cup Heavy Whipping Cream
1/8 teaspoon freshly grated Nutmeg
1/4 cup Parsley (chopped

Steps:

  • For the Chicken: In a large heavy bottomed pan placed over medium heat, add 3 tablespoons of olive oil. Tie the herbs and peppercorns in cheesecloth. Pat the chicken dry with paper towels and then season with salt and pepper on both sides. Working in batches so as not to overcrowd the pan, sear the chicken until golden brown, about 8 minutes for each batch. Remove the chicken and add the butter. Once melted, add the carrots, onions, garlic and celery. Season with salt and pepper and cook for about 5 minutes, or until slightly softened. Sprinkle the vegetables with the flour and stir to combine with the butter. Cook for a minute before adding the wine. Cook the wine down by half and then add the chicken stock. Drop in the herb bundle and add the chicken back to the pot. Cover and simmer gently for about 35 minutes, or until the meat is tender. Add the egg sauce mixture to the chicken pot and then bring the chicken back up to a simmer. This will thicken the sauce into something creamy and rich. Stir in the lemon zest and juice. Taste and adjust seasoning, if necessary. Remove the herb bundle and discard. For the Onions and Mushrooms: Heat a sauté pan over medium-high heat and add the butter. Once the butter is melted and foamy, toss in the onions and mushrooms and season with salt and pepper. Let cook for about 7 to 8 minutes, or until they have achieved a golden color. Deglaze with the wine and reduce by half, about 2 to 3 minutes. For the Sauce: Whisk together the egg yolks and cream. Add some freshly grated nutmeg. Ladle slowly some liquid from the braised chicken into the egg mixture, tempering the eggs so they don't scramble. Whisk in one more large ladle full, stirring constantly. Add the egg mixture back to the pot and stir to combine. Cook for 2 to 3 more minutes at a gentle simmer. Plate a spoonful of the onion and mushrooms in the center of each individual bowl. Ladle in the chicken fricassee, top with sauce, and garnish with the parsley.

1 can(s) (10 oz) cream of mushroom soup (i used lower sodium soup)
1 c sour cream
1/2 c shredded sharp cheddar cheese
1/4 tsp ground black pepper
1 tsp no salt seasoning, such as mrs. dash
1 Tbsp dried parsley flakes
1/8 c dried onion flakes

  • 1. Preheat oven to 350F. Coat a 8x8-inch baking dish with nonstick cooking spray.
  • 2. Place thighs in baking dish,
  • 3. In mixing bowl, whisk remaining ingredients together. Cover the thighs with soup mixture and cover with foil.
  • 4. Bake 50 minutes, remove foil and bake another 10 minutes, until hot and bubbly.
  • 5. Serve thighs with some sauce on each.

3 tablespoons butter
1/2 cup finely chopped onion
2 tablespoons finely chopped shallots
1 small tart apple, peeled, cored and chopped coarsely (about 1/4 C)
3 tablespoons butter
1 lb chicken liver, cut in halves
1/4 cup calvados
2 -4 tablespoons heavy cream
10 tablespoons butter
1 teaspoon lemon juice
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 -2 tablespoon finely chopped truffle (optional)
1/2 lb butter, clarified (optional)

Steps:

  • Clean the chicken livers carefully, cutting away any green or brown spots, then wash them quickly under cold running water and pat them dry with paper towels. Now cut them in half.
  • In a large heavy frying pan, melt the first 3 T butter. Add the onions and shallots and cook over moderate heat for 5 to 7 minutes, stirring occasionally, until the onions and soft and lightly colored. M ix in the chopped apple and cook 3 or 4 minutes longer. When soft enough to mash with a spoon, transfer to the bowl of a food processor.
  • In the same pan, melt the second 3 T butter, this time over rather high heat. As the butter foam subsides, add the livers. Over high heat, turn them in the sputtering butter with a wooden spoon for about 3 or 4 minutes. When the livers are quite brown on the wutdiesa and still pink within, remove the pan fro the heat and flame them with the Calvados, which you have warmed slightly. Let the alcohot burn itself out completely.
  • Now add the livers and all their juices to the onion-apple mixture. Moisten with 2 T cream and process. Add more cream if necessary. Process until very smooth. With a rubber spatula, crape the mixture out into a fine mest sieve set over a mixing bowl. Rub the past through the sieve with the back of a spoon. Let mixture cool completely.
  • Cream the remaining 10 T of butter. When creamed, beat the cool liver paste, little by little into the butter. Stir in the teaspoon of lemon juice and the salt and pepper. Don't be sparing with the salt, since chilling deadens flavor, the pate will be surprisingly less salty than you thought.
  • Pack the pate into small terrines or any attravtive quart-size container. Smooth the top witha spatula and pour over it enough clarified butter to cover it completely. This will not only prevent the pate from changing color as it chills, but will make an almost airtight covering that lessens the possibility of spoilage. (If you do not use the clarified butter, cover the crocks with plastic wrap.) Refrigerate at least 3 hours.
  • May be frozen.

1 chicken carcass, meat removed and reserved for another time
3 carrots, cubed
3 stalks celery, cubed
1 bunch fresh parsley
4 eggs
4 teaspoons vegetable oil
1/2 teaspoon nutmeg
1 cup matzo meal
salt and pepper
chicken broth
1 inch piece ginger, grated
2 cups baby spinach leaves
3 green onions, sliced
1 cup bean sprouts

Steps:

  • Roast chicken carcass in 400 degree oven until golden brown. Place into a stockpot along with the carrots, celery, onions, parsley and thyme. Cover with cold water and bring to a boil and then let simmer for 1 hour. Strain.
  • For the matzo balls:.
  • Whisk together eggs, oil, nutmeg, and salt and pepper to taste.
  • Stir in matzo meal and let rest for 20 minutes. Form into balls with two spoons.
  • For the soup base:.
  • Bring chicken broth to a simmer and add matzo balls. Cook for 10 minutes: they are done when they float to the top. Add ginger, spinach, onions, and bean sprouts and stir to wilt, just prior to serving.

1 3-pound Chicken (halved)
1/4 bunch Parsley (leaves only)
2 cups Lemon Juice
1 cup Olive Oil
1/4 cup Red Wine Vinega
3 cloves Garlic (sliced)
1/4 Cup Fresh Oregano (leaves only - chopped)
4 Potatoes (scrubbed and sliced into 1/2-inch thick disks)
Vegetable Oil (to fry)
Salt and Pepper

Steps:

  • Preheat oven to 400F.
  • Whisk together the lemon juice, olive oil, red wine vinegar, garlic, oregano, and season generously with salt and pepper. Pour over chicken and marinate for at least 30 minutes.
  • Heat a cast iron skillet over medium-high heat. Sear the chicken, skin side down. Flip the chicken over, then pour the remaining marinade into the pan and immediately transfer to the hot oven. Roast until chicken finishes cooking through, about 15 minutes.
  • Preheat 1/2-inch of vegetable oil in a cast iron pan. Arrange the potatoes in the pan and fry until crisp, about 2 minutes per side. Transfer to a paper towel lined plate, and season with salt and pepper while still hot.
  • Carve the chicken into 8 pieces, and serve with the potatoes, spooning pan sauce over the chicken to serve. Garnish to taste with parsley.
