SLOW COOKER LAMB (OR CHICKEN) KORMA

Slow Cooker Lamb (Or Chicken) Korma image

A mild, rich, creamy curry. This recipe is adapted from "Creamy lamb and almond curry" from Slow Cooking Curry & Spice Dishes (Humphries). Instead of using creme fraiche, I used creamed coconut. Delicious, and the meat just falls apart in your mouth! To grind the almonds, you can use a mortar and pestle.

AMU'S CHICKEN KORMA

Amu's Chicken Korma image

This Bangladeshi-style chicken korma, named for my mother, Amu, is gently spiced and enriched with yogurt instead of cream or nuts, resulting in a light and bright sauce. This style of braising adds very little liquid, allowing the chicken to stew in its own juices. For full flavor, cook the korma until the fat breaks out of the sauce and pools on the surface. Keep it traditional and serve with paratha or rice, or pull the meat off the bones and pile between mayo-slathered white bread to make a chicken korma sandwich - and, of course, cut on a diagonal.

Time 2h

Yield 4 servings

Number Of Ingredients 14

1 large onion, peeled, plus more for serving
1 (2-inch) piece ginger, peeled and thinly sliced
4 garlic cloves, smashed and peeled
1/3 cup whole-milk plain or Greek-style yogurt, plus more for serving
2 teaspoons kosher salt, plus more to taste
1 (4-pound) chicken, cut into 10 pieces, skin removed, or 3 pounds bone-in chicken parts, skin removed
1/4 cup ghee or neutral oil
1 tablespoon ground coriander
1 bay leaf
1 (3-inch) cinnamon stick, snapped in half
3 green cardamom pods, cracked
3 small green chiles, stemmed, plus more for serving
White bread, mayonnaise, paratha or steamed rice, for serving
Cucumber-Tomato Salad, for serving (optional)

Steps:

  • Cut onion in half, trim off the root, and thinly slice one half from root to stem. Set aside. Roughly chop the remaining onion half and purée in a blender, adding as little water as needed to blend until smooth. Pour into a small bowl. Set aside.
  • In the same blender (no need to wash it out), purée ginger, garlic, yogurt and kosher salt, adding as little water as needed to blend until smooth. Pour into a large bowl. Set aside. Pat chicken dry with paper towels, add to bowl with yogurt purée and toss with your hands to coat.
  • In a medium Dutch oven, pot or karahi over medium-high heat, add ghee and reserved sliced onions, and cook, stirring often, until crisp and deeply browned, about 10 to 12 minutes. (The onions will continue to brown after removing from heat, so scoop them out of the pot when they are a shade lighter than the desired final color.) Leaving behind the fat, transfer to a plate with a slotted spoon, and spread them out so they cool down quickly and don't clump together.
  • Add the onion purée, coriander, bay leaf, cinnamon stick, cardamom pods and a big pinch of kosher salt to remaining ghee and cook over medium-high heat, stirring frequently, until deeply browned and aromatic, about 10 to 12 minutes.
  • Add chicken, scraping in all the yogurt marinade, and stir to coat in onion paste. Reduce heat to medium-low, cover and simmer until the chicken releases its liquid, about 10 minutes. Partly cover, and cook, stirring occasionally, until the chicken is falling off the bone, the sauce is thick and creamy, and the fat breaks out of the sauce, about 30 to 35 minutes. (You want it to be saucy but thick. Add water a splash as a time, if needed, while cooking.)
  • Add green chiles, three-fourths of the reserved frizzled onions and more kosher salt to taste. Gently stir to combine. Cook until fragrant, 2 to 3 minutes. Top with remaining frizzled onions, and serve with paratha, rice, or as a sandwich by pulling the meat off the bone, dressing in the korma sauce, and placing between mayonnaise-slathered sliced of untoasted bread. Serve with Cucumber-Tomato Salad or additional raw onion, green chile and yogurt. Leftovers can be stored in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop over medium-low heat with a splash of water.

BANGLADESHI CHICKEN KORMA

Bangladeshi Chicken Korma image

Homestyle Bangladeshi chicken korma is likely more aromatic, flavorful, and deeply chicken-flavored than the heavy, creamy versions served in Indian restaurants. This recipe, adapted from Shama Mubdi, is also incredibly easy to make: You just stir everything together in a pot and turn on the heat. A last-minute addition of butter-fried onions adds sweet complexity. Serve with basmati rice and salad or South Asian pickles.

Provided by Francis Lam

Categories     dinner, lunch, curries, main course

Time 1h

Yield 4 servings

Number Of Ingredients 15

2 pounds skinless, bone-in chicken pieces (preferably dark meat)
1 teaspoon salt, plus more to taste
1 medium onion, peeled
1 1 1/2-inch knob of ginger, peeled and chopped
3 cloves garlic, chopped
1/2 cup whole-milk yogurt
4 to 6 green cardamom pods, cracked open
3 to 5 cloves
2 bay leaves
1 3-inch stick cinnamon
1/2 teaspoon sugar
1/2 teaspoon black peppercorns
2 to 3 small hot green chiles (optional)
2 tablespoons butter
2 tablespoons vegetable oil

Steps:

  • Place the chicken in a medium Dutch oven, and season with 1 teaspoon salt. Thinly slice 1/4 of the onion, and set aside. Roughly chop the rest of the onion, and purée it in a blender with the ginger, garlic and 3 tablespoons of water, until smooth. Add splashes of water to keep it moving, if necessary.
  • Combine the onion purée with the chicken, yogurt, cardamom, cloves, bay leaves, cinnamon and peppercorns. Bring the mixture to a simmer over medium-high heat, stirring. Cover the pot until the chicken releases its juices, 5 to 7 minutes.
  • Uncover the pot, and adjust the heat to maintain a gentle simmer. Cook, stirring and flipping the chicken occasionally, until tender and the sauce is gravylike in consistency, about 35 minutes. Adjust the thickness of the sauce by adding water or cooking it down. Stir in the sugar. Pierce the chiles with a knife, then add them. Season to taste with salt. Keep warm over low heat.
  • Heat the butter and oil in a small saucepan over medium-high heat. After it foams, add the sliced onions, and cook, stirring, until they are richly browned, 3 to 4 minutes. Season with a pinch of salt. Add the onion mixture to the korma. Serve with steamed basmati rice.

Most of them require little preparation, although this is definitely a time when you will want to assemble all ingredients ahead of time to ease preparation. All of the spices can be found at Indian markets or spice markets. The tamarind pulp can be purchased in compressed bricks at ethnic markets; Lakshmi prefers Thai tamarind as it tends to be less dry. Serve the stew on a bed of plain basmati rice. By way of the Chicago Tribune. A lot of the prep can be done while the chicken is marinating, thus shortening the total cooking time.

Yield 4 serving(s)

Number Of Ingredients 20

2 lbs boneless skinless chicken breasts, cut into stew chunks
2 tablespoons white wine vinegar
1 ounce tamarind pulp (a golf ball sized piece)
1 cup boiling water
10 green cardamom pods (seeds removed from pods, pods discarded)
6 cloves
3 star anise, whole
1/2 teaspoon black peppercorns
4 plum tomatoes, each cut into 8 pieces
1 pint half-and-half
3 tablespoons sesame oil
3 -4 hot red chili peppers, dried
3 black cardamom pods
1 cinnamon stick
3 garlic cloves, minced
9 shallots, thinly sliced
1/2 cup raw cashews, crushed in a mortar and pestle
1 inch piece gingerroot, minced
1 teaspoon garam masala
1 teaspoon salt

Steps:

  • Combine the chicken and vinegar in a large bowl; cover; refrigerate 30 minutes.
  • Place tamarind in a small bowl; cover with boiling water; let stand 20 minutes.
  • Combine the green cardamom seeds, cloves, star anise and peppercorns in a mortar and pestle or spice grinder; grind until combined.
  • Mix the ground spices into the tamarind gravy; set aside.
  • Combine the tomatoes and half-and-half in a food processor or blender; puree; set aside.
  • Heat the oil in a deep, heavy skillet over medium heat; stir in the red chilies, black cardamom and cinnamon stick and cook 2 minutes.
  • Add the garlic, shallots, cashews and ginger; cook, stirring, 6-8 minutes.
  • Add the reserved tamarind and ground-spice mixture; cook, stirring, 2 minutes.
  • Add the reserved tomato mixture; turn heat to medium-low.
  • Stir in the garam masala; cook, until mixture thickens, about 15-20 minutes. Season with the salt.
  • Add the chicken; cook, stirring, 7 minutes.
  • Note: When soaking the tamarind, push down on the pulp with the back of a spoon; the tamarind will begin to break down; after soaking time is over, break up the tamarind with fingers or a spoon, then push the mixture through a fine-mesh sieve.

PRESSURE COOKER CHICKEN KORMA

Pressure Cooker Chicken Korma image

Flavored with cardamom and saffron-infused cream, then garnished with golden raisins and slivered almonds, chicken korma is a delicate and elegant dish. This version, by the cookbook author Madhur Jaffrey, is quickly made in an electric pressure cooker. You can substitute chicken breasts here, as long as you buy them still on the bone. Boneless chicken is apt to overcook. Serve this over basmati rice to soak up the rich, creamy sauce.

Time 2h35m

Yield 4 to 6 servings

Number Of Ingredients 18

1/4 cup heavy cream
A very generous pinch of saffron threads, plus more if you can afford it
6 skinless, bone-in chicken thighs (about 3 pounds)
1 1/4 teaspoon kosher salt, plus more as needed
Black pepper
1/4 cup peanut or olive oil
3 tablespoons golden raisins
3 tablespoons slivered blanched almonds
5 whole green cardamom pods
1 medium stick cinnamon
1 medium onion, thinly sliced
1 tablespoon grated fresh ginger
4 garlic cloves, finely grated or minced
1 tablespoon ground coriander seeds
2 teaspoons ground cumin
1/2 cup plain yogurt
1/4 to 1 teaspoon chile powder, to taste
1/2 teaspoon garam masala

Steps:

  • Heat cream in a microwave or in a small pot on the stove, then add the saffron. Set it aside for 2 hours to draw out the saffron color.
  • Season chicken generously with salt and pepper. Set the sauté setting on the electric pressure cooker to high. Add in oil; wait a few seconds and stir in the golden raisins. When they're plump (it will only take a few seconds), transfer them with a slotted spoon to a small bowl.
  • Add almonds into the oil. Stir. Once they're golden, 30 seconds to 1 minute, transfer them with the slotted spoon and to the bowl with the raisins.
  • Add cardamom pods and cinnamon stick. Brown chicken, 2 to 3 pieces at a time, 3 to 4 minutes per side. Transfer them as they're finished to a bowl or plate. Repeat with remaining chicken.
  • Stir onions into the pot and cook until starting to brown, 3 to 4 minutes. Stir in ginger and garlic, and cook for 30 seconds. Stir in coriander and cumin. Add a few tablespoons of water and scrape up what you can from the bottom of the pot.
  • Return all the chicken pieces and their liquid to the pot. Stir in yogurt, 1 tablespoon at a time. Stir in 1 1/4 teaspoon salt, chile powder and 1/2 cup water.
  • Cover and cook at low pressure for 6 minutes, then release the pressure manually.
  • Remove the lid, then turn on the sauté function on low. Cover with the glass lid or loosely with the regular lid, and simmer gently to meld the flavors, 7 to 10 minutes.
  • Stir in garam masala and saffron cream; taste and adjust seasoning if necessary. Serve garnished with the raisins and almonds.
