Steps:
- in a small frypan, saute the chicken in 1 tablespoon of the oil, stirring until cooked through but not brown. drain and put aside.
- make the rice noodles according to directions on packet and put aside.
- in a large pot, using the other tablespoon of oil, saute the onion, garlic and chilli until onion is translucent.
- add the laksa paste and stir till fragrant. add the stock and coconut cream and stir until boiling.
- add the chicken, sugar, fish sauce and lime leaves. simmer for 2 minutes. remove from heat.
- TO SERVE:.
- place desired amount of noodles into bowls, ladle laksa over the noodles, distributing chicken evenly. top with some bean shoots, chilli and coriander.

EASY PUMPKIN LAKSA SOUP
My friend, Ginny, calls this her "Thai-soupie thingo" - it's another soup when you are hungry and pushed for time. You can use chicken which is already cooked, otherwise fry raw chicken breasts in the usual manner. The preparation time is based on chicken already cooked.

- Heat oil ( not too much) and gently heat the curry paste.
- Add cooked chicken.
- Add pumpkin soup, coconut milk and chicken stock.
- Gently heat through until simmering.
- Plate the soup and just before serving, sprinkle over some spring onions and coriander into each bowl.

- In a slow cooker, combine the chicken breasts and Italian-style dressing.
- Cover, and cook on Low for 6 to 8 hours.
- Drain off the juices, and shred the chicken meat. In a medium bowl, mix the soup, broth, cream cheese, basil, thyme, salt, and pepper. Pour over the chicken in the slow cooker. Continue cooking on Low for 1 hour.

Steps:
- In a non stick pan, add the cheese finger, and turn on all sides to acheive a golden brown crust.
- Remove cheese from pan and set aside until needed.
- On a salad plate add the lettuce, then the onion, tomatoe, carrot, red pepper slices and kolbasa.
- Add the cheese slices last and garnish with the green onion.
- Now I add all the dressing ingredients together in a jar and shake until well blended.
- Pour over the salad, adding as much or as little as you prefer and enjoy!

- Saute garlic, ginger, onion and carrot in oil for a few minutes.
- Add chicken, stock, tomatoes and chilli sauce.
- Mash the tomatoes and simmer for 10 minutes.
- Add noodles and continue to cook until noodles are ready.

- Serve with coriander or parsley sprinkled over.
