1/4 cup honey
1/4 cup balsamic vinegar
1/4 cup minced fresh rosemary
2 tablespoons olive oil
6 bone-in skinless chicken breast halves (7 ounces each)
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a small bowl, combine the honey, vinegar, rosemary and oil. Pour half of the marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for 2 hours. Cover and refrigerate for 2 hours. Cover and refrigerate remaining marinade., Drain and discard marinade from chicken. Place chicken bone side down in a 13-in. x 9-in. baking pan. Sprinkle with salt and pepper., Bake, uncovered, at 350° for 55-65 minutes or until a thermometer reaches 170°, basting occasionally with reserved marinade.

12 chicken legs
1/3 cup of ketchup
1/2 cup of honey
1/4 cup of soy sauce
1 teaspoon of mustard
1/2 teaspoon of onion powder
1/2 teaspoon of garlic powder

Steps:

  • Preheat oven to 400 degrees. Line a pan with foil and spray with nonstick cooking spray.
  • Place the chicken on the pan in a single layer.
  • In a medium-size bowl mix the ketchup, honey, soy sauce, mustard, onion powder, and garlic powder to make the sauce.
  • Spoon the sauce evenly over the chicken.
  • Bake for approximately 40 minutes. Remove from the oven and turn all of the chicken legs over.
  • Turn the oven up to 425 degrees. Return the chicken to the oven for another 10 minutes.
  • Serve with rice or potatoes and a vegetable.

These baked chicken drumsticks rubbed with rosemary are so easy to make at home. We like to use a baking rack inserted into a rimmed baking sheet for this - if you do not have one, you can just place the chicken directly onto an aluminum-lined baking sheet.

2 pounds skin-on chicken drumsticks (about 6 drumsticks)
1 tablespoon neutral flavored oil such as vegetable or grape seed
1 tablespoon finely chopped fresh rosemary or 1 teaspoon dried rosemary
3/4 teaspoon Kosher salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Heat the oven to 425 degrees F. Line a baking sheet with aluminum foil. If you have one that fits, lay an oven-safe rack inside the baking sheet, this helps get the chicken extra crispy - see note below. Spray rack with nonstick cooking spray.
  • Pat the drumsticks dry, and then rub with the oil, rosemary, salt, and pepper. Arrange the chicken onto the rack/baking sheet.
  • Bake for 20 minutes, turn the chicken, and then bake until an instant read thermometer inserted into the thickest part of the chicken reads 165 degrees Fahrenheit; 20 to 25 minutes. Let chicken rest 5 minutes, and then serve.

12 chicken legs
2 cloves garlic, minced
4 stems rosemary, leaves picked and roughly chopped
4 cups panko bread crumbs
Kosher salt and freshly ground black pepper
2 eggs
2 cups milk
3 cups all-purpose flour
Extra-virgin olive oil
Lemon wedges, for serving

Steps:

  • Preheat the oven to 350 degrees F. Put a sheet tray in the oven to preheat.
  • Wash and trim the chicken legs of any excess fat. Mix the garlic, rosemary and panko together in a shallow rimmed dish and season well with salt and pepper. Alternately, crush the garlic and rosemary with some olive oil and salt in a mortar and pestle.
  • Crack the eggs into a similar dish, add the milk and whisk to combine. Season with salt and pepper, to taste. In another dish add the flour and season with salt and pepper, to taste.
  • Take the chicken legs and 1 at a time, dredge in the flour, then the egg wash and then coat well with the rosemary-garlic panko bread crumbs. Lay the chicken legs out on a tray lined with parchment paper, as you work. Refrigerate the legs for about 15 to 20 minutes for the breading to set.
  • Remove the hot sheet tray from the oven and drizzle with a good amount of olive oil. Arrange the chicken legs carefully on the tray, spacing them out evenly (the chicken will sizzle when added to the hot oil). Roast until the chicken legs are golden and crispy, about 35 to 40 minutes Remove the chicken from the oven to a serving platter. Season with salt and serve with lemon wedges.

8 chicken legs
8 sprigs fresh rosemary
1/2 cup honey
salt and pepper
16 sheets heavy-duty aluminum foil

Steps:

  • Preheat the barbecue (setting the burners to hig) or preheat oven to 400°F / 200°C with the rack in the middle position.
  • For the BBQ -Place each chicken leg on a double sheet of foil.
  • Top each chciken piece with some honey and a rosemary sprig. Season with salt and pepper.
  • Lift the edges of the sheets of foil and crimp them together to form a tightly sealed packet. Your chicken will have a double layer of foil.
  • Grill until the chicken is cooked and the meat falls from the bone- approx 15 minutes per side.
  • Oven Method -- Arrange the chicken (not wrapped in foil) on a baking sheet and cook for about 45 minutes.

3 juicy lemons
50g butter
3 tbsp clear honey
leaves from 4 rosemary sprigs
1 garlic clove , finely chopped
8 chicken pieces, such as thighs and drumsticks, with skin
750g potatoes , peeled and cut into smallish chunks
green salad , to serve

Steps:

  • Preheat the oven to 200C/Gas 6/fan180C. Squeeze the juice from 2 lemons into a small pan and heat with the butter, honey, rosemary, garlic and salt and pepper, until the butter melts and it smells fragrant.
  • Lay the chicken in a roasting tin - don't pile it up or it won't cook so well. Add the potatoes and drizzle with lemon butter to coat evenly. Cut the third lemon into 8 wedges and tuck them in. (Can be made up to 2 hours ahead up to this point.)
  • Roast for 50 minutes - 1 hour until the chicken is cooked and the potatoes are crisp and golden. Serve with a green salad.

3 pounds bone-in, skin-on chicken thighs and drumsticks (to substitute breasts, see Tip)
Salt and black pepper
2 large garlic cloves, finely grated or crushed to a paste
1 tablespoon honey
1 tablespoon extra-virgin olive oil, plus more for drizzling
1/4 teaspoon red-pepper flakes, plus more for serving
2 fresh rosemary sprigs
1 lemon, preferably a Meyer lemon, thinly sliced and seeded
2 ounces feta, crumbled into large pieces (a heaping 1/2 cup)
Chopped mint, dill or parsley, for serving

Steps:

  • Season chicken all over with salt and pepper. In a large bowl, mix together garlic, honey, olive oil and 1/4 teaspoon red-pepper flakes. Add chicken and toss well with your hands, spreading the garlic paste all over the chicken pieces. (Don't worry if the honey is a little clumpy.) Add rosemary sprigs and lemon slices and toss to combine. Let marinate at room temperature for 30 minutes, or up to 8 hours in the refrigerator.
  • Heat oven to 425 degrees. Line a sheet pan with a silicone liner or parchment paper.
  • Spread chicken and lemons across a single layer in the lined pan, tucking in the rosemary sprigs. Drizzle oil generously over everything. Roast for 20 minutes.
  • Using tongs, turn over the chicken pieces, and give the lemons a stir. Sprinkle feta on top. Continue to bake for 20 to 25 minutes longer, until the chicken is deeply bronzed and cooked through, and an instant-read thermometer inserted into the thickest part of the thigh or drumstick registers 165 degrees. 1 lemon, halved

  • Pat chicken dry and rub all over with a lemon half. Season with salt, pepper, and half of rosemary. In a 10-inch heavy skillet heat oil over moderately high heat until hot but not smoking and sauté chicken, skin sides down, 7 minutes, or until golden brown. Turn chicken over and squeeze juice from remaining lemon half over chicken. Cook chicken, covered, over moderately low heat 30 minutes more, or until cooked through.
  • Transfer chicken to 2 plates. Add garlic and remaining rosemary to skillet and sauté over moderately high heat until just golden. Add water, scraping to loosen brown bits, and simmer 1 minute. Drizzle sauce over chicken.

This is always a hit when I make it for dinner parties and Boxing Day dinner because the chicken is always fall-off-the-bone juicy and people love the glaze. People always go for seconds! You may quarter 2 chickens instead if you aren't able to get just legs from your butcher, but I find the legs are juicier and save money. Serve this dish with fragrant rice and dilled carrots or roasted asparagus.

1 cup honey
1 cup orange juice with pulp
½ cup unsalted butter, at room temperature
7 sprigs fresh rosemary, finely chopped

  • Sprinkle chicken with salt and place in a large glass or plastic bowl.
