2 cups chicken broth
3/4 cup creamy Caesar salad dressing

2 tablespoons olive oil
1 large boneless, skinless chicken breast (10 to 12 ounces), cut into bite-size pieces
2 teaspoons chili powder
1 teaspoon paprika
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper
1/2 cup mayonnaise
2 tablespoons Dijon mustard
2 teaspoons adobo sauce from canned chipotles
2 teaspoons garlic salt
5 to 6 dashes Worcestershire sauce
2 cups chopped romaine lettuce
3/4 cup freshly grated Parmesan
Two 12-inch whole-wheat flour tortillas
1/4 cup red grape tomatoes, halved
1/4 cup freshly shredded Cheddar

Steps:

  • Heat the oil in a medium skillet over medium-high heat. Add the chicken, chili powder, paprika, cumin and some salt and pepper to the skillet and cook, stirring occasionally, until the chicken is evenly coated with the spices, browned and cooked through, 5 to 7 minutes. Set aside.
  • To make the dressing, mix the mayonnaise, Dijon mustard, adobo sauce, garlic salt, Worcestershire sauce and salt and pepper to taste in a medium bowl until well combined. Add the romaine lettuce and toss until well coated. Then add 1/2 cup of the Parmesan and toss again.
  • Lay out the tortillas and top each one with half of the dressed romaine, tomatoes, Cheddar cheese and taco chicken. Sprinkle each with 2 tablespoons Parmesan. Roll up the tortillas, leaving one end open, then wrap in sandwich paper, leaving 1 to 2 inches of the wrap open and exposed. Enjoy, removing the paper as needed. To transport, cover each wrap entirely in foil.

6 cups romaine lettuce, torn into bite-sized pieces
1/2 cup creamy caesar salad dressing
1 (13 ounce) can white chicken meat
3/4 cup caesar-flavor croutons or 3/4 cup parmesan croutons
1/4 cup grated parmesan cheese (fresh is best)
6 (10 inch) flour tortillas

Steps:

  • Toss the lettuce with the Caesar dressing.
  • Add the chicken, croutons, and parmesan cheese and toss to combine.

1 rotisserie chicken, available in many markets
4 heaping tablespoons reduced fat mayonnaise
1 clove garlic, crushed
1 lemon, zested and juiced
2 tablespoons anchovy paste, optional (But it tastes better with it in. If you think you don't like anchovies, try them in this sauce. They just taste salty and yummy!)
1/2 cup grated Parmigiano-Reggiano, a few handfuls
2 teaspoons Worcestershire sauce
1 teaspoon coarse black pepper, eyeball the amount in the palm of your hand: 1 teaspoon is equal to about 1/3 of a palm full
3 tablespoons extra-virgin olive oil, pour to the count of 4

Steps:

  • Cut bottoms off the romaine and cut the heads in half lengthwise. Wash lettuce and separate the leaves. Let it dry in the dish draining rack while you prepare the rest of the menu.
  • Remove the tails from the shrimp and place the shrimp in a bowl or, pack for travel, if this is a picnic meal.
  • To remove the chicken meat from the chicken, cut the chicken breasts off first. Cut the legs and thighs off using kitchen scissors to help you. Slice the meat up on an angle. Arrange on a plate or in a plastic container.

Dressing, recipe follows
Eight 10-inch/burrito-size flour tortillas
Roasted Chicken, recipe follows
2 cups store-bought Parmesan crisps, preferably Moon Cheese, or see recipe below for homemade
Extra-virgin olive oil, for cooking
6 tablespoons (96 grams) mayonnaise
1/4 cup (60 grams) lemon juice (from 1 lemon)
1/4 cup (63 grams) Dijon mustard
1/4 teaspoon Worcestershire sauce
2 cloves garlic, grated
1/2 cup (120 grams) extra-virgin olive oil
1/2 cup (60 grams) shredded Parmesan
Pinch kosher salt
Freshly ground black pepper
1 tablespoon kosher salt
1/2 teaspoon freshly ground black pepper
One 3- to 4-pound whole chicken
1/4 cup (60 grams) mayonnaise
2 cloves garlic, grated
1/2 teaspoon Worcestershire sauce
8 ounces shredded Parmesan

Place an oven rack in the middle position. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.

Steps:

  • Coat the lettuce in some Dressing and reserve the remaining Dressing for serving on the side.
  • To assemble a wrap: Lay a tortilla flat on a clean surface. Pile about 1 1/2 ounces dressed lettuce on the lower third of the tortilla. Top with 3 to 4 slices chicken (more or less, as desired) then sprinkle with the Parmesan crisps. Fold the wrap over the filling, tuck in the sides and continue to roll. Repeat with the remaining tortillas, lettuce, chicken and Parmesan crisps.
  • Heat a drizzle of olive oil in a large skillet over medium-high heat and crisp the tortilla for a few minutes on both sides, or until golden. Repeat with the remaining wraps.
  • Remove the wraps to a work surface. Cut in half on a bias and serve with additional Dressing for dipping.
  • Whisk together the mayonnaise, lemon juice, Dijon mustard, Worcestershire and garlic in a mixing bowl or measuring cup. Slowly drizzle in the olive oil and whisk to emulsify. Stir in the Parmesan and season with salt and pepper. Adjust the consistency with a little water if it is too thick.
  • Sprinkle the salt and pepper all over the outside and in the cavity of the chicken and rub into and underneath the skin. Place on a rack over a sheet pan and refrigerate, uncovered, for at least 6 hours or up to overnight. Allow the chicken to come to room temperature before cooking.
  • Place an oven rack in the middle position. Preheat the oven to 425 degrees F.
  • In a small bowl, combine the mayonnaise, garlic and Worcestershire, then schmear the mixture all over the chicken. Roast the chicken on a rack in a roasting pan until a thermometer inserted in the thickest part of the thigh (avoiding bone) registers 165 degrees F, begin checking at around 50 minutes. (If the skin gets too dark, tent with aluminum foil.) Allow to rest 30 minutes before carving. Carve the chicken into bite-sized pieces.
  • In a medium bowl, add the cheese and cayenne pepper. Toss to combine. Spread the cheese evenly across the prepared baking sheet. Bake until the cheese is bubbling, crispy and golden brown, 18 to 20 minutes. Set aside to cool completely, then break up into shards.

1/2 cup flour
2 teaspoons herb seasoning mix, seasoning of choice (thyme, basil, oregano, etc.)

1 egg
1/4 cup milk
1/8 cup mustard
1 1/2 cups dried breadcrumbs
1/8 cup chopped parsley
4 large flour tortillas
2 cups shredded romaine lettuce (1/2 cup portion per person)
2 cups diced tomatoes (1/2 cup portion per person)
2 cups caesar salad dressing (1/2 cup portion per person)

Steps:

  • PART 1 - CHRISPY CHICKEN:.
  • Remove skin from chicken, wash and drain.
  • Combine flour, herb blend, paprika, cayenne, pepper, and salt and place in paper / plastic bag or washable bucket.
  • Beat eggs, milk, and mustard together until smooth, set aside.
  • Combine bread crumbs and parsley together, set aside.

1 cup water
1 cup instant rice
3/4 cup caesar salad dressing
8 10-inch flour tortillas, warmed

Steps:

  • In a large nonstick skillet cook chicken tenderloins until lightly browned.

  • 1. Lightly spray chicken with oil using Kitchen Spritzer. Press garlic with Garlic Press; firmly press garlic into chicken using Skinny Scraper. Heat (8-in.) We like to add shredded lettuce to these chicken rounds. The Montreal steak seasoning is good, but can be spicy if you add too much.

Number Of Ingredients 6

4 boneless chicken breasts
montreal steak seasoning to taste
3 Tbsp olive oil
1/2 c caesar salad dressing
4 pita rounds
shredded parmesan..optional

Steps:

  • 1. With a sharp knife, carefully slice horizontally most of the way through each chicken breast; open up and flatten. Sprinkle one side of chicken with seasoning. Heat oil in a large skillet over medium high heat. Add chicken to skillet; sprinkle other side with seasoning. Cook until golden brown on both sides and chicken juices run clear when pierced. Remove chicken from skillet to a cutting board. Let cool briefly; slice into strips and transfer to a bowl. Drizzle salad dressing over chicken; stir to coat well. Microwave pita rounds for 20-30 seconds, until warmed. Divide chicken mixture evening among rounds. Sprinkle with parmesan cheese if desired. Serves 4

I first created these slow-cooker chicken Caesar wraps for our daughter who loves Caesar salads, then later for our extended family on vacation. It's such an easy meal-perfect for days when you'd rather be outside than inside cooking all day. -Christine Hadden, Whitman, Massachusetts

1-1/2 pounds boneless skinless chicken breast halves
2 cups chicken broth
3/4 cup creamy Caesar salad dressing
1/2 cup shredded Parmesan cheese
1/4 cup minced fresh parsley
1/2 teaspoon pepper
6 flour tortillas (8 inches)
2 cups shredded lettuce
Salad croutons and cooked crumbled bacon, optional

Steps:

  • Place chicken and broth in a 1-1/2 or 3-qt. slow cooker. Cook, covered, on low until a thermometer inserted in chicken reads 165°, 3-4 hours. Remove chicken and discard cooking juices. Shred chicken with 2 forks; return to slow cooker., Stir in dressing, Parmesan, parsley and pepper; heat through. Serve in tortillas with lettuce and if desired, top with salad croutons, cooked crumbled bacon and additional shredded Parmesan cheese.

6 tablespoons mayonnaise
3 tablespoons grated Parmesan cheese, divided
3 pieces anchovy fillets, minced
2 teaspoons lemon juice
1 ½ teaspoons minced garlic
½ teaspoon Worcestershire sauce
½ teaspoon Dijon mustard
salt and freshly ground black pepper to taste
2 cups roughly chopped romaine lettuce
2 cups diced cooked chicken
2 tablespoons coarsely grated Parmesan cheese
2 tablespoons sliced ripe olives
8 medium cherry tomatoes, sliced
1 (7 ounce) package 4-pack naan breads

Steps:

  • Make a Caesar dressing by combining mayonnaise, 1 tablespoon Parmesan cheese, anchovies, lemon juice, garlic, Worcestershire sauce, and Dijon in a small food processor or blender. Pulse several times until mixture is well combined. Season with salt and pepper.
  • Combine lettuce, chicken, remaining Parmesan, and olives in a salad bowl. Add Caesar dressing and toss ingredients until well coated.
  • Divide chicken mixture evenly between naan breads and evenly distribute cherry tomatoes. Wrap naan breads around the chicken mixture and secure with a wooden toothpick if desired.
