One Pot Chicken with Tortellini image

This one pot chicken with tortellini is a family friendly meal that's ready in no time! It's packed full of golden brown chicken, veggies and tortellini, all in a creamy parmesan sauce.

Number Of Ingredients 12

1 pound boneless skinless chicken breasts or tenders (cut into 1 inch pieces)
20 ounces of refrigerated tortellini
1 tablespoon olive oil
2 tablespoons butter
2 tablespoons flour
2 1/2 cups chicken broth
1/2 cup heavy cream
1/4 cup grated parmesan cheese
1 1/2 cups fresh spinach
1 cup cherry tomatoes (halved)
salt and pepper to taste
2 tablespoons chopped parsley

Steps:

  • Heat the olive oil in a large pan over medium-high heat.
  • Add the chicken to the pan and season to taste with salt and pepper.
  • Cook, stirring occasionally, until chicken is browned and just cooked through, 4-5 minutes.
  • Remove the chicken from the pan; cover with foil to keep warm.
  • Add the butter to the pan and melt; whisk in the flour and cook for 1 minute.
  • Stir in the chicken broth and cook 2 minutes or until slightly thickened.
  • Add the tortellini to the pan and bring to a boil; cook for 4 minutes, stirring occasionally to make sure tortellini is coated with liquid.
  • Stir in the cream and parmesan and cook for 1 more minute.
  • Add the chicken back to the pan along with the spinach. Cook for 2-3 minutes, or until spinach is wilted.
  • Fold in the tomatoes. Sprinkle the parsley over the top and serve.

4 tablespoons (1/2 stick) unsalted butter
2 pinches freshly grated nutmeg
1 1/2 cups grated Parmesan
Kosher salt
18 ounces frozen cheese tortellini
2 boneless, skinless chicken breasts, cut into 1-inch pieces (about 1 1/4 pounds)
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 425 degrees F.
  • Heat the heavy cream, butter, nutmeg, 1 cup of the Parmesan and 1 teaspoon salt in a large ovenproof skillet over medium-high heat, whisking occasionally, until the cheese and butter are melted, 3 to 4 minutes. Add the tortellini and simmer until cooked through, 4 to 5 minutes. Add the chicken and sprinkle with the remaining 1/2 cup Parmesan.
  • Bake until the chicken is just cooked through, the sauce has thickened and the top starts to turn golden brown, 10 to 12 minutes. Let stand for 10 minutes before serving. Sprinkle with the parsley.

1 pound boneless skinless chicken breasts, cut into 1-1/2-inch pieces
1/3 cup finely chopped onion
1 tablespoon olive oil
2 garlic cloves, minced
3/4 teaspoon salt
1/4 teaspoon pepper
1 package (10 ounces) hearts of romaine salad mix
1-1/2 cups grape tomatoes
1 can (6-1/2 ounces) sliced ripe olives, drained
3/4 cup creamy Caesar salad dressing
3/4 cup shredded Parmesan cheese
6 bacon strips, cooked and crumbled

Steps:

  • Cook tortellini according to package directions. Drain; rinse with cold water., Meanwhile, in a small bowl, combine chicken, onion, oil, garlic, salt and pepper; toss to coat. Heat a large skillet over medium-high heat. Add chicken mixture; cook and stir 4-6 minutes or until chicken is no longer pink. 1 cup milk
6 oz cream cheese, cubed (from 8-oz package)

Steps:

  • In 12-inch nonstick skillet, heat 1 tablespoon of the oil over medium-high heat. Add chicken; cook 3 to 4 minutes or until no longer pink; remove from skillet, and keep warm.

6 skinned and boned chicken breast halves
1/8 tsp salt
1/8 tsp black pepper
3 Tbsp butter or margarine, divided (less is needed if using less than 6 breast)
1 1/2 c whipping cream
2 Tbsp orange marmalade
1 Tbsp dijon mustard
1/8 tsp ground red pepper (i use cayenne pepper)
1 pkg (2.25-ounce) sliced almonds, toasted

Steps:

  • 1. Place chicken between plastic wrap and flatten to 1/4 inch thickness, using meat mallet or rolling pin. Sprinkle with salt and pepper.
  • 2. Melt 1 1/2 T butter in skillet over med-high heat. Add half of chicken and cook 2 min per side or until golden. Remove chicken and repeat with remaining chicken and butter. NOTE: I normally cook for 2, so I reduce the butter when I cook less than 6 breast. But, I don't reduce the amount of the sauce. Can't get enough of this sauce!
  • 3. Reduce heat to medium; add whipping cream and next 3 ingredients to skillet; stirring well. Add chicken; sprinkle with almonds and cook 8 minutes or until sauce thickens.

250 g cheese tortellini (fresh or frozen)
1/2 cup caesar salad dressing (creamy, preferably homemade or ranch dressing)
1/4 teaspoon black pepper, fresh
1/4 cup fresh basil, chopped
2 cups cooked chicken
1/4 cup slivered almonds, toasted
1/4 cup parmesan cheese, grated

Steps:

  • Cook tortellini in salted water. Rinse tortellini under cold running water until cool; drain.
  • Stir dressing with black pepper and basil. Add tortellini -- avoid breaking up the pasta. Salad can be covered and refrigerated for up to a day.
  • When ready to serve, gently fold in chicken and nuts. Sprinkle Parmesan over top.

1 teaspoon salt
1 cup pineapple tidbits, drained
1 cup halved green grape
1 cup blanched slivered almond, toasted
1/2 cup chopped water chestnut
1/4 cup shredded lettuce

Steps:

  • In a large bowl, toss the chicken with the lemon juice.
  • Cover and chill for 2 hours.
