1 large bunch collard greens (about 2 pounds)
6 bacon strips, chopped
1 tablespoon olive oil
1/2 cup chicken broth
1-1/2 cups fresh or frozen corn (about 7-1/2 ounces)
1 cup chopped sweet red pepper
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper

Steps:

  • Trim thick stems from collard greens; coarsely chop leaves. In a Dutch oven, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Cook and stir collard greens in bacon drippings and oil just until coated. Add broth; bring to a boil. Reduce heat; simmer, covered, until greens are very tender, 25-30 minutes., Add corn, red pepper, salt, pepper flakes and pepper. Cook and stir until heated through. Sprinkle with bacon.

Slow Cooker Chicken Chili with Greens and Beans image

Beans, greens and chicken come together with tomatoes in a thick and creamy broth. This recipe, as with most chili recipes, doesn't need to be exact and can be altered to fit your taste or what you have on hand. The choice of greens is up to you - my first choice is kale, but you can use spinach, turnip greens, collards or a combination (my favorite)! If you use fresh greens, wash and chop them very fine before adding them to the slow cooker.

2 cups canned black beans, rinsed and drained
2 cups canned white beans, rinsed and drained
2 (14.5 ounce) cans petite diced tomatoes
1 ½ cups frozen cooked kale
1 tablespoon butter
½ cup diced onion
2 tablespoons chili powder, or more to taste
1 tablespoon garlic and herb seasoning, or more to taste
1 ½ teaspoons salt
2 large skinless, boneless chicken breast halves
4 cups chicken broth
1 cup heavy cream

Steps:

  • Place black beans, white beans, tomatoes, and kale in a slow cooker.
  • Melt the butter in a large skillet over medium heat. Stir in the onion; cook and stir until softened and translucent, about 5 minutes.
  • Transfer the onion to the slow cooker.
  • Sprinkle with chili powder, garlic and herb seasoning, and salt.
  • Place the chicken breast halves on top, then pour the chicken broth into the slow cooker.
  • Cook on Low for 6 hours. Remove the chicken breasts, and shred or cut the chicken into bite-size pieces. Stir the shredded chicken back into the chili.
  • Stir in the heavy cream, allow to heat for a few minutes, and serve.

Easy Chicken Chili image

We have lots of visitors on our 10-acre farm, so I like to make down-home dishes. Whenever I serve this chili, I'm asked for the recipe, which I'm happy to share.

Number Of Ingredients 12

1/2 cup chopped onion
1 tablespoon canola oil
2 cans (14-1/2 ounces each) chicken broth
2 cans (16 ounces each) great northern beans, rinsed and drained
1 can (4 ounces) chopped green chilies
2 cups cubed cooked chicken
2 garlic cloves, minced
2 tablespoons minced fresh cilantro
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon ground cumin
1/8 to 1/4 teaspoon cayenne pepper

Steps:

  • In a large saucepan over medium heat, saute onion in oil until tender. Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until heated through.
