CHICKEN BREASTS LOMBARDY

Wonderful dish for company or just when you are in the mood for a little something special. Serve over pasta or rice with a nice salad.

1 (8 ounce) package sliced fresh mushrooms
4 tablespoons butter, divided, or more as needed
6 (5 ounce) skinless, boneless chicken breast halves
½ cup all-purpose flour
¾ cup Marsala wine
1 cup low-sodium chicken broth
¼ teaspoon salt
⅛ teaspoon ground black pepper
½ cup shredded mozzarella cheese
½ cup grated Parmesan cheese
2 stalks green onions, chopped

Steps:

  • Melt 2 tablespoons butter in a large, nonstick skillet over medium-high heat. Add mushrooms and cook, stirring constantly, just until tender, 3 to 5 minutes. Remove from the heat and set aside.
  • Cut each chicken breast in half lengthwise. Place between 2 sheets of heavy-duty plastic wrap and flatten with a meat mallet or rolling pin to a thickness of 1/8 inch. Dredge chicken pieces in flour.
  • Preheat the oven to 450 degrees F (230 degrees C). Lightly grease a 9x13-inch baking dish.
  • Melt 1 to 2 tablespoons butter in the same skillet over medium heat. Add chicken in batches, adding more butter as needed, and cook until golden, 3 to 4 minutes per side. Transfer chicken to the prepared baking dish, overlapping to fit if necessary. Reserve pan drippings in the skillet. Sprinkle mushrooms evenly over the chicken.
  • Add wine and broth to the skillet; bring to a boil. Reduce heat and simmer, uncovered and stirring occasionally, for 10 minutes. Stir in salt and pepper. Pour sauce over the chicken. Combine mozzarella and Parmesan cheeses with green onions; sprinkle over the chicken.
  • Bake, uncovered, in the preheated oven until chicken is no longer pink in the center and the juices run clear and cheese melts, 12 to 14 minutes.

1/2 cup flour
1/2 cup butter

Steps:

  • Place chicken between 2 sheets wax paper.
  • Flatten to 1/4 inch thickness using a meat mallet or rolling pin.

  • Cook over low heat 3 to 4 minutes on each side or until golden brown.

½ cup all-purpose flour
½ teaspoon garlic and herb seasoning blend (such as Mrs. Dash®)
8 (4 ounce) boneless skinless chicken breast halves, pounded to 1/4-inch thickness
6 tablespoons salted butter, or as needed
1 cup sliced mushrooms
½ cup Marsala wine
⅓ cup chicken broth
¼ cup grated Parmesan cheese, or more to taste
½ cup mozzarella cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking pan.
  • Combine flour and seasoning in a shallow bowl. Dredge chicken pieces lightly in the flour mixture.
  • Melt 2 tablespoons of butter in a large skillet over medium-low heat. Add chicken breasts in batches, 4 pieces at a time, and brown for, 3 to 4 minutes on each side, adding more butter as needed. Transfer browned chicken to the prepared baking pan.

1 (8 ounce) package applewood smoked bacon
¼ cup brown sugar
1 (8 ounce) package sliced fresh mushrooms
2 tablespoons butter, melted
6 (4 ounce) skinless, boneless chicken breast halves
½ cup all-purpose flour
¼ cup butter
½ cup chicken broth
½ teaspoon salt
⅛ teaspoon ground black pepper
½ cup shredded mozzarella cheese
½ cup shredded Parmesan cheese
2 stalks green onions, chopped

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C).
  • Lay bacon strips side by side and slightly overlapping on a baking sheet. Rub brown sugar on bacon until all brown sugar is gone.
  • Bake in the preheated oven until bacon is done, about 30 minutes. Remove from the oven and set aside to cool.
  • Increase the oven temperature to 450 degrees F (230 degrees C). Lightly grease a 9x13-inch baking dish.

1 c fresh mushrooms, sliced
2 Tbsp butter, melted
8 chicken breasts, boneless and skinless
1/3 c all purpose flour or wondra
1/3 c butter, melted and divided
1/2 c marsala wine
1/3 c chicken broth
1/4 tsp salt
1/8 tsp pepper
1/2 c shredded fontina or mozzarella cheese
1/2 c grated parmesan cheese
1/4 c green onions, chopped
***note: this recipe does not call for garlic, but i add granulated garlic to my chicken breasts before dredging in flour.

Steps:

  • 1. COOK mushrooms in 2 tablespoons butter in a large skillet, stirring constantly, until tender. Remove from heat, and set mushrooms aside.
  • 2. CUT each chicken breast half in half lengthwise. Place chicken between 2 sheets of heavy-duty plastic wrap; flatten 1/8 inch thickness, using meat mallet or rolling pin.
  • 3. DREDGE chicken lightly in flour. Place 5 or 6 pieces of chicken in 1 to 2 tablespoons butter in large skillet; cook over medium heat 3 to 4 minutes on each side or until golden.
  • 4. PLACE chicken in a lightly greased 13 X 9 X 2 inch baking dish, overlapping edges. Repeat procedure with remaining chicken and butter. Reserve pan drippings in skillet. Sprinkle reserved mushrooms over chicken.
  • 5. ADD wine and broth to reserved pan drippings in skillet. Bring to a boil; reduce heat, and simmer uncovered, 8 minutes, stirring occasionally. Stir in salt and pepper. Pour sauce evenly over chicken.
  • 6. COMBINE cheeses and green onions; sprinkle over chicken. Bake, uncovered, at 375 F degrees for 20 minutes. Broil 6 inches from heat (with electric oven door partially opened) 1 to 2 minutes or until lightly browned.

8 oz fresh sliced mushrooms
1/3 c plain flour
1/3 c butter
1 c marsala wine
1/4 tsp salt
1/8 tsp pepper
8 boneless skinless chicken breast
1/2 c shredded fontina or mozzarella cheese
1/2 c grated parmesan cheese
1/4 c chopped green onions
1/2 c chicken broth

Steps:

  • 1. Saute the mushrooms in 2 tablespoons of butter in a large skillet until tender and set aside.
  • 2. Cut each chicken breast in half lengthwise. Pound until 1/8 inch thick between saran wrap or wax paper.
  • 3. Coat the chicken with the flour. Melt 2 tablespoons of butter in another large skillet over medium heat. Add the chicken in batches cooking each side for 3 to 4 minutes. Remove each batch and place the chicken in a 9x13 baking dish, over lapping if necessary. Sprinkle the mushrooms over the chicken.
  • 4. To make the sauce, add the wine and chicken broth to the drippings in the skillet, stirring to deglaze the skillet. Bring to a boil and reduce the heat to simmer for 8 minutes, stirring occasionally. If you need to thicken add a tablespoon of cornstarch and a little chicken broth that is blended before you put it in the sauce. Stir in the salt and pepper, then pour over the chicken.
  • 5. Combine the fontina, parmesan cheese and green onions in a bowl. Sprinkle over the chicken and bake 20 mins at 375 degrees. Broil for 2 mins 6 inches from the heat source. . Leave the oven door open a bit

2 cups mushrooms
2 tablespoons butter
6 boneless skinless chicken breasts
1/2 cup flour
4 tablespoons butter, divided
3/4 cup marsala wine

1/4 teaspoon salt

1/2 cup mozzarella cheese, shredded
1/2 cup parmesan cheese, shredded

Steps:

  • Melt 2 tablespoons butter in skillet and then add sliced mushrooms, cooking until just tender. Remove from pan and set aside.
  • Place each chicken breast between plastic wrap and flatten to 1/4 inch using a meat mallet.
  • Dredge each breast in flour to lightly coat.
  • Melt 2 tablespoons butter in same skillet and add half of breasts. Saute until golden about 4 minutes each side.
  • Repeat with remaining 2 tablespoons of butter and the other 3 breasts.
  • Place breasts in a lightly greased 9x13 pan. Top with the mushrooms.
  • To the skillet add the wine and chicken broth. Stir up drippings from pan and bring to a boil. Add the salt and pepper. Decrease heat and simmer, uncovered 8 minutes, stirring occasionally.
  • Pour sauce over chicken and mushrooms.
  • Mix the cheeses together and sprinkle on the chicken.
  • Bake 12-14 minutes at 450 degrees uncovered.

1 Tbsp butter
1 pkg sliced mushrooms (fresh, 8 oz)
3 large chicken breasts (boneless, skinless)
1/2 c flour
4 Tbsp butter
3/4 c marsala wine
1/2 c chicken broth, low sodium
1/2 tsp salt
1/2 tsp pepper
1/2 c mozzarella cheese, shredded
1/2 c parmesan cheese, shredded
2 green onions, chopped

Steps:

  • 1. Prepare baking dish with a light coating of non-stick spray. Set aside. Heat tablespoon of butter in non-stick skillet over medium-high heat. Heat until melted then add mushrooms. Stir constantly for about 4 minutes. Remove pan from heat, place mushrooms in bowl.
  • 2. Cut each breast in half, lengthwise on the transverse (making the breast thin). Using a rolling pin, flatten each breast half to 1/8 inch thickness. I cover the breast with plastic wrap first. Dredge flattened breasts in flour. Note: Also okay to use 6 small breasts, instead of 3 large ones but don't cut the small ones in half, just flatten.
  • 3. Put non-stick pan back on burner over medium heat. Melt two tablespoons of butter in the pan and place three of your chicken pieces in the pan. Cook for 4 minutes on each side until golden. Place chicken in prepared baking dish. Heat remaining two tablespoons in pan and brown last three chicken pieces until golden, 4 minutes on each side. Place in baking dish. It's okay to overlap the edges of the chicken pieces.
  • 4. Add wine and broth to the skillet. Bring to a boil; reduce heat and simmer uncovered, 10 minutes, stirring occasionally. Stir in salt and pepper.
  • 5. Sprinkle mushrooms over chicken, in the baking dish. Pour sauce over mushrooms and chicken. Combine cheeses and green onions, sprinkle over chicken. Bake uncovered at 450 degrees for about 12 minutes, until the cheese melts.

  • 1. Heat a large skillet over medium-high heat and add 2 Tbs. butter. 2. Add the mushrooms and cook, stirring frequently, until they begin to brown; remove them and set aside. 3. Slice chicken breasts in half lengthwise. Flatten each piece between 2 sheets of plastic wrap with a meat mallet to about 1/4" thickness. Dredge each flattened piece in the flour. 4. In the same pan the mushrooms were cooked in; add 1 Tbs. butter and heat over medium-high heat 5. Add 2 chicken breasts and brown well on both sides. Remove and set aside. Repeat the browning process 2 more times (using a Tbs. of butter with each shift.) You will have to do this in shifts so the chicken is not crowded in the pan and browns evenly. Don't drain the drippings, it will be needed for the Marsala sauce. 6. Preheat oven to 450 degrees. Lightly grease a 13 x 9 baking pan. Add the chicken to the prepared baking pan. Sprinkle evenly with the mushrooms. 7. After all the chicken is browned, using the same pan with the collected drippings, add the wine, chicken stock, salt and pepper. Bring to a boil, reduce heat and simmer uncovered for 10 minutes. Pour the sauce evenly over the chicken. 8. Mix the cheeses and green onions and distribute over the top of the chicken. 9. Bake for 15-20 minutes until cheese is melted and just starting to brown.
