CHICKEN AND CHORIZO PASTA BAKE
Not a recipe for people on a diet - chicken, sausage, and penne is baked in a creamy tomato sauce. I cook the meats, pasta, and sauce all at the same time, but it can be done individually and refrigerated before baking it in the oven.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and set aside.
- Heat the oil in a large deep skillet over medium-high heat. Add chicken, and cook until firm and lightly browned, about 5 minutes. Stir in the bell pepper and chorizo and cook for 5 minutes until the chorizo is hot and the chicken is no longer pink in the center. Remove from heat.
- Pour the tomato puree, cream, and red pepper flakes into a small saucepan. Bring to a simmer over medium-high heat, then reduce heat to medium-low, and simmer 5 minutes until the sauce has thickened. Add drained pasta and sauce to the skillet containing the chicken and mix well. Spoon the mixture into an oven proof dish. Sprinkle the Cheddar, mozzarella, and Parmesan cheese over the top. Bake 30 minutes, or until the top is golden and bubbly.

- Heat olive oil in a large skillet over medium heat. Cook and stir chicken in the hot oil until no longer pink in the center and juices run clear, about 10 minutes. Stir in chorizo and onion; cook for 2 minutes. Add green bell pepper and garlic; cook until softened, about 5 minutes. Stir in tomatoes, apple cider, tomato paste, salt, and pepper; bring to a boil.
- Mix penne into the skillet. Cover and simmer, adding more cider if needed, until penne is tender, about 15 minutes. Uncover and cook until sauce thickens slightly, about 5 minutes more.

CREAMY CHORIZO AND CHICKEN PASTA
a mixture of chicken and chorizo with cream that makes this pasta hard to resist and so easy to whip up on a work night

Steps:
- Cook your pasta for 8 to 10 mins in a large pot of boiling water, drain , splash in a little olive oil and return to pot
- Heat your frying pan add the onion garlic and chilli and brown for one min.
- Add the sliced chorizo and fry til brown ,
- Remove ingrediants from pan and put aside
- Add chopped chicken cook til brown
- Return everything to pan add cream and pesto cook til heated through and thicken slightly ,.
- Pour over pasta season with salt and pepper to taste add parsley and serve
- Lovely with a green salad and fresh bread.
CHICKEN CHORIZO CREAMY PASTA
A very quick and tasty pasta dish ideal for an emergency meal of high standard in a flash.

Steps:
- Cook the pasta in boiling water as directed on the packet.
- Heat the oil gently in a skillet and cook the garlic for about a minute.
- Add and seal the chicken on all sides, add the chorizo and allow to cook through for several minutes.
- Add the tomatoes, pesto, salt and pepper and soften for 3 - 4 minutes with the lid on a low heat.
- Finally add the creme fraise and Basil, mix in well and simmer for a few minutes only before adding the cooked pasta. Mix in well and serve with parmesan cheese.
CHICKEN AND CHORIZO PASTA
I just made this up 20 minutes ago, and I think it's pretty yum. I love chorizo and never know what to do with it, so here's an idea. I didn't use veggies or cheese in mine, but I think they would be nice. I made a Gluten Free version for myself at the same time as a Regular version for my husband, so they prep time might be off.

- Cook pasta according to package directions to el dente.
- Meanwhile, thinly slice sausage and fry at medium heat until cooked through.
- Drain sausage.
- Mix cooked pasta, sauce, green onion, cilantro, chicken, sausage, and vegetables (if using) in casserole dish.
- Top with cheese, if using.
- Cook at 350 degrees F for 35-40 minutes or until heated through and smelling yummy.
- Gluten Free Modifications: To make this Gluten Free I used Freybe Wine Chorizo, Tinkyada Rice Pasta spirals, and Classico Fire-Roasted Tomato& Garlic pasta sauce.
CHORIZO TOMATO SAUCE (FOR PASTA OR CHICKEN)
I'll continue to tweak this one, I'm sure, but this is my current version. At these amounts, it makes a good bit of sauce. Number of servings listed is my guesstimate for pasta, which is what I originally came up with this for. I had some leftover in the fridge this afternoon, though, and tried it over a leftover chicken breast. Yum! Makes me wonder what else this might work on...

- Heat the oil in a large saucepan. Add -- in this order -- the green pepper, onion, and garlic, allowing each to soften a bit before adding the next. Add the cumin and cayenne pepper (if using) when you toss in the garlic.
- Stir in the chorizo and cook over medium heat, stirring frequently, till done.
- Add the diced tomatoes and sliced black olives. Turn down heat and simmer till desired thickness is reached (I like mine pretty thick). Season with salt and pepper to taste and served over pasta or chicken (or perhaps something else as well?).

- Add 1 tbsp of olive into a large frying pan or wok and cook the chicken on a medium heat until sealed. Then add the chorizo, onion and chilli then cook until the onion is soft. Add the full carton of pasatta along with the mixed herbs, paprika, salt, pepper, garlic and dill then stir thoroughly and cook for 15 minutes on a medium heat stirring occasionally.
- For the pasta, fill a pan 3 quarters full of water and add a tsp of salt. Once the water is boiling, add 3oz of pasta per person and cook for 10 minutes. 5 minutes before the sauce is cooked, add 2 tbsp of olive oil and stir in.
- Once everything is cooked, drain the pasta and add this to the sauce and stir until the pasta is fully coated and evenly mixed. Serve immediately with some of the recommended serving options or without depending on preference.
SPICY CHICKEN & CHORIZO PASTA
A quick and easy pasta dish with stong, bold flavours; suitable for a midweek supper or a saturday night indoors with friends

- Heat olive oil in a pan.
- Dice chicken and chorizo and add to pan - fry gently for 3-4 minutes until chicken is browned and chorizo oil is released
- Whilst chicken is cooking, roughly chop onion and pepper and finely chop garlic and chilli. Add to pan and cook until onion and peppers have softened and chicken is cooked thoroughly
- Add tomatoes to pan, gently cook for 5 min until tomatoes begin to burst.
- Cook pasta as per pack instructions
- Whilst pasta is cooking add creme fraiche, lemon juice and pesto to chicken and warm thorugh. Season to taste
- Add cooked drained pasta to chicken and creme fraiche mix and stir until coated - serve with a rocket and parmesan salad

- In a large non stick pan, cook chicken and chorizo with the salt, pepper, onion and garlic, until cooked through.
