Chicken Cheesesteaks with Peppers image

Our ready-in-minutes take on Philadelphia's favorite sandwich is filled with chicken, peppers, and provolone.

1 pound chicken cutlets
2 tablespoons vegetable oil, such as safflower
Coarse salt and ground pepper
2 mixed bell peppers (ribs and seeds removed), thinly sliced
1 large red onion, halved and thinly sliced
4 garlic cloves, thinly sliced
6 ounces sliced provolone cheese
4 soft hoagie rolls, split lengthwise
1/4 cup light mayonnaise

Steps:

  • Heat broiler, with rack set 4 inches from heat. On a rimmed baking sheet lined with aluminum foil, toss chicken with 1 tablespoon oil; season with salt and pepper. Broil, without turning, until chicken is opaque throughout, 5 to 7 minutes. Transfer to a cutting board (reserve baking sheet); let cool, and thinly slice. Set chicken aside.
  • On baking sheet, toss together peppers, onion, garlic, and remaining tablespoon oil. Broil, tossing occasionally, until crisp-tender and slightly charred, 8 to 10 minutes; season with salt and pepper. Add chicken to broiled vegetables; toss, and spread in a single layer.
  • Top chicken and vegetables with cheese; broil until cheese is bubbling, 30 seconds to 1 minute. Scoop out most of the doughy center from both halves of rolls; discard. Spread rolls with mayonnaise; fill with chicken and vegetables. Serve immediately.

1 1/2 pounds skinless, boneless chicken thighs
3 tablespoons extra-virgin olive oil
1/2 teaspoon paprika
Kosher salt and freshly ground pepper

1 large onion, thinly sliced
2 cloves garlic, finely chopped
1/2 cup pickled sweet or hot cherry peppers, sliced
4 soft hoagie rolls, split
6 slices American cheese (about 4 1/2 ounces), halved
Hot sauce and/or ketchup, for topping (optional)
Carrot and celery sticks, for serving (optional)

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with aluminum foil. Toss the chicken, 1 tablespoon olive oil, the paprika, 1/2 teaspoon salt and 1/4 teaspoon pepper in a bowl; spread in a single layer on the baking sheet. Roast until just cooked through, 15 minutes. Transfer the chicken to a cutting board; discard the foil and reserve the baking sheet. Heat 1 tablespoon olive oil in a skillet over medium-high heat; add the onion and cook, stirring occasionally, until golden, 6 to 8 minutes. Add the garlic, 1/4 teaspoon salt, and pepper to taste and cook, 1 minute. Remove from the heat and stir in the pickled peppers. Brush the insides of the rolls with the remaining 1 tablespoon olive oil; arrange cut-side up on the baking sheet and toast in the oven, about 2 minutes. Thinly slice the chicken and divide among the rolls. Top evenly with the onion mixture and the cheese. Return to the oven to melt the cheese, about 2 minutes. Top with hot sauce and/or ketchup and serve with carrot and celery sticks.

MINI BUFFALO CHICKEN CHEESESTEAKS

These party-style chicken cheesesteaks are flavored with Buffalo sauce and blue cheese and garnished with fresh herbs. A heavy drizzle of Cheez Whiz really takes it to a new level.

1 green bell pepper, diced
1 yellow onion, diced

2 cups shredded chicken
1/2 cup heavy cream
3/4 cup buffalo, sauce
1/2 cup crumbled blue cheese, plus more for garnish
1 cup Cheez Whiz
6 mini hawaiian sub rolls
sliced green onion, for garnish
chopped parsley, for garnish

Steps:

  • Heat 1 tablespoon of olive oil in a skillet over medium heat. Add bell pepper and sauté until softened slightly, about 3 minutes.
  • Add onion and season with salt and pepper. Sauté until softened, about 7 minutes.
  • Stir in the chicken. Add heavy cream, buffalo sauce and blue cheese. Stir and cook until heated through, about 3-5 minutes. Season with salt and pepper.
  • Turn heat to low and keep warm.
  • Microwave the Cheez Whiz in a heat safe bowl for about 90 seconds, stirring every 30 seconds.
  • Wrap the rolls in damp paper towels and microwave for 90 seconds.
  • Fill each roll with buffalo chicken mixture, drizzle with warm Cheeze Whiz, and garnish with green onions, parsley and blue cheese crumbles.

We substituted chicken breast strips for steak and added south-of-the-border heat for our Chipotle Chicken Cheesesteaks. They're ready to eat in 20 minutes.

2 teaspoons olive or vegetable oil
3/4 to 1 lb boneless skinless chicken breasts
1 cup sliced white onion
1 cup red or green bell pepper strips (or a mix)
2 teaspoons minced garlic
1/4 teaspoon dried thyme leaves
1 chipotle chile, minced
1 tablespoon adobo sauce (from can of chipotle chiles)
2 tablespoons Old El Paso™ fajita seasoning mix (from 1-oz package)
1 to 2 tablespoons water
1 cup shredded sharp Cheddar cheese (4 oz)
4 hoagie buns or bolillo rolls, split

Steps:

  • Heat 10- to 12-inch cast-iron skillet over medium heat. Add 1 teaspoon of the oil. Pound chicken between 2 sheets of plastic wrap or waxed paper until thin. Cut into small strips; place in skillet. Cook 5 minutes or until no longer pink; remove from skillet to plate.
  • Heat remaining teaspoon oil in same skillet. Add onion, bell pepper, garlic and thyme; cook 2 to 3 minutes or until onion and bell pepper are soft.
  • Stir in chile, adobo sauce, fajita seasoning mix and 1 tablespoon of the water; cook 1 to 2 minutes. Return chicken to skillet; cook 1 minute longer, adding remaining water if needed so fajita seasoning completely coats chicken. Remove from heat; stir in cheese until melted.
  • Divide mixture among buns.

2 Tablespoons butter
1 sweet onion, sliced
1 lb chicken breasts, sliced thin
salt and pepper
1/2 cup Frank's Buffalo Wing Sauce
8 slices cheese (suggested: smoked gruyere or provolone)
4 hoagie rolls

Steps:

  • Preheat oven to 250 degrees. Split hoagie rolls down the center then set aside. Tear 4 large sheets of foil then set aside. Heat a large skillet over medium-high heat then add butter. Add onions then saute until golden brown, about 3 minutes. Add chicken, season with salt and pepper, and then saute until no longer pink. Add buffalo wing sauce then stir to combine. Separate mixture into 4 piles then top with cheese slices. Cover with a lid to melt cheese then remove skillet from heat. Scoop each cheese-topped pile into a split hoagie roll then wrap tightly in foil. Place into the oven to warm completely through for 10 minutes. Unwrap then serve.
