I love making casseroles, and this one's so simple. The chicken breasts, Swiss cheese, and ham are cubed, rather than stuffed and rolled, giving you all the flavor of Cordon Bleu in much less time.

1 egg
½ cup milk
2 pounds skinless, boneless chicken breast halves - cut into chunks
1 cup plain dried bread crumbs
1 cup oil for frying
8 ounces Swiss cheese, cubed
8 ounces cubed ham
1 (10.75 ounce) can condensed cream of chicken soup
1 cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat egg and 1/2 cup milk together until combined. Stir in the chicken chunks to coat, then drain, and coat with bread crumbs. Heat oil in a large skillet to 375 degrees F (190 degrees C). Fry breaded chicken cubes in hot oil until golden brown on all sides, then remove, and drain on paper towels.
  • Place chicken cubes in a glass baking dish, along with the Swiss cheese, and ham. Stir together the soup with 1 cup milk, pour over casserole.
  • Bake in preheated oven until golden brown and bubbly, about 30 minutes.

1 (8 ounce) package wide egg noodles
2 cups chopped cooked chicken breast
8 ounces cooked ham, cubed
8 ounces Swiss cheese, cubed
1 (10.75 ounce) can reduced-fat, reduced-sodium cream of chicken soup (such as Campbell's® Healthy Request)
½ cup 2% milk
½ cup light sour cream
2 tablespoons butter
⅓ cup seasoned bread crumbs
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch casserole dish.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and transfer noodles to the prepared casserole dish; top with chicken, ham, and Swiss cheese.
  • Mix cream of chicken soup, milk, and sour cream together in a bowl; spoon soup mixture over noodle mixture.
  • Melt butter in a skillet over medium heat; cook and stir bread crumbs and Parmesan cheese in the melted butter until crumbs are coated with butter and cheese, 2 to 3 minutes. Sprinkle bread crumb mixture over casserole.

These Chicken Cordon Bleu Casseroles have diced boneless chicken, chopped ham and Swiss cheese layered with creamy sauce and a buttery golden brown Panko bread crumb topping.

2 Tbsp butter
1/4 cup Panko bread crumbs
1 Tbsp fresh chopped parsley
Salt and pepper (to taste)
1 Tbsp butter
1 Tbsp flour
3/4 cup milk
1/2 Tbsp lemon juice
1 tsp Dijon mustard
1/4 tsp salt
1/8 tsp paprika
1/8 tsp pepper
8 oz boneless chicken
4 slices ham lunchmeat
2 slices Swiss cheese

Steps:

  • Preheat the oven to 350 degrees F.
  • Spray two 18.6 ounce individual baking dishes with non-stick spray and set aside. Click for 18.6 oz individual baking dishes. You can also use one 8 x 8 inch oven safe dish.
  • Dice the chicken and cook over medium heat in a medium skillet for about 5 minutes. Stir occasionally. Drain the liquid.
  • Place the cooked chicken in the bottom of the baking dishes, divided evenly.
  • Chop the ham and scatter it over the top of the chicken in each dish.
  • Lay the Swiss cheese slices on top of the ham.
  • Melt the butter in a small sauce pan over medium heat.
  • When butter is melted, quickly whisk in the flour to form a smooth roux. Do not brown!
  • Once the roux is smooth and bubbly, slowly pour in the cold milk, while whisking, to make a smooth sauce. Cook over medium heat, stirring constantly until the sauce thickens.
  • Stir in the lemon juice, Dijon mustard, salt, paprika and pepper.
  • Bring the sauce just back to a low boil and turn off heat.
  • Pour the sauce evenly over the Swiss cheese layer and spread out.
  • Melt the butter in a small saucepan.
  • Stir in the Panko bread crumbs, salt and pepper.
  • Layer the crumb mixture over the top of the casseroles and sprinkle each with the fresh chopped parsley.
  • Bake uncovered for 30 minutes until hot and bubbly throughout and topping has turned a light golden brown.
  • Remove the casseroles from oven and let sit to cool for 5 minutes prior to serving.
  • Serve on top of individual trivets to protect the table or counter top from heat. Click for cork trivets.

6 tablespoons salted butter
2 cups small-cubed ham
1 1/4 cups grated Swiss cheese
1 1/4 cups grated Monterey Jack cheese
4 cooked boneless, skinless chicken breasts, cut into cubes
1/2 cup panko breadcrumbs
1/4 cup all-purpose flour
2 cups milk
1 cup chicken broth
2 tablespoons Dijon mustard
1/2 teaspoon cayenne
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with 1 tablespoon butter.
  • Put the ham on a paper towel-lined plate and microwave for about 3 minutes to reduce the moisture content. Mix together the Swiss and Monterey Jack cheese in a bowl.
  • Put about a third of chicken in a layer in the bottom of the prepared baking dish. Top with half the ham. Sprinkle over 1/4 cup of the mixed cheese. Repeat 1 more time, then finish with a layer of chicken.
  • Melt the remaining 5 tablespoons butter in a skillet over medium heat. Put the panko in a bowl, pour in half of the melted butter, mix well and set aside.
  • Add the flour to the remaining butter in the skillet and cook for 2 to 3 minutes, whisking out any lumps. Whisk in the milk, broth, Dijon and cayenne and let it cook until it begins to thicken. Remove from the heat and stir in 1 cup of the cheese until melted. Season with salt and pepper.
  • Pour the sauce over the casserole. Sprinkle over the remaining 1 cup cheese, then the panko mix. Bake until the top is browned and the casserole is bubbling, 25 to 30 minutes.

Steps:

  • Bake covered at 375°F. for 30 minutes.
  • Uncover casserole; bake 20 minutes or until chicken is fork-tender and juices run clear, and noodles are tender and thoroughly heated.
  • Place 2 cheese slice halves over each chicken breast half. Bake an additional 5 minutes or until cheese is melted.

1 tablespoon unsalted butter
12 ounces chicken breasts, cubed
1/4 cup shallot, minced (optional)
1 tablespoon flour
1/2 cup apple juice or 1/2 cup apple cider
1/2 cup low sodium chicken broth
1/4 cup heavy cream
2 tablespoons parmesan cheese, grated
1 tablespoon stone ground mustard
1/2 teaspoon dried thyme
1 cup broccoli floret, BLANCHED
salt, to taste
pepper, to taste
2 round sour dough rolls, each 6 inch
2 -4 deli slices smoked ham, 2 ounces
2 slices swiss cheese, sliced
2 teaspoons parmesan cheese, grated DIVIDED

Steps:

  • Preheat oven to 400 degrees.
  • Line with foil and lightly spray a small baking sheet with nonstick spray.
  • Melt butter over medium high heat in a saute pan.
  • Add chicken and saute until beginning to brown, about 5 minutes.
  • Stir in shallots and saute until softened, 2 minutes.
  • Sprinkle mixture with flour, cook 1 minute.
  • Combine apple juice and broth; slowly add to chicken in saute pan, stirring constantly to avoid clumping.
  • Stir in cream, Parmesan, mustard, and thyme; simmer after each addition until sauce is thickened, about 5 minutes.
  • Add BLANCHED broccoli; season with salt and cayenne pepper.
  • Reduce heat to low.
  • Hollow out loaves by cutting off tops and tearing out insides. (Remove as much bread as possible.).
  • Compress any remaining bread inside loaves to make room for filling-you need space.
  • Toast loaves directly on oven rack, about 5 minutes; remove to prepared baking sheet.
  • Arrange ham slices in bottom of each loaf.
  • Using a slotted spoon, divide chicken mixture evenly between rolls, RESERVING sauce in pan for last step.
  • Top the chicken in each loaf with a slice of Swiss and sprinkle with 1 teaspoon Parmesan.
  • Bake "casseroles" until cheese melts, 7-10 minutes. (For extra browning, broil casseroles on high, 3-5 minutes.).
  • Serve each casserole with reserved cream sauce.

This is one of my favorite healthy comfort foods. I use to make the cream sauce from scratch and boil the chicken then shread it...I found a way to simplify and make it healther...and it's just as good! I usually serve this over whole wheat noodles or brown rice but it's also good with mashed potatoes.

1 (8 ounce) can white meat chicken
3 -4 slices deli ham
1 tablespoon vegetable oil
3/4 cup cheddar cheese, shreaded sharp (Kraft's 2% is good!)
0.5 (10 ounce) can low-fat cream of celery soup (freeze the rest for later!)
2 tablespoons skim milk
1/2 teaspoon dill
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/8 teaspoon nutmeg
salt & pepper
3 tablespoons breadcrumbs

Steps:

  • Heat oven to 350
  • Pour oil in a large skillet and heat over med-high heat.
  • Drain chicken from can and add to heated oil.
  • Tear apart ham (bitesize pieces) and add to skillet.
  • Keep stirring chicken/ham mixture around in skillet until chicken is slightly browned and there should be no oil left - it should all be absorbed.
  • (appx 5 minutes total).
  • Transfer chicken/ham mixture from skillet to a 9x9 (or close to 9x9) baking dish, add 1/2 cup of cheese, and set aside.
  • Return skillet to stove and turn heat down to medium. Pour in the cream of celery soup and gradually add milk and stir to make smooth. Keep it bubbling for about a minute then turn down to low.
  • Add dill, garlic, onion, nutmeg, and salt & pepper to soup mixture and stir until blended. Pour soup mixture over chicken/ham/cheese mixture and gently stir until everything is covered.
  • Sprinkle bread crumbs on top then sprinkle on the remainder (1/4 cup) of the cheese. I usually then sprinkle on some more dill and black pepper but it's just for presentation.
  • Bake at 350 for about 20 minutes.
