BAKED CHICKEN IN A SWEET BBQ SAUCE
What I had to do to squeeze this recipe from my neighbor...but it's worth it. This is a scrumptious version of sticky chicken.

- Preheat oven to 400 degrees F (200 degrees C).
- Whisk together the barbecue sauce, soy sauce, red wine, maple syrup, chili powder, dry mustard powder, garlic powder, onion powder, and cumin in a bowl until thoroughly combined.
- Place the chicken breasts into a 9x13-inch baking dish, and pour the sauce over the chicken. Turn the chicken pieces over in the sauce to coat both sides.
- Bake in the preheated oven until the chicken is no longer pink and the juices run clear, about 40 minutes. An instant-read thermometer inserted into the thickest part of a breast should read 160 degrees F (70 degrees C). Remove the chicken from the baking dish, and keep warm.
- Pour the remaining sauce into a saucepan, place over medium heat, and bring to a boil. Whisk the cornstarch and water together in a small bowl until smooth. Whisk the cornstarch mixture into the sauce; reduce heat to a simmer, and allow the sauce to thicken, whisking constantly. Return the chicken to the dish, and pour the thickened sauce over the chicken to serve.

This Chicken in Sweet and Sour Sauce tastes better than your favorite takeout place without the salt & sugar. The chicken is coated in a deliciously thick sauce and sauteed to perfection.

- In a bowl, mix the chicken cut into pieces with the rice wine or sherry, half the olive oil, curry powder, egg and a pinch of salt. Add in the cornflour until the chicken is covered with the batter.
- In a pan, cook the chicken breasts in the remaining olive oil until browned on all edges. Optionally you can saute some red or green peppers and some pineapple chunks to add to the sauce before serving.
- In a saucepan, heat the minced garlic, pineapple juice or sugar, tomato ketchup and wine vinegar, stirring until the simmered sauce becomes dense or the sugar dissolves. Finally bring to boil.
- After cooking the sweet and sour sauce, pour it over the chicken pieces and stir well.
- Optionally add the peppers and pineapple chunks previously sauteed in the pan and serve with rice, noodles or on its own.

Yes, what else...another recipe using Mae Ploy's sweet chili sauce. This is a stovetop recipe, but am certain grilling would be wonderful. Should you want a superior sauce even to Mae Ploy's, see recipe #457035.

- In a small bowl mix together sweet chili sauce, soy sauce and garlic. Pour 1/2 cup (half the mixture) into a small plastic food storage zip bag. Add chicken and turn to coat; refrigerate and marinade 30 minutes.
- To a skillet, add a tablespoon or two of oil and heat over medium-high heat. Remove chicken from marinade and brown on one side for about 2-3 minutes (it may smoke a little from the sweet marinade). Turn the chicken over and brown for 2 minutes longer. Cover with a lid, turn the heat to low and let it finish cooking for about 8 minutes.
- Place remaining chili sauce and soy sauce mixture in a small saucepan and simmer over low heat until heated through, about 5 minutes. Serve over chicken.
