EASY CHICKEN IN TOMATO SAUCE



Easy Chicken in Tomato Sauce image

This one skillet 30 minute dinner will become one of your go to week night meals! Made with quick cooking chicken breasts and store bought canned tomatoes with just a hint of cream!

Number Of Ingredients 10

4 boneless chicken breasts
2 tablespoons olive oil
1 cup chopped onion
3 large garlic cloves, chopped
1 14 ounce can crushed tomatoes (tomato sauce can be substituted)
1 14 ounce can roasted diced tomatoes, drained
1/8 cup heavy cream (or half and half)
2 teaspoons italian seasoning (or 1 tsp dried basil and oregano)
salt and pepper to taste
12 ounces cooked spaghetti or rice (prepared according to package directions)

Steps:

  • Heat large skillet on medium high heat.
  • While skillet heats, rub chicken breasts with olive oil and sprinkle liberally with salt and pepper.
  • Place prepared chicken into skillet and do not touch for 3-4 minutes or until chicken releases easily from the pan and forms a nice crust.
  • Remove seared to chicken and set aside. (the chicken will not be fully cooked but will continue to cook in the tomato sauce later).
  • Reduce heat of skillet to medium. Add one tablespoon of olive oil. Add onion and saute until translucence. 3-4 minutes. Add chopped garlic and cook an additional minutes.
  • Add crushed tomatoes, drained diced roasted tomatoes, heavy cream and italian seasoning to skillet. Bring to a simmer. Add chicken back to pan and simmer for 20 minutes or until chicken reaches 165 degrees.
  • Prepare pasta or rice according to package directions and serve with sauce and chicken. Sprinkle with grated parmesan if desired.

4 boneless skinless chicken breasts (6 to 8 ounces each)
table salt
ground black pepper
vegetable oil
2 teaspoons vegetable oil
1 medium shallot, minced (about 3 tablespoons)
2 teaspoons tomato paste
1 cup low sodium chicken broth
3 tablespoons white wine vinegar
1 1/2 teaspoons light brown sugar
6 sprigs fresh thyme
2 tablespoons unsalted butter
table salt
ground black pepper

Steps:

  • Adjust oven rack to middle position; heat oven to 200 degrees.
  • Slice each chicken breast in half to form thin cutlets (easier if frozen for 10-15 minutes).
  • Season both sides of each cutlet with salt and pepper.
  • Heat 2 teaspoons oil in 12-inch skillet over medium-high heat until smoking; place 4 cutlets in skillet and cook without moving them until browned, about 2 minutes.
  • Flip cutlets and continue to cook until second sides are opaque, 15 to 20 seconds.
  • Transfer to large heatproof plate.
  • Add 2 teaspoons oil to now-empty skillet and repeat to cook remaining cutlets. Cover plate loosely with foil and transfer to oven to keep warm while making sauce.
  • Remove skillet from burner. Add 2 teaspoons oil, shallot, and tomato paste to hot skillet; using residual heat, cook, stirring constantly until softened, about 30 seconds.
  • Set skillet over medium-high heat and add chicken broth, vinegar, light brown sugar, and thyme; bring to simmer, scraping pan bottom to loosen browned bits.
  • Simmer until reduced to 1/2 cup, 6 to 7 minutes.
  • Remove from heat. Whisk in butter 1 tablespoon at a time. Adjust seasonings with salt and pepper; serve immediately with cutlets.

Adapted and made my own from "Cooking for Dummies." I grew up hating tomatoes, but I dig this dish. Best with fresh herbs, but dried work in a pinch. I usually omit the onion myself. Sounds like a lot of work, but once you get it going it's extremely easy.

2 boneless skinless chicken breasts
1 -2 tablespoon extra virgin olive oil
1 tomatoes, peeled and diced
1 garlic clove, minced
1/2 medium onion, chopped fine (optional)
1/3 cup chicken broth
1/4 cup white wine
1 teaspoon fresh thyme or 1/4 teaspoon dried thyme
2 tablespoons fresh basil, chopped (optional) or 1/2 tablespoon dried basil (optional)
black pepper
salt

Steps:

  • Heat oil in sautee pan (preferably not non-stick) over med-high heat.
  • Cover chicken with plastic wrap and flatten with heavy pan or meat hammer, then season with Salt and pepper on both sides.
  • Place chicken in hot pan cook approx 4-5 minutes per side until golden brown and juices run clear.
  • Move chicken from pan to platter and cover with foil to keep warm. Leave pan on heat.
  • Lower heat to Medium. Add garlic and onion to hot pan and cook for about 30 seconds, DO NOT CARMALIZE!
  • Stir in diced tomato, basil, thyme, chicken broth and wine.
  • Turn heat back up to med-high and cook, stirring occasionally, until reduced about half.
  • Spoon over chicken while still hot and serve.

4 large rosemary sprigs
4 large fresh thyme sprigs
4 skinless chicken breast halves, on the bone (3/4 lb)
1/2 teaspoon crushed red pepper flakes
salt & freshly ground black pepper
2 tablespoons olive oil
1/2 cup chicken stock or 1/2 cup low sodium chicken broth
1 teaspoon flour, mixed with
2 teaspoons water

Steps:

  • Preheat the oven to 375°.
  • Press a rosemary and thyme sprig on each chicken breast.
  • Sprinkle the chicken with the crushed red pepper and season with salt and black pepper.
  • In a large nonstick, ovenproof skillet, heat the olive oil until shimmering.
  • Add the chicken breasts, herb side down, and cook over moderately high heat until lightly browned, about 5 minutes.
  • Season the chicken with salt and black pepper, turn and cook until lightly browned, 2 to 3 minutes longer.
  • Transfer the skillet to the oven and roast the chicken for 20 minutes, or until the juices run clear when the breast is pierced near the wing joint.
  • Transfer the chicken breasts from the skillet to a platter, cover and keep warm.
  • Pour off any fat in the skillet and set the skillet over a burner.
  • Add the chicken stock and cook over high heat, scraping up any bits stuck to the bottom of the pan.
  • Whisk the flour and water mixture into the skillet and boil until slightly thickened, about 1 minute.
  • Pour the pan sauce into a bowl and serve with the chicken.

4 boneless skinless whole chicken breasts, halved, about 1 1/2 pounds
Salt and freshly ground pepper to taste
8 ripe plum tomatoes, about 1 1/4 pounds
2 tablespoons olive oil
1 tablespoon finely chopped garlic
1/2 cup finely chopped onion
1 large red sweet pepper, cored, seeded and cut into 1/2-inch cubes
2 tablespoons red-wine vinegar
1/4 cup fresh or canned chicken broth
12 small imported black olives
1 bay leaf
8 sprigs fresh thyme or 1 teaspoon dried

Steps:

  • Sprinkle the chicken with salt and pepper. Drop the tomatoes in a kettle of boiling water and let them remain for 10 seconds. Drain and peel. Cut them into 1-inch cubes. There should be about 3 cups.
  • Heat the oil in a skillet and add the chicken pieces. Cook over medium-high heat until golden brown on one side, about 2 minutes. Turn the chicken pieces and brown for about 1 minute. Add the garlic, onion and red pepper. Cook and stir briefly until the vegetables are wilted. Add the vinegar, chicken broth, tomatoes, olives, bay leaf and 4 sprigs of the thyme. Cover tightly, lower heat and cook, simmering for 15 minutes.
  • Uncover and cook 5 minutes more. Remove the bay leaf and thyme sprigs. Serve immediately with the remaining thyme sprigs for garnish.
