Steps:
- Combine tomato sauce and seasonings.
- Dip chicken pieces into tomato sauce mixture and coat with corn flakes cereal. Place in a single layer in a shallow pan coated with cooking spray.
- Pour remaining sauce mixture over the top of the chicken.
- Bake at 350 degrees about 1 hours or until chicken is tender. Do not cover pan or turn chicken while baking.

BAKED CHICKEN ITALIENNE, MOM
This chicken is so good, and so easy to bake... you could use boneless chicken if you want, or my daughter (a vegetarian) suggested a head of cauliflower in place of the chicken. Either way, the entire house smells amazing while this cooks, and it is a definite favorite.

- Oven to 400 degrees. Combine tomato, garlic, salt and pepper. Blend well. Combine potato flakes and cheese. Dip chicken into sauce, roll in potato and set aside. Place melted butter in 9x13. Put chicken in, skin side up. Bake 1 hour or until fork tender.

Place in single layer, skin side up, in shallow pan coated with cooking spray or foil-lined. Do not crowd.2.
