ONE POT CHICKEN WITH TORTELLINI
This one pot chicken with tortellini is a family friendly meal that's ready in no time! It's packed full of golden brown chicken, veggies and tortellini, all in a creamy parmesan sauce.

Steps:
- Heat the olive oil in a large pan over medium-high heat.
- Add the chicken to the pan and season to taste with salt and pepper.
- Cook, stirring occasionally, until chicken is browned and just cooked through, 4-5 minutes.
- Remove the chicken from the pan; cover with foil to keep warm.
- Add the butter to the pan and melt; whisk in the flour and cook for 1 minute.
- Stir in the chicken broth and cook 2 minutes or until slightly thickened.
- Add the tortellini to the pan and bring to a boil; cook for 4 minutes, stirring occasionally to make sure tortellini is coated with liquid.
- Stir in the cream and parmesan and cook for 1 more minute.
- Add the chicken back to the pan along with the spinach. Cook for 2-3 minutes, or until spinach is wilted.
- Fold in the tomatoes. Sprinkle the parsley over the top and serve.

- Preheat the oven to 425 degrees F.
- Heat the heavy cream, butter, nutmeg, 1 cup of the Parmesan and 1 teaspoon salt in a large ovenproof skillet over medium-high heat, whisking occasionally, until the cheese and butter are melted, 3 to 4 minutes. Add the tortellini and simmer until cooked through, 4 to 5 minutes. Add the chicken and sprinkle with the remaining 1/2 cup Parmesan.
- Bake until the chicken is just cooked through, the sauce has thickened and the top starts to turn golden brown, 10 to 12 minutes. Let stand for 10 minutes before serving. Sprinkle with the parsley.

- 1. Place chicken between plastic wrap and flatten to 1/4 inch thickness, using meat mallet or rolling pin. Sprinkle with salt and pepper.
- 2. Melt 1 1/2 T butter in skillet over med-high heat. Add half of chicken and cook 2 min per side or until golden. Remove chicken and repeat with remaining chicken and butter. NOTE: I normally cook for 2, so I reduce the butter when I cook less than 6 breast. But, I don't reduce the amount of the sauce. Can't get enough of this sauce!
- 3. Reduce heat to medium; add whipping cream and next 3 ingredients to skillet; stirring well. Add chicken; sprinkle with almonds and cook 8 minutes or until sauce thickens.
